"The chef takes pride in his “Shio Soba” (salt noodles), his quest for a bowl of perfection. Taste the seaweed—sea lettuce and nori—and you can feel the rustle of sea breezes. Triple soup of fish, shellfish and chicken is prepared using Pi-Water, a water that is said to be extremely similar to water in living tissue. High hydration ramen noodles, prepared with a blend of three types of wheat flour, produces a texture similar to noodles kneaded by hand. Three types of chashu are served as well, combining pork and chicken. Bringing out the best in soup, noodles and chashu for a triple treat." - Michelin Inspector

We booked through tablecheck the Assistant was very welcome even they dont understand English, we felt very welcomed. We had the shio duck soba, the broth is amazing very clean and balanced full of flavour and umami, you can see there is a por of dedication to it. They have a small text in English where they describe How they make the soup and where the ingrediente come from. The red egg is delicious. The duck was tender and melted in your mouth, its a little bit hard to find the store but was worth every minute. Thank you for a great bowl of ramen, keep upe the good work and all the dedication, it shows.

My husband and I had the best ramen we’ve ever tasted! The broth was rich and flavorful, perfectly balanced, and the noodles had that ideal springy texture. The highlight for me was the red egg—cooked to perfection and packed with flavor. The staff were so kind—they gave us a handmade crochet flower bouquet and a sweet card, which I brought all the way home to Alaska. A truly memorable experience!

The BEST RAMEN we have ever had. Truly deserving of its Michelin Star. Since it was our wedding anniversary, they also surprised us with beautiful handcrafted presents. Delicious food, great place.

This is the first time I've eaten this type of ramen and I can't say it was very good for my taste. The ramen broth was weak and I think the price was high for the ramen offered. Other than that, the meat was good and the ramen was al dante. The staff was fast and the place was very clean.

Heaven on earth. Everything we tried was amazing - you’ll just have to go and try because words can’t describe the experience. Watching the chef and assistant work was like a work of art in itself! Thank you for a truly wonderful meal.

We had lunch here, super last minute (20mins before afternoon closing), no reservation needed. We only had to wait for 5mins. The food was A-M-A-Z-I-N-G ❤️ For anyone searching: It’s in the basement of the building on level BF2. Then wait in line. Enter some cash in the vending machine, for each item you order, you’ll get a printed ticket. Highly recommended!

It was a popular house, and there was waiting at lunchtime on weekdays. I made a reservation, so there was no waiting. The restaurant is in a very quiet atmosphere and customers should refrain from talking to focus on the food. I expected taste because it was a well-received house in Japan, but the taste was not good as I expected. Overall, food was little salty, it seems to be due to the difference in local taste. Since there are a lot of Japanese ramen in Korea too, Korean stores may have done well in localizing. Anyway the hospitality and atmosphere were good.

One of my favorite ramen places. The pork is so tasty, the broth comforting & soothing and the noodles are tender, my favorite was the red egg, so deliciously cooked! I wish I could order another bowl! We reserved online for 5:30pm and was let in on time. It was quiet but definitely intimate, my kind of dining experience with friends. It was nice to be able to see the chef work in the kitchen and the amount of concentration he puts into his food. One of the staff even made a beautiful origami card to thank us for our visit. Such a nice touch. Thank you for a great ramen experience 😁

Yelp
Easily the most humble appearing Michelin guide restaurant I've been to. My friends recommended this place after trying the ramen for themselves and even with Google Maps, I spent an extra 5 minutes finding the restaurant. Look for their self-pay machine on floor B2. The miso soba special tasted excellent. The broth (same for all their ramen dishes) is a mixture of 3 different soup bases which results in a light but rich flavor. They recommend letting the noodles soak for a while before taking a bite. In my opinion, the broth stands as the highlight of this dish but I have to give some appreciation to the char siu (chicken and pork) as well. It tasted very tender and the chef certainly did not hold back on the portion sizes. The inside has very limited side-by-side seating. My group of 3 got lucky and landed seats next to each other after a short wait, though I don't remember how long. I wouldn't advise dining with a group any larger. This was my favorite ramen stop throughout my entire week in Japan (Tokyo, Kyoto, Osaka)!

Yelp
I was so surprised when we googled ramen in Osaka and a Michelin guide restaurant popped up. Even more surprised when it's in the middle of the mall and is kind of hole in the wall-y! It was PHENOMENAL! The chef specially curates the ramen broth using a mixture of three different homemade broths for a perfectly balanced and delicious ramen! The noodles are thin, perfectly cooked, and delicious! I would strongly recommend this place if you can get there!

Yelp
michelin bib gourmand ramen! this place is a little hard to find since it's at the subway station tucked away in a little side area. ordered the signature shio ramen and it was delicious. the broth is very light and not too overpowering/salty. it has a very slight seaweed flavor to it which is very nice. the meat is also extremely tender and the egg is cooked/flavored to perfection. it is a simple ramen, but you can tell it's made with care and very high quality ingredients.
