Off the beaten path in an unassuming office park sits something special. We walked in and wondered if we had the right place, but a warm smile and welcoming aroma greeted us. They are small, artisanal small, but their sampling room still feels like a hip day spa.
We were greeted by the owner, Raluca, who is clearly very excited to share what she makes, and it shows. She is happy to answer any questions and does so with a sparkling personality. She discussed ingredients, sources, processes, flavors, and final products. It was the most interesting Ted talk I've ever seen.
Now let's discuss the chocolate. When Phil Rosenthal visited the French Laundry, head chef Thomas Keller made a point of showcasing how the thinner the chocolate shell, the higher the quality. Well, these chocolates have an almost paper thin shell.
They use imported Belgian chocolate, and it pays off. Dark, rich flavors linger on the tongue and left me clambering for more. Their caramel gingerbread is an absolute delight. The flavors are all there, and the texture is perfect. The cherry tasted like the ideal chocolate covered dark cherry, like what a chocolate covered cherry aspires to be. Their coffee is sublime. Textures and flavors are all pleasant, and each piece was lovingly made by hand, in short, they taste as good as they look, and they look amazing.
They are completely gluten and dairy free. They also ship nationwide. This place is worth a visit, if only to sample and enjoy an education on chocolate while relaxing at a day spa. But I'm betting you won't leave without taking some home.
