"Set in a historic building on Route 66, Proper is both the region’s best butcher shop — specializing in local, sustainable whole animal butchery — and a relaxed, order-at-the-counter restaurant famous for its lengthy menu of hearty sandwiches (and not a bad one in the bunch) served with ultra-crunchy housemade chips. The most popular are the pastrami, the cheesesteak, and the fried chicken po’boy augmented with housemade andouille sausage, but don’t skip the delicious ahi tuna dotted with capers. Check the refrigerated cases for grab-and-go items, and the chalkboard for weekly dinner specials such as pasta or a bucket of fried chicken." - Nikki Buchanan

DELICIOUS, DELICIOUS, DELICIOUS!!! We had the 10 Day Pastrami and Half Cheesesteak. HIGHLY RECOMMEND. Both were fantastic. If we’re ever in Flagstaff again we’ll definitely come back! They also have pot pies and soups in a refrigerator/freezer to take home, as well as fun merch. It’s also a butcher with high quality meats. Just a wonderful experience!

Wow! I can't believe I haven't been to this place sooner. If you enjoy quality meats to include pastrami , sausages, ground beef, pot pies, and soups! I can't wait to come back .

Google
Being vegetarian is always a challenge, but the tomato soup option at this butchers deli was actually delicious. My meat-eating companions all enjoyed their sandwiches although the prices were eye-wateringly high, I thought, and not as big as the price suggested. None of us liked the chips (crisps) much either.

Visited for the first time this week. The pastrami is great and smokier than ‘normal’. Delicious. Made smoked pastrami hash for breakfast and it was great. Burgers were great too - love the chunkier grind for texture. Found out that they also dry age their own beef-definitely coming back for that. Finally, the stocks are so convenient and saved me a lot of time roasting bones. Thank you and please don’t change a thing!

Excellent! So glad we stopped by and tried this gem! Unique flavors and high quality food!

Google
Nice spacious area to have lunch! Lots of delicious options to eat in and of course all of the great meat to take away. I had the French dip and it was delicious. The roast beef was so soft and flavoursome. The jus that went along with it was really nice too. I thought the crisps that came with it were a bit overdone. The grilled cheese sadly wasn’t that great. It didn’t have a sharp/string cheese in it to make it zing and also wasn’t cooked enough so it had a good pull. The fries were a big enough portion for three people but were perfectly crunchy. All in all we would definitely come again. The service was super friendly. Lots of street parking around too.

Google
The sandwiches here were excellent. I had a French dip and my husband had a Philly steak. There was so much meat in the sandwich we each had to bring half home. The chips served with the sandwiches were really good too. Very friendly employees. We had to wait a little for a table but by the time our food was ready we had one. You go up and order and they give you a sign for the table and bring the food out. I would definitely go back when we go to Flagstaff. Excellent quality.

Google
Prices very high but the quality is excellent. Would love if they offered a choice of mustard on sandwiches and not default to honey mustard

Yelp
We love meat and we love sandwiches and decided to stop into Proper Meats for lunch. It's really cute and clean inside and there's little trinkets and such for purchase. Customer service was friendly and efficient. We went with 2 Turkey clubs and Mac n cheese which was a daily special. You're provided a number find a seat which they have plenty of tables and seating. The trays of food these sandwiches were served on here HUGE! There is a lot of food. The sandwiches are big and served with a big serving of chips and a pickle. The sandwiches didn't really standout to anyone. There was too much bread and I think would've been better on a sourdough or thin sliced bread. The family enjoy the Mac and cheese though. I would stop in again though while we're in Flagstaff to see if there is a better lunch outcome.

Yelp
I have been to this place multiple times, including their original location on the other side of the railroad tracks. Went in yesterday with my family, it was busy, the menu looked good. The service was atrocious, the woman in the GWAR t-shirt was rude and refused to give us a few cubes of ice for our takeout. This is after having spent nearly $100 on lunch. There were other issues with this person, would definitely say she had a negative attitude that impacted our experience in a negative way. The food, my son got a pulled pork sandwich and it was very average. My wife and I split the cobb salad and it was excellent. I would probably return to this place because I think it's got potential, but you need to work on your customer friendliness.

