"In his new restaurant, chef Tanguy Laviale (previously at Garopapilles) is calmly going about extricating himself from the traditional codes of gastronomy – with the help of his associate, Maxime Courvoisier, a sommelier who thinks outside of the box. Imagine: a short menu, comprising just eight dishes to be mixed and matched as you please (four or five of these small plates amount to a meal). The talented chef's technical approach always hits the mark, from the judicious combinations to the quality produce enhanced without any showboating, not to mention the impeccable garnishes and seasonings. Examples include breaded red mullet, kale and sour cream; line-caught hake with an oyster and mint ravigote sauce. We stumbled upon this restaurant completely by chance, and only realized it had a Michelin star when we saw the plaque near the bathroom - it made the whole experience even more special because we were already loving it before knowing that! The food is simply incredible. You can taste how fresh and high-quality the ingredients are, and the combinations of flavors are creative, delicate, and totally unexpected in the best way. Every dish felt like a surprise, full of personality and care. What makes the experience even more unique is their menu approach: you can either choose your own selection of dishes or let the chef surprise you with off-menu creations. We went with the surprise option and were blown away by every course - balanced, beautifully plated, and so flavorful. Their wine list is extensive - easily over a hundred labels to choose from - and the staff is happy to help guide you through it if you feel overwhelmed by the options. We’ve already been back for a second visit, and it was just as exceptional. This place is a true gem, whether you’re a foodie or simply looking for a memorable meal. I wholeheartedly recommend it, you won’t regret giving it a try.

Extraordinary meal. From sea bream gravlax to a take on French toast, everything was amazing. We did the chefs tasting menu and they were wonderfully accommodating of various food aversions. Space is unpretentious but welcoming - the Michelinstar is displayed in the bathroom. Staff all spoke English and worked seamlessly together. And the wine list - so good!

A great experience at Ressources. Very friendly team who all spoke perfect English and were accommodating to us. Had a great laugh with them and made us feel very welcomed. There are 2 options with the menu; you can leave it up to the kitchen to choose what you'd like, and you tell them how many courses you'd like. I think 4 courses is enough, as the dishes are quite small. Or, you can choose course from the menu similar to a la carte, which I think spoils some of the fun. There were some unusual ingredients and flavour combinations, which I think were interesting and something we wouldn't usually have chosen. This was great to broaden our horizons. Great wine selection (obviously!) and reasonably priced. If you're looking for something a bit different, fine dining, with a modern twist, this place is perfect for you. Recommended!

The food is exceptional, trust the chef‘s choice- it’s amazing. The wine list is formidable . But the latest fashion to reduce decorations to imitate the bistro style gets on one”s nerves. When I go to the Michelin restaurant I expect something different from a truck driver’s joint. By the way, the Michelin star hangs in the bathroom, not at the entrance.

It was interesting that the tableware wasn’t changed in a restaurant with 1 Michelin star. The service cost seems low. The dishes were simple and tasty. If you’re looking for a more relaxed and straightforward dining experience, this could be a good choice. The dishes we had were flavorful.

It was a delightful surprise—a highly creative restaurant. Every dish was impressive, and the champagne selection was exceptional, introducing me to varieties I hadn't encountered before. The standout dishes for me were the lobster ravioli and the sardines with truffle. The service was equally remarkable, with our waiter being both attentive and a pleasure to converse with.

Since the restaurant was fully booked when we started to plan our holiday we put our names in the waiting list. Luckily due to a cancellation we got a phone call that we could visit the restaurant. We were placed at a high table next to the kitchen which gave us a great view of everything the chefs did. Waiting staff was excellent, knowledgeable and friendly. Wine list is very impressive with many options from all the French wine regions. We choose the 5 course menu, chefs choice. The chefs were kind enough to present my girlfriend and me with different dishes, which made it possible to taste 10! Food was very elegant and balanced. All in all a fantastic experience, would rate 6 stars if possible. Prices are quite high, but very reasonable if you take into account the value provided. This dinner was the highlight of our holiday. Highly recommended.
