We found the prices to be reasonable, sharing a three-meat plate and a drink for $26.74, which is solid value for the quality. The Meats: Hits and Misses The selection of meats provided a good showcase of the pitmaster's skill, though consistency was the key challenge. The star was the Jalapeño and Cheese Sausage. It featured a nice double grind and boasted a perfect, audible snap on the casing. It was wonderfully cheesy, packed with a flavorful blend of cheddar and jack cheeses that made every bite decadent and satisfying. The Brisket delivered excellent smoke flavor, complete with a prominent smoke ring and a great, peppery bark. However, the texture was a letdown, as the meat was noticeably a little dry and chewy in places, suggesting it either rested too long or was sliced from a less-moist section. The Ribs were juicy but tough. They were nice and juicy in flavor, but the overall texture was a little tough and not consistent across the bone, leaving some parts more enjoyable than others. Creative Sides: The sides attempted to be innovative and added welcome brightness to the heavy meats: • Jalapeño Cole Slaw: The addition of green apple was a brilliant touch, offering a great, refreshing flavor contrast. While the jalapeños gave it a much-needed kick, the heat did not integrate well with the overall mix of flavors, feeling a bit separate from the main slaw profile. • Charred Corn Elote Salad: This side was a hit in flavor, presenting a delicious nice mixture of corn and cream. The only slight drawback was the temperature; serving this side warm would dramatically elevate the richness and texture of the cream and charred corn. Final Takeaway: This award-winning food truck offers a good, affordable, and nice standard BBQ meal. While the sausage is a must-try, the brisket and ribs need minor consistency improvements to truly climb the Texas rankings. Given the reasonable pricing and dual seating options, it’s a great stop for a dependable BBQ fix.

The apple slaw and banana pudding were definitely stand out! The banana pudding is homemade and I'd drive all the way there just for that. The owners were very friendly and are opening a restaurant in town soon. It's nice to have well cooked food finally when going out!

I got a chopped beef sandwich for my husband with beans they up charged by $2, he said it was all good the beans were a little undercooked. I got their pork steak plate with 1 side and it was very good I think they put hot honey on the steak but it wasn't to spicy my son was able to eat it with me. One of them said the best potato salad in Texas and it definitely was good, reminded me of my grandma's. A little pricey for me but very good would go back.

Pulled up around noon on a drive from DFW to Austin. 100 degrees. Simple food truck in a gravel parking lot. Indoor area was about 80 degrees and power kept cutting out. Small radio tuned to a local country station. Felt great to be out of the sun. Only person in there. Very homey. Guys in the truck very friendly. Got a two meat. Jalapeño sausage was the best I had all week after hitting two other TM top 50 bbqs. Ribs excellent as well. Elotes salad delicious. Potato salad cool and well spiced. Advice: Everyone sweating in line in Austin just come here. Only regret is I didn't order more.

I'm in Temple for work, and found this place for lunch. Now I was the only one sitting down to eat so I wasn't sure what rating to give the atmosphere. Since it was quiet and peaceful I gave it 5 stars. The food, The tater salad (potatoe salad) was top 3 I've ever eaten in my life. It's mustard potatoes salad btw. The ribs were cooked just right , the meat wasn't falling off the bone which is what I'm looking for , but very tender and came off with ease. Nice seasoning on them as well, if anything could of used a little more seasoning, but great ribs. The Brisket nice and tender and good flavor as well. The Chopped brisket sandwich is very good if your in the mood for more of sandwich type meal. I did like they have the option to sit outside in the shade or inside the building in the AC. Nice folks behind the window as well. I will be back if I'm wanting some more bbq.

Out of all the BBQ joints I tried on my Texas roadtrip, this one is my favourite. The meat was tender and delicious, and the corn was such an unexpected delight! The guys running the BBQ truck were delightful, and even though it’s right next to the road, the atmosphere was quiet and pleasant. Will 100% come back when I’m back in the area!

I’ve only ever had their Brisket Burger because it is legitimately the best burger I’ve ever had in my nearly 49 years. I’ve come back each time to make sure it wasn’t just a fluke and I think it’s better every time. Get it with grilled onions and jalapeños— you won’t be sorry. Super nice folks and friendly atmosphere.

This is what I picture when traveling in for Texas barbecue! Also appreciate the really friendly hosts and the very laid-back atmosphere on a perfect cool day in December. Needless to say, the brisket was buttery and exceeded my expectations.

