"Born from Madilyn Gibbons' craving for a good house-made bagel in Milwaukie, Pipsqueak Bagels started as a preordered bagel business and will be at the Milwaukie and Sunnyside Farmers Markets this season, with plans to open a downtown Milwaukie brick-and-mortar in 2025 with her husband and partner Cam Gibbons. I describe the approach as traditional and hands-on: a two-day process that uses barley malt syrup in the dough, hand-rolling each bagel, letting them rest overnight, then boiling, baking, and seeding; Gibbons says boiling in malt syrup is essential for the burnish and bubbles on the outside and gives an umami-sweet flavor and the chew that other sweeteners (molasses, honey, brown sugar) don’t replicate.
