As someone who loves to sample SEA fine dining, I was excited to try Province's Autumn menu, especially being a fan of their sister restaurant, 808 eating house. The "Golden Cap Farms" mushroom dish was a standout for me. It's great to see a menu showcasing neighbourhood farms, and this was a perfect example. The mushroom broth is incredibly umami, delicious, and comforting, and they treated the morels perfectly. The mains were delicious too - I loved their take on a Vietnamese-style salmon ravioli, and the aged dang gui quail with chicken liver instead of butter was a clever touch. I dig it. To finish, the mulberry and Indonesian bay leaf dessert was outstanding. So refreshing, and I loved it. The sake pairing was spot on and went beautifully with the seafood dishes. The only part of the meal that didn't quite land for me was the appetizers, which I found a touch too acidic for my taste. But what truly made the experience was the team. I had such lovely conversations with them, just earnest, passionate people. It was a quiet day when we visited, so it felt like we had the whole place to ourselves. I'm already looking forward to returning to sample their next menu.

Chef JJ and his team never fails to impress everytime we are there. Today was no exception. Today's theme was a collaboration with Martell, so you have dishes infused with VSOP, Cordon Bleu and XXO. Excellent, every single dish was commendable, ingredients perfectly pairing with each other... Melding into a whirlpool of flavours. Definitely will be back again.

The service team is knowledgeable and warm, explaining the stories behind each course while keeping the experience relaxed and approachable. The space itself is intimate and understated, which allows the focus to stay on the food and conversation. Province shows that fine dining doesn’t need imported luxury to impress — it proves that Southeast Asia’s own ingredients can be just as elegant and memorable. A must-try if you’re in Joo Chiat and looking for a unique culinary experience.

Brought my mum here for dinner and we were honestly blown away with the food. We had the seasonal Province x Martell collab menu. Chef Law is extremely thoughtful, passionate and knowledgeable about the process behind the menu he curated, and everything was so freaking delicious. His team took real good care of us and we had a very nice time there. The price point is very fair for the quality, effort and presentation of the entire dinner. We did a Martell inspired cocktail pairing with our meal (hesitant at first because my mum don't really drink Martell) but we had no regrets, the drinks were super on point even for my mum who doesn't drink cocktails. Amazing service from the team, I can't wait for the next meal at Province!

Brought husband here for his birthday to try the Autumn 2025 menu. Southeast Asian produce and ingredients done creatively to bring you novelty that tastes just familiar enough for us to savour every dish and look forward to each next one. If we had to pick just one, the mushroom in mushroom on mushroom dish - Golden Cap Farms - was probably our favourite. Also mindblown by the daun salam ice cream: not all heroes wear capes. Don’t want to call this a “hidden gem” but it is quite well hidden in the back of 808 Eating House, so this was a really lucky find. In hindsight it didn’t really feel like fine dining because we went home not still feeling hungry 😋 The Head Chef was on reservist but the 3 chefs didn’t take MC or slack off on our Sunday night reservation so here’s a shoutout. They ate (and so did we 😉) Chef Jarren was very warm and we enjoyed chatting with each of them in between courses.

JJ and team always crafts menus where every dish holds its own weight and the cooking technique shines through. We have visited a couple of times with different menus each time and have been wowed each time we visit. We look forward to coming back for more!

Dinner at Province was impressive. Every dish was thoughtful, creative, and packed with flavour. They took familiar Southeast Asian ingredients and transformed them into something fresh, exciting and delicious. The petai, usually a strong-smelling bean, was turned into a purée and blended perfectly with other ingredients — it really stood out in a good way! The team explained each dish with care, and it was clear how much heart went into the menu. Truly a memorable meal.