Yelp
My husband and I drove up from Phoenix for the day and stopped here for lunch. We first heard of this place on Check Please Arizona on AZ PBS. I had the Fried Chicken Po Boy and my husband had the Warm Aleppo Pepper Pastrami sandwich. I first asked my husband if I could have a bite of his sandwich before we were served. However, when our sandwiches came and I bit into mine, I let him know I was no longer going to need a bite of his b/c I wanted to save all my appetite for my Po Boy! I gave my husband a piece of chicken that was smothered in the cajun sauce and he said he understood why I wanted my sandwich to myself. He did have good things to say about his sandwich and remarked that the sandwich had a healthy helping of cream cheese. He would order it again. We also brought home some sausage links; Calabrese, sweet fennel Italian and one other I can't recall. I took the Italian sausage out of the casing, cooked it in a pan and put it in a soup. It was delicious! I can't wait to try the other ones later. The variety of music played was good and the volume was just right. We were able to carry on a conversation at a normal volume, but still enjoy the music. Employees were singing along and generally appeared to be enjoying themselves and were very friendly. We will definitely be coming back to try more sandwiches and highly recommend this place!

Yelp
My husband and I were STARVING after our 7mi hike, and sandwiches sounded really good for lunch - cue Proper Meats + Provisions! The interior was popping on a Saturday afternoon. There is plenty of seating. My husband and I chose to sit at the bar area. The menu has a large variety of offerings for different palates. Our food came out much quicker than we anticipated. I had the smoked brisket sandwich, and my husband had the fried chicken po boy. Our sandwiches were filling and delicious! They are also served with homemade chips, which were tasty as well. Everything was good: food, service, cleanliness, but the hefty price tag of the food may prevent me from coming back. Definitely plan on spending over $20 per person for lunch if you're coming here!

Patrick R.

Yelp
Y'all, this is something else! I got 2 sandwiches to take on a 12 hr road trip. And darn if these aren't two of the best sandwiches I've ever had anywhere ever. Every little detail is perfect. This is like a sandwich as a symphony. Perfectly composed technically, flavors that harmonize, a melody in every bite. I seriously can't remember a better sandwich. Oh the folks are all real nice and the casual atmosphere is very comfortable. It's expensive but far more than worth it. Whoa. Oh, and you know how sometimes you're skeptical about eating a sandwich in the car because what if the bread flops or ingredients blurt onto your shirt or it's hard to hold? Not A Problem! They wrap these suckers perfectly and don't overload them. They're highway safe sandwiches.

Ilana V.

Yelp
Had the best tuna sandwich of my life at Proper for lunch. Also tried the pastrami sandwich and it was excellent, but the tuna is something I will think about again and again. Came with crispy house made chips which were delicious. Other companions had the muffaleta and the cold cut sandwich and we were all raving about our food. So happy to have happened across Proper!

Kristy W.

Yelp
The food here is amazing! Everything we ordered was delicious. It's a little bit on the pricier side for a lunch spot but everything is high quality!

Debbi P.

Yelp
Best sandwiches! Ginormous portions and great sides. Everyone that works there is so nice!!! Always crowded during lunchtime but totally worth the wait!!! Can' wait to go back!!!

T G.

Yelp
Great quality food, large servings in proportion to the prices. Staff was very welcoming

Stefanie L.

Yelp
Everything we've ordered here over the last three years has been tremendous. Pastrami sandwich and the philly cheesesteak are our favorites. Would love to take a bunch of stuff from their cold cases home one day as it all looks like incredible quality.

Sam M.

Yelp
Every time we visit Flagstaff a stop at Provisions for lunch is in order. Just can't beat the freshness and quality of the food. Everything I've ever ordered has been excellent. The sandwiches are phenomenal. We always go for a side of fries as well - these are equally tasty. The service is always friendly and prompt. During our most recent visit we tried the Warm Aleppo Pepper Pastrami. So good. Highly recommend this place!

