This bakery takes great care in providing unique flavors and textures to all of their donuts, fritters and monkey bread. This isn't your typical donut shop, their flavors are well thought out and unique. For example, the dough for their traditional donuts is brioche, expect a buttery, less sweet body, a great vehicle for some of their toppings, which can be on the sweet side.
I've seen complaints about service. They get extremely busy on weekends and people cram inside around the few tables and chairs available. It's possible to pre-order online so there are people running in to grab their pre-paid orders. Know that if you go without preordering, you will wait in line for a bit. If you find a table inside, it will be busy most weekend, noisy and a squeeze-this is what happens when food is popular (and great) The store is located in Fox Point, an old part of Providence. The area wasn't originally built for stores that attract large crowds, some from out of town. There is little parking so plan ahead, this is the nature of a quaint, old neighborhood. If you're coming by horse, you'll be fine.
Seriously though, here's a quick breakdown of what they offer and what to expect:
Donuts - Brioche = light and stretchy inside.
Crullers - pâte à choux based batter = light and eggy.
Fritters - traditional yeasted style dough instead of their brioche dough. The dough is rolled out - often with some type of ingredient rolled into the dough - chopped and combined. This gives them their "chunky" texture.
Coffee Rolls - traditional yeasted style dough, the same as their fritters, layered with butter, more butter and cinnamon sugar.
Old Fashioned - made from a rolled dough, leavened, not with yeast, but with baking powder or baking soda. The resulting texture is denser than a yeasted donut = crustier texture.
Flourless - means made without wheat ingredients, instead, they use Bob's Red Mill 1 to 1 Baking Flour. They are not a certified gluten-free baking facility so there's always a risk of cross-contamination, be advised.
Cake - different than their old fashioned style, smaller, and more fluffy! Made from a batter (think cake batter)
Vegan - vegan "brioche" donut is made the same way as their signature brioche donuts, only without the dairy. They incorporate coconut milk and apple sauce to replace eggs and milk, as well as coconut oil.
Monkey bread - a baked "muffin" style pastry that they offer daily. It's made from the small pieces of brioche dough that can't be rolled back into donuts, a delicious way to minimize food waste. Different flavors daily.
