Quimbaya

"If you want to take your tastebuds on a culinary journey, Quimbaya provides the perfect opportunity, thanks to chef Edwin Rodríguez’s ability to recreate the flavours of his native Colombia, the birthplace of the movement known as Magic Realism. This restaurant, which takes its name from an indigenous native group famous for its gold craftsmanship, features a small bar displaying a superb array of Colombian spirits, and a minimalist dining room with an open-view kitchen where guests can partly interact with the chefs at work. The cuisine here is based around a single 10-course tasting menu called Memorias that, in the restaurant’s own words, takes you on “a journey back to our memories in order to remember flavours that feed the soul and revive stories of dishes that are a vivid expression of all things Colombian”." - Michelin Inspector

I celebrated my bday last night at Quimbaya and had a memorable experience. The attention and service offered by the team was exceptional. I also enjoyed the sporadic interaction with the chefs as they highlighted some of the dishes and the inspiration behind their preparation. I am Colombian and took my German wife and we both left very happy with our experience. I also learned so much more about all the different flavors and plates from the country. They truly take you on a journey of the country from a culinary point of view. Strongly recommend it!!

We had a wonderful and very filling tasting dinner at QUIMBAYA. The staff and servers were amazing. We felt a warm welcome from the minute we arrived. I really appreciate the innovative dishes and knowledge on foods native to Columbia. Everything was delicious! We were stuffed by the time we left so plan not to eat hours before this meal.

Outstanding food and service. The team make you feel genuinely welcome. From start to finish, an outstanding experience. The skill levels and time taken to create the dishes is immense, plane to see when the beautiful dishes turn up. You know this hasn't been "just" dreamed up. If you can afford it, do it.

The meal of the year for us. We visited at lunch time. The staff was attentive and friendly. Each and every dish was an experience. All dishes without exception were beautiful, interesting and unique. The vast majority were outstandingly delicious, none were disappointing. We chose one alcoholic and one non alcoholic pairing, and both were special and well crafted. It was nice to be able to sample both. Take your time, we spent more than 3 hours there in total, and it was worth every cent and every minute.

By far the favourite fine dining experience I've had so far and an unequivocal recommendation! Quimbaya had a couple of standout courses and no bad ones. Every dish had something about it that I definitely would not be able to replicate as a home cook. Be it weird ingredients (ants!), sophisticated techniques or flavour combinations I would've never considered. You always feel like they are pushing the envelope on what food can be which is what I want out of a Michelin star experience. Special shout-outs go to the ceviche, a wonderfully intense fish-soup course and the smokey beef-corn medley. Even the deserts which are often a weak point in fine dining for me, all had an interesting twist to them which elevated them from the usual "sorbet with artistic crumbs". For all that, we paid about 150€ per person which is on the lower end for a one star experience in my book

We had a fantastic meal at Quimbaya. The food was delicious and you could tell the chef was focused on making sure each dish was perfect. The service was also spot on and the servers were very attentive. It was a wonderful way of presenting Colombian food in an elevated way. The reason for my 4 star review is because it took almost an hour and a half for my husband and I to get the drinks we ordered. We choose not to get the wine paring and thought we'd have a drink to start and then order a bottle of wine. By the time we got our first drink we were well into the menu and ended up skipping a bottle. I had to ask the servers a couple of times before we finally got them and we're simply told it was a process. We would have at least appreciated an apology when we finally got our drinks but the staff didn't seem to think it was an issue. The website shows a cocktail list but at the restaurant the staff didn't seem to have much knowledge of the cocktails offered so I just picked the first recommendation which was very good. I would not let this stop anyone from going but perhaps just staying away from cocktails. For a restaurant of this tier waiting that long for a drink is not acceptable.

A one-of-a-kind Michelin star restaurant that will send you straight to Colombia, a tasting menu of carefully prepared chef dishes with an illustration of every little detail, special and exotic flavors and special combinations that we have not known. Each dish is surprising and perfectly made. All the team members are from Colombia and explain in detail about each dish. We had a great time and highly recommend it