Angela T.

Yelp
I was recommended this place by a flagstaff local. Great pastrami and Ruben sandwiches . Will definitely be back next time I'm in Flagstaff.

Tanya G.

Yelp
I love utilizing my Yelp app. Just happened to be in Flagstaff for lunch and Proper Meats and Provisions popped up... Nice large open space to dine in. One line for both items you can order. Fresh butchered meats' ;meat market style and prepared sandwiches The one stop shop! The line moved quickly. The space was jam packed. But the flow was constant. The cashier was friendly This establishment is well put together! I proceeded to order a Reuben. I'm a quality type of person that does not mind to pay as long as it lives up to it's standards. Holy cow lol literally did this perfectly packed sandwich pack a punch. The flavors were so tasty along with the right amount of sauerkraut, marbled rye bread and Russian dressing. I held off on the Swiss due to allergies. (My mouth is watering as I'm reminiscing.) Homemade potato chips were a plus. As they come with the sandwich. I also ordered a side of Cole Slaw; why not? What a spicy surprise! The cole slaw paired well with my combination. Great concept. Beautiful steaks. It's that time of the year and the grill is calling my name. I will be back next week for another round of delishousness.

Karen S.

Yelp
Friendly and nice selection, found it very pricey. Wish we picked another restaurant when in town.

Adri M.

Yelp
This restaurant was SO good. From the second you walk in, you can see all the local meats in the glass cases. Every cut looks great, and you can tell you are in for a treat. I ordered the French Dip, and my Mom, the Reuben. Notice there are no pictures, as we scarfed these down. The french dip was great, as the baguette bread paired with the tender meat perfectly for that juicy dip. The reuben was probably my favorite, though. Their sauerkraut was top tier!! Not to mention their pickles; SO GOOD! They served it with homemade potato chips, which were also delightful. The service was decent, but not bad at all. Not too much conversation, but everyone was still very polite. The atmosphere was very intimate and familiar, with a dash of casualty. There were clearly employees on the aux, as they were playing some rock music. Honestly though? Made sense for the place! I had a great time here and definitely recommend it.

Ericka W.

Yelp
I was famished after a hike and this place came up as a suggestion for lunch. I stopped in and ordered to go. Hands down, one of the best Bahn mis I have ever experienced! So different but not weird. I loved it! And those fresh made kettle chips! So good! Will definitely be back next time I'm in Flagstaff!

jason m.

Yelp
I had a nice, properly made pastrami sandwich. Nice and moist, flavorful, and large. It made me sleepy. They have some local beers. I had a Pilsner, which was good. The place has a BBQ house vibe that is good. My one complaint is that it seemed a bit pricey for what you get.

Jimi H.

Yelp
Great spot in DTFS. Jimi could prolly come 8-10 times and get something different each time and be satisfied. And maybe he will? Because who's afraid of little old me? Well you should be. You should be. 5 stars

Michelle O.

Yelp
Las Vegas native, came in for pride this year & found this gem - I consider myself a Sammy connoisseur- and the Reuben did not disappoint! Wife had the patty melt and said it's the best she's had

Bronson S.

Yelp
You don't know true bliss until you've had the muffuletta here, it's one of the best sandwiches I've ever had in my life, and even though $17 is a steep price for a sandwich, it is well worth it. First of all the focaccia is warm and pillowy and slightly herby. Then you get this huge stack if cold cuts on it full of salty umami goodness. Then the best part that ties it all together is the layer of chopped artichoke and aioli on top, ugghhhhh its so good it makes me want to cry, like this sandwiches existence is divine intervention, I believe this sandwich can help us realize world peace on this here planet. If you want, you should also ask for a side of barbecue sauce to dip your chips in, they'll give it to you for free.

Marina M.

Yelp
Food was good but the chicken confit in the chicken BLT made the sandwich too salty. Also, although the portions are shareable, I think that $20-22 for a sandwich is a bit too much.