One of the 2019 Texas Monthly interim top 25 'cue joints-- and still worthy of a spot today! $25.71 purchased a quarter pound of fatty brisket, a jalapeno cheddar sausage link, sides of elote (cold) and jalapeno apple coleslaw, with two refillable iced teas. Everything was top notch. The well-smoked brisket featured the classic central Texas rub, and was so buttery that you could cut it with a fork. The sausage was beautifully balanced, and both sides paired well with the meats; indeed, we judged the coleslaw a "must do" side. In sum, this is what we style "destination 'cue." Just be sure to check their facebook page to guarantee that they will be opening as scheduled (they also cater).

The food here is terrific! I had brisket, chicken, ribs and sausage! Highly recommend.

What a great way to start the weekend with Burger Friday at Pustka Family Barbecue! The burger was incredibly juicy and loaded with lettuce, tomato, cheese, pickles, onions, and jalapeños. There was just a short wait, but that's how I know it was cooked for my order. I highly recommend this local and family-owned business and can't wait for their restaurant to open next door soon!

It's very impressive what this family can do with a brisket. They've mastered the art of Central Texas barbecue... which is undeniably the premier regional barbecue worldwide. These dedicated chefs know the importance of utilizing clean post oak smoke, prime grade perfectly marbled brisket, and a consistent fire to yield what is, without a doubt, Temple's best barbecue. The family broke into the craft setting up their trailer in Hutto where they developed a dedicated following. The Temple-Belton area, however, was their true home and they graced locals here with a homecoming relocation. Hutto faithful still make the worthwhile drive for sacks of brisket, ribs, chicken and sausage and are warmly greeted by the amiable, eager-to-please Pustkas at their familiar trailer window. The trailer is now abutted by a spacious building accommodating indoor, climate controlled dining in addition to patio seating. The ambiance is classic Central Texas BBQ style! I'm a pretty dedicated brisket guy, but these folks make what appears to be a phenomenal smoked/flattop-finished cheeseburger on Fridays that inevitably sells out no matter how many they prepare. One of these Fridays I'll get there early enough to snag one! Do yourself a favor and acquaint yourself to the best barbecue in town. You'll undoubtedly become one of the faithful.

High quality bar-b-que, extreme quality and value, and sausage that is sublime. It's a family affair and you can taste the love in their food. You can sit outside or in a very cozy and clean casita next to the truck. Portions are big, sides are well considered. And all of was technically perfect. They know their way around a brisket and perfected just about everything else down to the home made pickles. Under $35 for two big eaters to get their fill here. That's in direct opposition to the $100 I spent last week at another well known shop.

Very friendly & the brisket is top notch! Have visited twice now & will try their Friday burgers next. Banana pudding is one of the best I've ever had.

The best BRISKET in the state of Texas, the ribs were darn good too, corn is awesome, and Granny potatoe salad was amazing. My new favorite! The official BBQ of Big Dan's Hemporium, we approve!

Very friendly greeting, the sandwich was on a regular HB Bun, good amount of brisket, at least over 1/2 pound, homemade pickles and bbq sauce, potato salad was fresh and almost consistently of mashed potatoes almost, but good pickles and onion flavor, hard to find parking but worth going. Go enjoy

As an Austin native having worked abroad for 25 years we're now back. Not to Austin proper but in the area at least. Working my way through local BBQ joints to figure out my go to places I came across Pustka for lunch. It was amazingly tasty and fit my pallet. The mustard potato salad was literally like my mom used to make. The brisket and sausage sandwich and the pure brisket sandwich was juicy without being greasy. The slaw on top was incredible. The two dudes were Texas friendly and judging by the other folks eating at the picnic tables outside in the fresh air there is a following and rightfully so. I've found my place.

This is a food truck with indoor and outdoor seating. The apple jalapeño slaw was very tasty and the Elote (Mexican corn salad) was the best we have ever tasted. We ordered a pond of brisket and were not disappointed. It was delicious with our without the house BBQ sauce.

