QUIMBAYA by Edwin Rodríguez

The meal of the year for us. We visited at lunch time. The staff was attentive and friendly. Each and every dish was an experience. All dishes without exception were beautiful, interesting and unique. The vast majority were outstandingly delicious, none were disappointing. We chose one alcoholic and one non alcoholic pairing, and both were special and well crafted. It was nice to be able to sample both. Take your time, we spent more than 3 hours there in total, and it was worth every cent and every minute.

By far the favourite fine dining experience I've had so far and an unequivocal recommendation! Quimbaya had a couple of standout courses and no bad ones. Every dish had something about it that I definitely would not be able to replicate as a home cook. Be it weird ingredients (ants!), sophisticated techniques or flavour combinations I would've never considered. You always feel like they are pushing the envelope on what food can be which is what I want out of a Michelin star experience. Special shout-outs go to the ceviche, a wonderfully intense fish-soup course and the smokey beef-corn medley. Even the deserts which are often a weak point in fine dining for me, all had an interesting twist to them which elevated them from the usual "sorbet with artistic crumbs". For all that, we paid about 150€ per person which is on the lower end for a one star experience in my book

A must visit when in Madrid. The dishes are incredibly well-thought, creatively presented, perfectly executed, and a reminiscing flavor exercise through 10 steps, filled with delicious memories and smiles. Service was impeccable and friendly; Colombia at its absolute best. Outstanding!

A one-of-a-kind Michelin star restaurant that will send you straight to Colombia, a tasting menu of carefully prepared chef dishes with an illustration of every little detail, special and exotic flavors and special combinations that we have not known. Each dish is surprising and perfectly made. All the team members are from Colombia and explain in detail about each dish. We had a great time and highly recommend it

In one word: wow. 10 courses of culinary delight through Colombia perfectly paired with wines from the world that either highlighted the exceptional flavors or contrasted the unique and often aggressive statements made by the dishes. Our table captain shared the story behind each dish and was patient with our questions. Every dish was unique and exceptional. Every wine was unique and exceptional. Dining at Quimbaya on this first occasion was with a friend so the focus was on him, not writing. I will return soon for an opportunity to enjoy an evening of writing and gastronomic adventure through Colombia as presented by Chef Rodriguez' team. I highly recommend.

Our first experience in a Michelin 1* restaurant and it surpassed expectations. The personnel, the open kitchen, the history, the storytelling perfeclty combined with a 10 dish menu that is playing with your taste. Great experience that we totally recommend to try if you are in Madrid!

If not the best meal I’ve had, certainly close. I’ve eaten at several Michelin starred restaurants - I’m not the most experienced diner, but I’m also not the least. This meal was outstanding from start to finish. I could try to describe the dishes, but I wouldn’t do them justice. Look at their menu and know … it’s all great. Waitstaff and atmosphere were also amazing. I was raised in a time when fine dining equated to a formal, stuffy meal - I’m so glad we are past that. Waitstaff were perfectly attentive, while also being real people, laughing and making you feel like you could relax and enjoy the food vs being monitored for appropriateness. Big props to Chef Rodriguez and his crew.

A gastronomic journey through the life of García Marquez and Colombia in an intimate and comfortable atmosphere. They transport you with every dish and every story, putting your imagination to the test. Wonderful service combined with unique and different flavours. I recommend it 100% to everyone.