Jami W.

Yelp
Came here for lunch leaving town. The concept is very old school vibes with the ordering counters, hanging menus, checkered floors, fountain machine, etc. They have a pretty extensive menu which made ordering tough (it all sounded good). I went with the turkey sandwich & my company got the pastrami sandwich-- good flavors & came with homemade chips. It was a little pricing for the portions but all in all good experience.

Michael R.

Yelp
Love this restaurant! Portions are huge! Prices are a bit high but based on the quality and portion size well worth it (my opinion). I had the bbq brisket sandwich with their fresh coleslaw. You can see by the picture this sandwich is loaded with meat! Their bbq sauce is thick, tangy with a hint of smoke to it. The brisket was melt in your mouth tender. It had a great smoke ring and was cut properly for easy chewing. My wife had the French dip with their homemade chips. The meat is again, melt in your mouth tender and the aujus was rich and well seasoned. Bread was fresh and once again, big portions! A side note, the sodas offered are great! We enjoyed the sugar free cola (helps offset those sandwiches). Not to be overlooked, is the service! The staff is always attentive, good for a recommendation and keep the restaurant spotless. The location is great if driving into downtown or if you're there and walking around. The meat counter is packed with fresh meats to tempt you for later! We'll be back... soon!

Nancy C.

Yelp
OMG! I just had the best sandwich I've ever had! The Pastrami sandwich here is incredible- the blend of flavors between the spicy mustard, the wonderful cheese, the pastrami's deep flavor and moisture stands right up thru the rye bread and pickle. A stellar combination! Thank you Proper Meats and Provisions!!!

RB F.

Yelp
We stopped for a Ban Mih sandwich while visiting Flagstaff for the 4th. The sauce was a little too spicy for me; I'd have it on the side next time. The bread was fresh and the service was friendly. We shared this large sandwich.

Courtney F.

Yelp
Nice place to stop and eat, deli style. The Philly was great and the house made chips are great too! Soda selection was good as well stubborn brand. Everyone was friendly. Easy going place. Would eat there again.

Izzy G.

Yelp
I kept avoiding this place because $15 for a sandwich?! That's ridiculous! Then I tried the sandwiches. Ok, ok, I get it. The sandwiches are pretty bomb! I ordered the Pork Banh Mi and the pork was awesome! Not a traditional banh mi, but it was very tasty. I had a couple bites of my friend's sandwich and it was also really good. The chips were made in house as well. I will be back for sure. As far as the butcher shop part of the restaurant. I've always had good meat from there, just a little in the pricier end.

Zohar R.

Yelp
Very disappointed. I ordered a brisket sandwich. The meat was tough and full of fat. Not recommend.

Emily M.

Yelp
So delicious we returned again on our return trip through Flagstaff. High quality, local, fresh ingredients make for the perfect sandwiches! Parking wasn't too hard to find nearby. And the quality and taste of the food makes up for the price. Service is friendly, and the selection is incredible. This restaurant made me want to be a local so I could keep returning!

Evan L.

Yelp
Fantastic butcher/sandwich shop in Flagstaff, though this review is specifically for their sandwiches. It's very spacious inside with tons of seating, a general store area with merch and dry goods, and big fridges in the back with pre-prepared foods. There's also a cool old school soda dispenser in the back with levers. Sandwiches are sizable and come with a pickle spear and their homemade potato chips that are absolutely delicious. I got the PMP Cheesesteak while the others in my group got the Turkey Club and Chicken BLT. Cheesesteak was very solid, generous amount of beef and cheese with peppers/onions. I tried the Chicken BLT and that was incredibly decadent (in a good way!). Well buttered toast sandwiching, very tender chicken confit and the herb mayo was a wonderful kicker. I will absolutely return the next time I'm in Flagstaff.

Damian D.

Yelp
The food is AMAZING! Tried the bahn mi and it was delicious! The sandwich had the perfect amount of spice and the meat was perfectly flavorful. Also tried the poi boy which did not disappoint! 10/10 will recommend to others.

