This restaurant, which takes its name from an indigenous native group famous for its gold craftsmanship, features a small bar displaying a superb array of Colombian spirits, and a minimalist dining room with an open-view kitchen where guests can partly interact with the chefs at work. Beautiful restaurant, great ambience. The service is attentive and very helpful. I loved the Maitre and all the staff. The food: I appreciate the freshness of all the produce and the excellent technique and presentation. All were excellent. I just didn't find the food taste innovative. A lot of the food was bland and some of it was drowning in cumin. Maybe this season's menu didn't go well with my taste buds or I totally missed the point of Columbian cuisine.

Tried the Sinfonia Tasting Menu. Honestly speaking, i cannot relate to the flavors they are presenting. Although presentation is beautiful, ambience is great and service of Brian is outstanding! Unfortunately, this is one of the forgettable Michelin starred restaurants I have tried, no dish stands out for me as special. Either too salty, too sour and plus the strong cumin flavors on the dishes, not my favorite at all! Probably I am not a fan of columbian flavors? I don’t know, but I tried Orma restaurant in Rome which is columbian cuisine also and it was special but maybe because it is a fusion of Italian flavors? Maybe! But definitely, this is not something I would recommend to try when in Madrid. The Wheat soup and pork was at least good and the desserts.

Very attentive service. Nice atmosphere with Colombian music in the background and a view on kitchen, not just the plating but the actual cooking. The food itself was for the most part nice, but not exceptional enough for the price, especially with 8.5 euro plain water added to tally. Last time I was charged this much for water it was at least from iceberg, this one came with no such justification, a bit scandalous in my opinion. I had the short classics tasting menu. I liked best the bread selection, one of the appetizers served on bed of fruit and the dessert. Both fish appetizer and ceviche were not really to my taste, it appears that I am one of genetically deficient people that taste cilantro as unpleasant (good to learn something new about myself). Overall it was still a very good experience thanks to the great service, lovely atmosphere and memories of Colombia it evoked.

I celebrated my bday last night at Quimbaya and had a memorable experience. The attention and service offered by the team was exceptional. I also enjoyed the sporadic interaction with the chefs as they highlighted some of the dishes and the inspiration behind their preparation. I am Colombian and took my German wife and we both left very happy with our experience. I also learned so much more about all the different flavors and plates from the country. They truly take you on a journey of the country from a culinary point of view. Strongly recommend it!!

We had a wonderful and very filling tasting dinner at QUIMBAYA. The staff and servers were amazing. We felt a warm welcome from the minute we arrived. I really appreciate the innovative dishes and knowledge on foods native to Columbia. Everything was delicious! We were stuffed by the time we left so plan not to eat hours before this meal.

Outstanding food and service. The team make you feel genuinely welcome. From start to finish, an outstanding experience. The skill levels and time taken to create the dishes is immense, plane to see when the beautiful dishes turn up. You know this hasn't been "just" dreamed up. If you can afford it, do it.

The meal of the year for us. We visited at lunch time. The staff was attentive and friendly. Each and every dish was an experience. All dishes without exception were beautiful, interesting and unique. The vast majority were outstandingly delicious, none were disappointing. We chose one alcoholic and one non alcoholic pairing, and both were special and well crafted. It was nice to be able to sample both. Take your time, we spent more than 3 hours there in total, and it was worth every cent and every minute.

Rock solid kitchen and taste with 3 dishes that are top notch. But overall lacks always the finishing touch and attention to detail (in taste and service) that I am used from michelin star rated restaurants, especially at this price point.