Great friendly place I wish I would've found them sooner, the wildcat bbq sandwich has quickly become my favorite bite to eat in town

Every few months we travel to Temple for medical treatments. We live in Caldwell about an hour away While in Temple we always look for new restaurants to try. Wow. Did we ever luck out. BBQ can be a hit or miss thing depending on the meat and the weather. These guys know their meats. We tried the sliced brisket and the ribs. BEST EVER. Therefore for our party the following weekend we ordered brisket and ribs. Two briskets and two slabs of ribs. The sauce is so so good. A hint of heat but nothing HOT If you stop at their place on the highway. You can eat outside(which we did) or inside. These folks know the service industry. We were told to place a call to Patti Pustka to order the meat for the party We left a message and she returned the call before we made it home that day. Picked up the meat the morning of the party. There was only enough beef left for maybe two sandwiches and no ribs. So so good. We got many compliments - passing those on our next trip to Temple!! Will definite go again for excellent food and service. Matter of fact my husband just asked if I wanted to make the drive to "shop" and maybe grab some BBQ at Pustka's !!!!! Cannot say enough good things about our experience. So happy with the quality and service

I hesitate to leave a review because while there was a bit of a line when I got there at 11:30, there SHOULD have been a line out to the street, and I don't want to get stuck in that line next time. This was my inaugural visit. First...awesome, friendly guys working their butts off in the trailer. Second...fast service. Third....well for me this kinda ties for first typically...that sauce did NOT come out of a bottle. It was almost complex in its goodness. Like layers of flavor. Perfect. Fourth...The meats were also awesome. Spicing of the ribs made a crust I found myself scraping off the bone with my teeth once the meat was gone. And believe me...it was gone. Brisket was fall apart tender. And the jalapeño cheese sausage, which I got because the chicken is only available in a half-chicken serving size (why I left a 4 and not a 5) shocked me. I'm really not much of a sausage guy at a barbecue place. This was not by my choice. But it sure will be moving forward. Wow! Super flavorful and moist, with a crispy but not tough casing. Finally the sides. I'm a potato salad snob. I'll admit it. Always love trying new tater salad. But I went with the slaw. Was getting the corn salad regardless. Both were perfect. No other words. Seriously...creamy, just sweet enough slaw with enough jalapeño to give it a slight and not overpowering kick AND green apple toothpicks for some extra sweetness and crunch. Good lord above. Apparently heaven has been relocated to Temple, and while for now standing in the heat isn't the best, there was inside seating and I understand they're taking a pragmatic approach to building out the inside space while they grow so they don't overwhelm themselves financially. So that means these folks are not only awesome cooks but smart businessmen too. I'm in love.

Stopped by this place today for a nice BBQ lunch. Got here at opening 11am. No smoke. No heat. No one. Waited 10-15 min and left.

This place is proof that you don't need a big fancy building to serve up some excellent barbecue. I wound up here based on an article in Texas Monthly. It's a little trailer in a Texaco parking lot, but let me tell you, these guys know what they are doing. I stopped by around 2 pm, and ordered moist brisket, a sausage link, and elote salad. Total was $13. Everything was outstanding. Brisket was tender and juicy with a good bark and well rendered fat. Simple seasoning to the brisket was perfect. Sausage was very good, and appeared to have mustard seed in the blend. Elote salad was a great accompaniment. I don't usually use sauce, but I gave theirs a shot, and it is very tasty. Absolutely worth the trip, and I will return

Pustka Family Barbecue is another of the ubiquitous Texas trailer restaurants. The owner prepares the meat, does the smoking, and carves it up for hungry diners. There is seating at outdoor, wooden picnic tables. We ordered brisket and pork ribs. Unfortunately, even though we got there about an hour after opening, he was sold out of sausage. The ribs were delicious, probably some of the best we tried on our barbecue safari. They were meaty and flavorful. The same could not be said for the brisket, which was dry and cool enough that the fat cap had reset and turned white. Darrell also makes his own barbecue sauce, which was fantastic. Hutto may be off the beaten path, or a town you pass through on the way to Taylor and Louie Mueller, but it's better than Mueller and well worth a stop.

Slightly hungry and stopped by on a whim. Glad I found this hidden gem. Outstanding brisket sandwich. I could definitely see this being a regular place that I stop in to buy it by the pound. Tender and delicious.

This place always hits the spot. The meat is always cooked to perfection, and the pickles are the best! I love the outdoor seating. Lunch on a Saturday is my favorite.

We have tried out this food truck twice now and absolutely love it. Make sure to arrive early, they do sell out of some meats before closing. The brisket is very well done, the bbq sauce is nice and sweet and the potato salad is a mustard base, which I love! The family owning the business was very kind and helpful at both visits. Prices are fair and the service is fast. I will continue to visit this place!

