Pipsqueak Wants to Bring Exceptional Hand-Rolled and Boiled Bagels to Milwaukie | Eater Portland

"Born from Madilyn Gibbons' craving for a good house-made bagel in Milwaukie, Pipsqueak Bagels started as a preordered bagel business and will be at the Milwaukie and Sunnyside Farmers Markets this season, with plans to open a downtown Milwaukie brick-and-mortar in 2025 with her husband and partner Cam Gibbons. I describe the approach as traditional and hands-on: a two-day process that uses barley malt syrup in the dough, hand-rolling each bagel, letting them rest overnight, then boiling, baking, and seeding; Gibbons says boiling in malt syrup is essential for the burnish and bubbles on the outside and gives an umami-sweet flavor and the chew that other sweeteners (molasses, honey, brown sugar) don’t replicate. She currently takes pre-orders and offers classics like everything, sesame, and poppyseed, alongside more outside-the-box varieties such as rosemary-Maldon salt, jalapeño Cheddar, and seasonal specials like cacio e pepe, and at farmers markets she plans to offer a wider selection of schmears (smoked salmon, everything seasoning, scallion, and a rotating flavor)." - Brooke Jackson-Glidden

Might have been on me for not looking well enough but I figured one part of the sandwich would be hot. Also think they should specify it's red onion not white onions. Ending with cold deli meat, no cheese, and untoasted bagel for $10 is just not worth it. The people at the cart were nice though.

I’ve had Puddletown from a different location and it was good! So I was severely disappointed and grossed out when I received my pizza bagel from this location. I would not recommend visiting this shop, the bagel was cold, had no cheese except in the hole? And was gross. (the photo is exactly how it came)

I really appreciate this location and the people who work here. They do a great job and the food is delicious. Also has a dairy free option for cream cheese. My go to here is a toasted bagel with cream cheese and bacon. The bags of day old bagels are fantastic and reasonably priced as well. Good coffee that doesn't break the bank. 04/17/21: 4.5 out of 5 - This is Puddletown Bagel's Milwaukie location that opened not too long ago. Maybe even a few days ago from the date of this review. My Saturday Running Group and I came here after our morning run, and was pleasantly surprised by Puddletown Bagels. This was the first time we have tried the Milwaukie Food Station pods. The owners were very nice and accommodating. They were quick to get the order down and the food and coffee & espresso made. There is a some very good choices of 12 bagels and spreads that would allow an amazing array of combinations. On top of that you would have options of going with a breakfast combo, sandwich, or just keeping it simple. Bagels are made fresh daily, which they are mixed, hand-rolled, boiled and baked. Pretty impressive! Be aware of their espresso drinks. I had the Mocha which was delicious, but be aware that it's very hot. Burn your tongue hot. At the end of the meal, the real question isn't "was it good?", but moreso, "would you go back?". My answer: Absolutely! I hope you give this place a try when in the area or if you are in the mood for bagels. Enjoy!

This is the first time we've had a bad order, and the first time ordering from this location. The sea salt bagel they just sent us was only half proofed(and perhaps never boiled). Needless to say it's a tough little rope covered with salt. Bagel jerky?🤔

I’m so done with this location. The staff are rude and unprofessional. Last weekend I walked up to the counter and the girl had her leg and foot propped up on the counter. Seemed annoyed from the beginning she had to take my order. Then the bagel was smothered in cream cheese to the point it was really gross.

I was surprised to see the lower reviews when I went to order this morning. This has been our go-to bagel place for years . We have tried other places and this is still our favorite! I love the tomato herb cream cheese and my fiancé loves the jalapeño. We love that bagels are soft and chewy, not hard. We do order online every time so maybe have avoided things that way based off the reviews I read. We like they have veggie sausage as well for those vegans/vegetarians.

My first time here a few weeks ago was great. Today, not so much. My order wasn’t taken correctly, I asked for two of one item and only one was ordered. My fault, I could have checked. Definitely order online if you come here for accuracy and to avoid a long wait. Despite the receipt noting all bagels should be toasted none of them were. The breakfast bagel ingredients were barely luke warm. I waited for 30+ minutes after placing my order. I can only assume they were in a hurry (it was busy) and then forgot about my stuff. Disappointing after waiting so long for literally everything to be wrong. Won’t be back.