Alisa F.

Yelp
I've been wanting to try this place for a while now and finally got the chance last week. I got the banh mi sandwich and my friends got the Aleppo pastrami and French dip. The sandwich was really good, they definitely have a unique spin on a traditional banh mi. The meat was juicy and the sauce was spicy. I wish the pickled vegetables had a little more tang and the bread was a bit crisper because it got pretty soggy with a soft hoagie roll. I tasted the Aleppo pastrami and that sandwich was also very good. These are definitely the most expensive sandwiches I've ever had and I'm not sure any sandwich will ever be worth more than $20 to me, but they definitely do a good job and have a lot of unique options. Everything is high quality and I definitely recommend substituting French fries for the house chips. We also got a side of some kind of chili ranch and it was delicious.

Tim W.

Yelp
[4.5/5.0] Awesome place. A butcher/deli/market. What can't this place do? Got their turkey club and chile verde soup. The turkey club was fantastic. The bread was very soft and worked well with the sandwich. Turkey was fresh and they did not go easy on the bacon! The chips was fresh and seasoned well. The chile verde soup went crazy. Got a bit of spice in it but not overwhelming. The slices of toast was nice and buttered as well. Overall, love the fresh ingredients!

Whitney O.

Yelp
While might the price seem a little steep, the food is so worth it! My boyfriend and I always stop by at least once to get food from them when we are up in Flagstaff from Phoenix. The service is fast, and the people are friendly. The ambiance is pretty chilled and laid-back.

C M.

Yelp
If you only have time to visit one eatery while in Flagstaff make it this place. Hands down the best pastrami sandwich I've ever had. Be warned, they are huge. Bring a healthy appetite or share. The chips they serve on the side are home made and we're piping hot to boot. There is also a very large list of alternative sandwiches options if you want to venture beyond pastrami, but why would you do that?

Kasey V.

Yelp
Visiting from out of town. Came here on a Sunday. Ordered the banh mi. It was served warm with pickled veggies on a hoagie-type bread. This was different for me since I am so used to banh mi being served on French bread. I do wish the veggies were served on the side since they were a bit hidden with the texture of the sandwich. Overall, the taste was amazing! The chips and the pickle were a cherry on top.

Ramona M.

Yelp
Great food. It takes a bit to get your food but still serving top sandwiches in Flagstaff!

Isaac R.

Yelp
If you're looking for a good pastrami sandwich, you're in the right place. I have tried many pastrami meats and when it's done on a brisket OMG, there's no words to describe the flavor and texture. This place uses Brisket Pastrami. I asked one of the staff and didn't know, but when I tried, I knew it was brisket pastrami. Their sandwiches are really good amd their hamburger is delicious as well. There's a small parking lot on the left side, but if you're lucky you'll get a spot there or at the front of the restaurant

Angela C.

Yelp
Passing by Flagstaff AZ for lunch and found Proper Meats + Provisions, on yelp, a restaurant and butchery. We had an excellent, scrumptious experience here and would not hesitate to highly recommend it to friends and family. GETTING THERE / PARKING: Street parking is available nearby. IMPRESSIONS / BUTCHER / TAKE-HOME: Looks comfy inside with metal tables set up inside and booths with leather details, and we joined the short line to the cashier. We saw people before us buy raw sausages to go, and some take a marker to the nearby tables. There was a small area where you can get complimentary water, takeout boxes ready to grab, utensils, and napkins. There are refrigerated displays with pot pies, fat and ready to be taken home to finish off the oven, confits, salmon, and more. ORDERING / FOOD: We received a table marker (we got "Wing", which showed a diagram of the wing portion of a chicken) after we ordered our BANH MI and CUBANO sandwiches and Honest Tea Moroccan Mint Green Tea. The CUBANO we noticed was on a nearby sheet of the daily specials and boy are we glad we got it. These were legitimately wonderful sandwiches, brought on quarter sheet pans. THE BANH MI was displayed open with the sauce drizzle, had burnt ends and was warm and delicious with the sauce. The CUBANO had chunks of pickle visible, juicy and tangy in every bite and was savory and delicious, legitimately a wonderful sandwich throughout, never too dry or under-seasoned. The chips that came with the sandwiches were mostly uneaten (the sandwich sizes were perfect) but were excellent even through to the next day, well seasoned and with rich potato flavor. The long spear of pickle served with our sandwich was plump and crunchy too. Wonderful and delicious experience, would absolutely stop by again for lunch and more!