Best BBQ in Hutto bar none! Sides are below average but it's a good truck. The ribs, the brisket, the sausage...all are delicious! Bring a drink though, the soda cans smell like they are stored with the meat.

Pustka Family Barbeque makes the best tasting moist brisket that I have ever put in my mouth! I don't get by there enough since I moved out of Hutto, but I was thrilled to find them serving food at Kokefest this year! You won't go wrong by getting the moist brisket and fixing yourself a sandwich. You won't need the BBQ sauce they give out, but you will enjoy that, too. Just promise to try some of the meat without sauce before you doctor it up!

Yesterday we picked up some brisket, sausage, and half a chicken from the Pustka Family Barbeque trailer in downtown Hutto. Today I'm bummed we didn't get more. :) The brisket was classic Texas style, moist with salt and pepper, and delicious. We've been to a lot of Texas BBQ joints and Pustka brisket ranks with the very best. Their sausage was juicy had that "just right" grind with the right amount of heat. Then there was the chicken . . . the chicken was incredible. I don't know what the spice blend is but wow, just wow. The chicken was just a bit crispy, smokey, and had a good amount of the spice blend, so good! And the sauce . . . Right! I know! Who wants to mention sauce when we're talking Texas BBQ? I do! Putska's BBQ sauce is downright amazing. We were trying to figure out "what's that flavor we get right up front? Is that Chipotle? And yeah, is there an Asian flavor in there too?" We're still trying to figure out what's in the chicken spice blend and what's in that sauce, but one thing is for sure, we'll be going to Putska's Family BBQ again soon!

Outstanding BBQ. The care, dedication, and overall skill in BBQ just radiates from this place. The brisket is absolutely textbook. There is so much good BBQ in central Texas-- and this place is a top contender. Be sure to get in for what they're offering.

Loved this truck and bbq until today.. well $8.50 for a bbq sandwich with chips is a bit much, but it was good. Today, I went and the prices went way up! From 8.50 to 10.50! For the same 2 slices of bbq on a bun, Really! You have been making money hand over fist, with this Corona stuff. Do you need more $$$ for the new bluetooth speaker? Move on, lost 2 customers today... and many more tomorrow and every day after....

After playing a nice round of golf with a good friend, I opted to try yet more Texas Barbeque and Pustka family barbecue presented itself on yelp and the reviews were positive. While on yelp, I keyed in the directions and followed and I'm glad I did because it hasn't on a main road. The food truck is in pretty location and has adequate room for both parking and eating, but our current heatwave made me take the food back home to enjoy. So, I ordered the standard brisket and sausage plate and went back to my truck because it was 101. Within minutes, my order was ready and I took the food home to eat. Since I had a paper to write, I positioned the food appropriately to maximize both eating and writing time. And, my plans didn't work because the food was excellent. First, the brisket had an excellent peppery back and was very moist. The sausage was also very flavorful and unique, I appreciate those that put a spin on their sausage. There cole slaw blew me away because I like shredded, creamy slaw in general and apples are added which brightens up the dish. It balanced the pepper that's apparent in the bark, sauce and beans. Finally, the beans were peppery and filled with meat, and they were very good. Finally, make a trip to Hutto, Texas to try this barbecue food truck. The food is excellent and it is a great value for the price. I apologize for not having a picture because I was ready to eat when I opened up the container and my phone wasn't in reach. I guess I will have to return to the food truck for more pictures!

This is the best and most authentic bbq I've eaten in the area. Give it a try, you'll be hooked!

I am in love with their smoked turkey. It's very moist and flavorful. I try to stop every few months and get some to freeze just for myself. I never have enough left to freeze because I end up eating it all. Highly recommend. YUM!

For me this is old school Texas bbq, not all covered in rub, just seasoned with your basic spices but you taste quality of the meat and smoke. Just got some brisket and ribs, all was tasty, bbq sauce is good, taste of comino among other flavors. They ran out of sausage which is homemade, I will be stopping again to check it out.

