I really wanted to give Bistro Royal a good rating but was so disappointed with the dining experience there. I decided to write this review since I don´t think the owner is aware of the current state of things and I would have appreciated to be informed if roles where reversed.
First impression is a stylish interior and presentable outside and entrance. Bistro Royals weak point is neither the food nor the atmosphere, it is the staffing. It is difficult to spot who is in charge and who is doing what, and this becomes apparent after being seated.
Time:
I waited for over 15 minutes to be attended to after being seated before I got the opportunity to order a drink. After that it took over 30 minutes before I got offered to order food, and after finishing my meal I waited over 20 mins with an empty plate and glass before the bartender of all came up and tended to me. I was never offered a second drink, water or an espresso after dinner. Clearly a missed opportunity for extra sales there.
Food:
The food was well presented and good, so kitchen is apparently doing their part.
Hostesses: The young woman that greets you when you enter is giving a complacent, sloppy impression both with lack of understanding her role and presentation: Her clothes were a few sizes to big, both suit pants and suit jacket, leading to pants that were trashy and being stepped on, with treads loose when she walked around. The the suit-jacket looked like she had borrowed from her boyfriend for the day. Maybe this oversize loose clothing is fashion, but it gives a sloppy impression as hostesses. She was inattentive to guests, was on her phone, sometimes clicked on the serving table screen & went behind the bar and made herself an iced-latte while I was there. When she didn´t do this she was chatting with other female staff. I don´t know how she got the job but she clearly is either: 1: Not trained enough to understand her role 2: Way to laid back at work. 3 The owners daughter and knows, no matter what, she will never get fired.
Staff: Bistro Royal has made a bold choice only hiring young staff where no one looks like they are above 23 years old and all look like they just there as extra-work between University studies and Parties. This becomes apparent with organisation and workflow in the restaurant. Yes there are a lot of degrees these days how to run a restaurant, but service-mindedness, team-work and creating a great restaurant experience for visitors has to be learned at a restaurant with experinced staff, in real life, this comes with experience and mindset to deliver the best performace, something staff at Bistro Royal doesn´t have.
As a comparison, staff the same age, at Lagkagehuset, works better together than this bunch. The owner would most likely be better off switching out his current hostesses to the shift leader at any of the Lagkagehuset and see a direct increase of delivered dishes and returning visitors. The new staff would most likely be more appreciative and happy to work there than the current bunch.
Bar: The single bartender when I was there did the best he could, but random staff running behind the counter doing random stuff clearly distracts him from keeping his station intact. For example, for the hour I was there there was citrus fruit left chopped up without being put on ice or in a container, just drying out in room temperature on the cutting board.
To summarize: Make the necessary changes or continue to bleed money. I´m all for hiring young staff but without clear guidance, leadership and accountability taken by those that doesn´t perform this please is clearly heading towards an iceberg.
