"Château de Courban is an elegant 19C mansion with a burnt sienna-coloured façade, looking out over its grounds. Preceded by a plush lounge with a crackling fireplace, the restaurant is housed in the property's converted barn, which boasts a beamed ceiling in the regional style, chandeliers and mirrors. In the manner of a skilled craftsman, the chef shapes his raw materials – excellent ingredients – into delicate seasonal dishes, the leitmotif of which is flavour: tomato confit and its three condiments; line-caught cod with sauce bonne femme; Racan pigeon, pigeon-foie gras sausage, cabbage and truffle jus. The meal is rounded off in fine style with pared-back desserts that are low in sugar. The wine list has a particularly good selection of champagnes and Burgundy labels." - Michelin Inspector

"An 1837 manor house set between Troyes, Dijon, and Chablis, is a fine exemplar of hospitality in the Burgundy wine country. Château de Courban & Spa Nuxe is devotedly historical in its exteriors and its public spaces, but it’s been subtly updated into a quite contemporary luxury hotel; rooms retain their period romance even amid modern amenities and decorative elements, while the spa is state-of-the-art. Fabulous find in the heart of France. Beautifully designed chateau surrounded by stunning countryside with a superb restaurant. Excellent dishes with sensational wine pairing and friendly welcoming staff, couldn’t fault a thing. Pets a super welcome too. It’s expensive but worth it!

Absolutely exquisite food, both for presentation and taste sensation, alongside faultless service. A true gem and I shall be returning many times.

Overall a pleasant stay for one night during my exploratory travel in Bourgogne. A very nice setup of chateau with a historical atmosphere and a good level of attention to details. The restaurant turned out to be a Michelin star one with degustation menu served (no availability of the a la carte menu for some reason). The major reason for 4* overall is an added 10% TVA on costs (both accommodation and dinner) at the time of checkout, albeit, best to my knowledge, this never was mentioned - neither by booking accommodation or signing a bill for dinner. More clarity and transparency on this matter would help.

Booked before realising the restaurant was a Michelin Star. Not sure about the value for money based on other Michelin experiences but no nearby alternative! The meal was exquisite. The wine perfect. The service superb. No regrets. Worth every penny. And the accommodation was great, an unexpected car charger on site with easy access. A truly memorable stay.

We have been here many times. Lovely rooms - very large and beautifully furnished. Loads of character. The restaurant is superb. They recently lost their entire equipe and had to rebuild it but the new chef is just as good, albeit from a slightly different style of cooking.

We had a a very enjoyable stay at Chateau de Courban on our way back to England from the south of France. The hotel is charming with a fabulous rustic country house character. The dinner was one of the best tasting menus we have had for a long time with some really imaginative and and creative dishes. They also have an excellent wine list with a very helpful sommelier. The staff are great who all seem to enjoy working there and the service is amazing. Will definitely be coming back.

This was our third visit and the setting and ambience remain memorable. Our bedroom was top class. We thought the food did not reach the standards of our first visit in late 2021 when it was outstanding. On this occasion some individual dishes were very good but we felt there were one or two blemishes: the veal main course was spoilt because the delicate accompanying sauces were overwhelmed by the strong morel mushroom sauce - better not to serve both together. We also felt that too many canapes were served with pre-dinner drinks amounting almost to a starter - the felafel was too heavy - one amuse-bouche would suffice. It was also irritating to have each dish explained to us as it was served when the menu had already done this.
