My go-to hot pot option in Seattle. The flavors are some of the most authentic I've had within Seattle amongst hot pot options. I love the $3 flat fee sauce bar, which has stuff like spicy black fungus, marinated tofu strings, and lots of delicious sauce options. Although the broths are so flavorful I rarely end up using much sauce anyways.
I love that for the same cost, you can choose up to 3 different broths. A decent amount of options on the menu, which you check off on a paper. Not too overwhelming.
So far we've tried bean vermicelli, veg combo, king oyster mushroom, quail egg , bean roll, flat iron beef, pork belly, fried fish tofu, sliced taro, house made cilantro beef ball, and wagyu.
for apps/dessert: brined pork feet, fried taro buns - both okay, the brined feet had a peanut taste that was surprising. The taro buns were tasty, but I think they had been refried to make them fresh again, which wasn't great.
broths: chongqing spicy broth, golden chicken soup with collagen, herbal chicken broth
Out of these, my favorites were the bean vermicelli, king oyster, taro, and beef balls. They're so great at soaking up the flavor, and my favorite broth was herbal chicken. The spicy broth is quite spicy, even at level 1!