Patrick C.

Yelp
Incredible service, high-quality provisions, at an affordable price for discerning tastes. The Best Reuben Sandwich I have ever had from NY to LA and all places in between. A Must Stop in Flagstaff AZ.

Michelle K.

Yelp
I've been wanting to try out this spot and finally tried it. I ordered the banh mi sandwich with a side of fries. The fries and homemade chips were very good, but I wasn't a big fan of the sandwich. Having tried countless authentic banh mi sandwiches before, I was a bit disappointed. I would like to come back and try a different sandwich next time.

E J.

Yelp
Excellent deli in downtown Flagstaff. Quality of ingredients was superb. All sandwiches came with house made chips.

Rhonda K.

Yelp
Insanely good! We were passing through Flagstaff and I scrolled Yelp quickly. I said to my husband Pastrami and great reviews let's try it. As former New Yorkers we have our standards for CORNED Beef and Pastrami. Proper Meats far exceeded our expectations. By husband had the Pastrami sandwich and I had the Ruben. These big and juicy sandwiches came with delicious home made chips. Everything on the menu looked great as well as their butcher counter and homemade soups and pot pies to take home. Can't wait to visit again, the best option in Flagstaff !

Rafael R.

Yelp
Decided to try this place on a friends recommendation. Walked into what seems to be an unhappy staff. They didn't treat us poorly but didn't go out of their way to be friendly. Perhaps caught them at the wrong time. We ordered a Cubano Sandwich and a bowl of green chili. The soup was not temperature hot more like warm. The meat was good and the flavor as well. The Cubano was good but could have used a little more seasoning. The meat was tender. The bread was soft I would preferred a little bit toastier but tasty nonetheless. Like many places for this area parking can be challenging so you may have to walk a little. Maybe we'll try on more time since the meat was nice.

Sarah M.

Yelp
Very filling, very flavorful sandwiches. Came with sides of perfectly crispy chips. Not too heavy. Friendly staff. We took them to-go and ate them at the Grand Canyon for a late lunch and they held up well. Highly recommend.

Lolly G.

Yelp
Stumbled on this place when visiting flagstaff. Actually blown away. Incredible sandwhiches and high quality food. Up to bar with a place you'd find in NYC. True gem.

Chris C.

Yelp
The sandwich was very good, and it was big. Only complaint on the flavor is that the sauce wasn't necessarily even, but plopped on. But this sandwich was $22. Man I simply cannot let myself get bent over and violated by spending $22 on a sandwich again. It's like you get post-nut clarity but after you eat the sandwich...

Lindsey G.

Yelp
A proper sandwich !! (: my husband and I ordered the Warm Pastrami sandwich and the PMP Cheesesteak. As much as we love south western cuisine, sometimes we long for classic east coast sandwiches and these really hit the spot. There are lots of tables and chairs to sit and eat and it's a great deli vibe inside. They had menu sandwiches to choose from and they a sounded delicious. It was pretty busy when we went on a nice a Saturday in the afternoon, a great sign they have good food. Definitely a stop to add to your list if you're in the area!

Kiki L.

Yelp
Every place I visit I want to eat a sandwich. They put a lot of care in the meat but everything was just mediocre. We got the pastrami and cheesesteak. Honestly just nothing to really say other than it was okay. Guidos in Phoenix has an amazing pastrami but maybe that's because I just like an Italian to make my sandwich over a chef...