Cool little food trailer in Hutto. Has picnic tables set up outside next to a convenience store. The lot gets muddy and stays that way for a while after a rain, so it's a little better for takeout than eating there. We picnicked and saw a steady flow of people coming and going who thought through that part of their day better than we did. 7 year olds and mud lots... bad combo. I digress. Sells meat by the 1/4 lb, sides and sandwiches. Tea and soft drinks, but no booze. Their brisket is wonderful. Not the half inch smoke ring you see some places, but the bark is amazing and it's perfectly cooked. The fat cap lends just the right moistness. You can tell he goes super low and super slow, as the meat on the lean end flakes and shreds with a plastic fork. The chicken has a nice, semi-crisp skin that gives way to sweet and juicy meat. Elotes salad is awesome. Spicy, sweet, crunchy. Tastes great, though a little less generosity with the mayonnaise would not hurt. I was less enthused with the potato salad. It had really nice flavor, but it's whipped and I prefer chunky. The sauce is thick and peppery... like Rudy's or Smokey Joes with much better food! I will be back for take out.

Great barbecue truck in downtown Hutto, had the Josh sandwich and it was awesome, wife had a turkey sandwich and it was great as well. I highly recommend dropping by.

I'm only half asian and can't do math well. My boyfriend is full-fledged Asian and his math skills are on par. But together we did the math and this place gets 100% ratings!! For the price you get more than it's worth in taste, quality, and quick service. Really charming staff and will definitely get my bbq fix here again STAT.

We really wanted to like this food truck. First, I am aware that meat prices are going up. But 1/4 pound of brisket should be more than two small slices. The brisket tasted okay but didn't stand out to us. We also ordered one sausage. Again it was okay tasting. The potato salad had a weird taste and the potatoes were totally mashed. We were not impressed, especially compared to other BBQ food trucks we have been to in the area.

I've now been here twice and both times the food has been incredible. The meat and the sides are delicious! The small eating area is great and there are some trees and umbrellas to provide some shade. When family and friends come to town, I'll be sure and share this place with them.

I had heard good things about this BBQ trailer. My wife was in the area and picked some up for on a few days ago. We got a small amount of brisket (unfortunately, sold out), sausage, and ribs. My wife also got a serving of potato salad. What we had of the brisket was very good. Lesson learned that we need to get there earlier next time. The ribs were also very good. But the best part was the sausage. this was by far the best sausage I've had at a BBQ restaurant in a very long time. I wasn't a huge fan of the sauce but it did complement the meats. What I especially liked is that they don't over pepper their BBQ which seems to be the trend with 'Texas style' Q. Seasoning was spot on. In my opinion, way better than any other BBQ in the area. We will definitely be back!

Couple of chopped beef sandwiches for lunch you bet. Great little food truck the two guys working were nice. Sandwiches were moist and sauce was great. Would we go again yup sure will. Great little addition to our town.

We just moved to Hutto last month and we haven't been able to get out to much and see the town. We drove through the small town part of Hutto and could smell the BBQ through our car. We stopped and were greeted by such Texas hospitality and felt right at home. We ordered ribs, sausage, brisket, and the jalapeño apple slaw and it was all amazing. We've tasted a lot of BBQ around Texas and we are happy this place is in our new town. We will be making many trips here.

This is great little spot located (now) in the heart of downtown Hutto. The owner was very polite and humble which is what I like to see at BBQ joints. Yes, it is in a food trailer, but that's part of the charm. I can honestly say that the brisket was amazing and reminded me of old school que my grandpa used to make when I was a child. That alone is priceless. The elotes and slaw where outstanding too. We also had the beans, but I think they needed to cook a little longer. The sausage, though made/cooked by the owner, was just okay. The turkey was moist and flavorful, but I probably wouldn't order again because it's not favorite meat. I'm interested in returning to try the ribs. Solid 4/5 stars for this place.

Dustin and family doing God's work here. Ribs were flavorful and had held onto/fell off the bone perfectly. Brisket was moist, peppery, rich with the perfect bark and smokiness. Worth the drive from anywhere.

I NEVER order smoked chicken at a bbq place. Hell, I rarely order chicken at any restaurant. I did, in fact, order the chicken at Pustka's based on a recommendation from a friend of mine. I took the first bite and realized what crackheads must feel when they took that first hit off the pipe. This isn't your standard, run of the mill smoked chicken. This is easily the best chicken I will ever have in my lifetime. We're talking PERFECTLY cooked and super moist. haha...there's that word...moist. Enough about the yard-bird. Also ordered a link of homemade sausage which had a nice snap and great flavor.

Still by far the best BBQ in the area. The cook on the meat (brisket, ribs, sausage) is spot on. A lot of places have mushy meat. Not here. The ribs have bite and the brisket is perfectly tender. And the sausage is still really good too. There isn't another BBQ place close to here that is as good. One of the best BBQ places I've ever eaten at. It's that good!
