"For the first nine years of his life, Diego Rodriguez-Negrete visited a local mill in Mexico to grind masa with his grandma before whipping up homemade tortillas together. In 2007, he moved to Iowa from Mexico, received DACA status, and began stuffing burritos at Chipotle in a local mall. Quickly realizing his passion for the hospitality industry went far beyond fast casual, he trained under former Proof co-owner and head chef Sean Wilson for three years, before Rodriguez took the reins. These days he blends his Mexican roots with the local sourcing and magazine spread-worthy plating that had already earned Proof national recognition. You can taste the result in recent menu highlights like wagyu beef with sour cream potatoes, broccoli, and carrot-top chimichurri." - Karla Walsh

The February, 2nd Saturday was very lovely. We added the extra wine pairings for $50/pp and one 2.5oz wagyu beef for $95. It wasn't inexpensive, but it was a fun date night on a special weekend. The waitstaff was absolutely amazing and knowledgeable - we loved hearing about the dishes and the details behind the wine. It was about 2 hours in total. Docked 1 star due to the serving sizes being on the small side for my husband - he was still hungry after.

This place is always amazing! It’s our favorite restaurant in Des Moines Metro for outstanding flavors and unique dishes! The drinks and service are exquisite. We have been many times. We recently went for our anniversary and splurged with the chefs menu and an extra dessert! See the menu image to see what we had. The menu changes so it will likely be different when you go, but everything has been delicious. I wish they would bring the beet and marshmallow salad back - it was soooo good!

I tried their tasting menu. Portions are perfect size and each course was distinct and delicious. We also tried the wagyu steak and it was the best cooked wagyu I have had. It's a bit pricey.. but overall worth it for a special occasion.

Had a fantastic experience at their Second Saturday featuring a 5-course summer inspired dinner! The food was creative, light, and refreshing —exactly what we needed on a hot summer day. Our server was attentive and knowledgeable, and we were welcomed in by other staff as well. The restaurant took all the precautions needed to feel safe during Covid-19. Loved my meal here and hope to return.

Was the food good? Yes, it was. Really delicious, everything I had. Seriously tasty. The problem is that dinner took 2.5 hours. And the restaurant was not full at all. We ordered 3 small plates and then a large plate for each of the 3 of us. They sent out the small plates staggered approximately 30 minutes apart- not exaggerated. Pricy for the portions, but somewhat to be expected at foodie, hot restaurants. I just really take issue with the meal being so long without any apology until I said that it was taking a long time. If you want a slow, relaxing, delicious meal then go ahead. But if you don’t want to spend 2.5 hours with your company (say, a weeknight) then don’t go.

I had the most magical experience at Proof. Flying in on business late, I couldn’t find anywhere to get a decent dinner. I called up Proof hoping to just get a to-go order but not know what they were. When I made it to the restaurant, they insisted I stay and eat there. It was among the most delicious food and experience I’ve had in life.
