We enjoyed visiting this restaurant tremendously. It served food that was innovative but sincere, and of an exceptionally high quality. The chef really showed his mastery of the French techniques, his understanding of the east and west ingredients, and the exceptional skills required for a master sushi chef. The mélange was thoughtful, seamless, and impeccable. Take, for example, the starter dish Kushikatsu presented in a small dutch oven that was playful but also practical by retaining the temperature and fragrance. The lotus root and pepper lightened up and added crunch to the foie gras which ended up accentuating the latter's rich taste and adding interest. For the first 2 courses of the main, the chef clearly demonstrated his mastery for preparing and cooking squid. The sushi rice in the first melted in with the squid so that the 2 components played synergistically on each other in the mouth. It's NOT jist a squid sushi!!
It's impossible to give enough credits to every dish. It was truly a great menu but I can't sign off without mentioning the dessert menu. It's an intellectual and progressive dessert course, starting with something like a palate cleanser and ending with something substantive and satisfying, all relying mostly on natural healthy ingredients rather than a focus on flour, butter, and processed sugar. On top of everything else, the presentation was beautiful and zen. Last but not least, the floor staff offered impeccable service. This restaurant truly deserves accolades and recognition. I hope they earn the respect they well deserve. Bravo chef and equipe for the dedication and passion. We loved it!
