Ramen Machikado - Review - Ebisu - Tokyo - The Infatuation

"Ramen is often known to be fatty and rich, but Machikado shows that there is boldness in subtleties. Their ramen celebrates red sea bream, a beloved fish in Japanese cuisine due to its taste and cultural significance. The broth is light but opaque from the slow simmering of fish bones, and there are slices of just-seared red sea bream with smoky, crisp skin and meat that’s almost sashimi-like. To up the salty, briny factor, add a couple of green olives that sit as a condiment on every table, part of the whole Italian-Japanese fusion thing going on here. On top of each milky bowl of ramen is a gentle mix of vegetables, like open pea pods, lemon, and sprigs of microgreens that look like the first small sprouts of spring. We can’t wait to go back to try the dan dan, tsukemen, mazesoba, and lobster (when we’re feeling extra lux)." - Kiera Wright-Ruiz

As a sea bream lover, I found this ramen shop in Ebisu through Tabelog, and it turned out to be a great pick. I ordered the set, which comes with three small appetizers — and I have to say, the scallop baguette was incredibly good. The ramen noodles felt more like Italian pasta in texture: firm, springy, and perfectly cooked. Exactly the kind of bite I enjoy. A very satisfying meal overall.

Just finished a delicious dinner of sea bream and lobster ramen! The broth was richand light. The pieces of sea bream and lobster were tender and flavorful. Best glass of sangria ever. Highly recommend this small welcoming restaurant.

I truly believe that their ramen is good and tasty. But for my personal taste, I am not a fan of their fish broth with a taste of tomato and they also put a piece of lemon on top which I think it overpowered the freshness from the fish broth itself.

Rare find of delicious fish ramen. Unassuming restaurant but impresses with presentation and taste. The chef was very friendly and helpful even though he had to use a translation app. I see they have added new items to the menu since I was there, so I guess another trip to Tokyo is a must.

My mouth is watering just thinking of the food at Ramen Machikado. I'll give you fair warning. When you first enter the restaurant, it feels a little 'meh' like it's seen better days and has a little bit of an uncomfortable odor BUT remember this restaurant serves ramen in freshly made fish broth. The ramen was fantastic. The soup stock was outstanding. The toppings were fresh, original, and very well paired with both the ramen and the stock. My wife and I, both, would go eat here again in a heartbeat. Very, very reasonable for the price.

Beautiful sea bream ramen restaurant, located on the east side of Ebisu. Perfectly crafted, prepared and plated ramen, with a delicate broth full of flavour. The special includes a generous serving of sea bream, shrimp wontons and an assortment of select vegetables. Highly recommended.

I just tried the Special Red Sea Bream Ramen, and it left me thoroughly satisfied. The standout feature of this dish was undoubtedly the broth—it was incredibly rich and flavorful, yet surprisingly light. Every spoonful was savored, and I managed to finish every last drop without feeling weighed down or fatigued. The fish in the ramen was an absolute delight. It was of excellent quality, perfectly cooked, and added a delightful touch to the overall dish. The freshness and taste were truly remarkable. The accompanying vegetables were expertly prepared, providing a satisfying crunch that showcased the skillful cooking techniques employed in the kitchen. While the ramen noodles themselves were good, they didn't steal the spotlight. The real stars of the show were the broth and fish. The noodles, though well-executed, served as a fantastic supporting element, perfectly complementing the rich flavors of the broth and fish. Overall, my dining experience here was immensely fulfilling. I wholeheartedly recommend this place to fellow food enthusiasts. I am already looking forward to returning to savor their delicious offerings once again.

Snapper soup ramen here. Intense fish flavour of the soup. Must try if you are a fish soup lover. In case u prefer less fish flavour, dan-dan soup is recommended.
