As someone who loves to sample SEA fine dining, I was excited to try Province's Autumn menu, especially being a fan of their sister restaurant, 808 eating house.
The "Golden Cap Farms" mushroom dish was a standout for me. It's great to see a menu showcasing neighbourhood farms, and this was a perfect example. The mushroom broth is incredibly umami, delicious, and comforting, and they treated the morels perfectly. The mains were delicious too - I loved their take on a Vietnamese-style salmon ravioli, and the aged dang gui quail with chicken liver instead of butter was a clever touch. I dig it. To finish, the mulberry and Indonesian bay leaf dessert was outstanding. So refreshing, and I loved it.
The sake pairing was spot on and went beautifully with the seafood dishes.
The only part of the meal that didn't quite land for me was the appetizers, which I found a touch too acidic for my taste.
But what truly made the experience was the team. I had such lovely conversations with them, just earnest, passionate people. It was a quiet day when we visited, so it felt like we had the whole place to ourselves. I'm already looking forward to returning to sample their next menu.
