"This restaurant may be rather inconspicuously located on the edge of a small village, but it is certainly worthy of your attention. "From Permaculture to Table" is the concept behind it. Peter Fankhauser is doing remarkable work here in two respects: first, he keeps a 1 000m² permaculture garden and is therefore himself able to supply the restaurant with fruit and vegetables. Only cereals and dairy produce are sourced elsewhere in the region. Secondly, these ingredients are transformed into elaborate dishes that are brimming with flavour and aroma, complexity and intensity. They serve a single vegetarian set menu, which comprises nine courses on Wednesdays and Thursdays, and 13 courses on Fridays and Saturdays. Service starts at the same time for all diners, with explanations provided about the sustainable philosophy." - Michelin Inspector

What a hidden gem! We were staying just 15 minutes away, and I’m so glad we discovered GuatzEssen. The food was absolutely incredible, with 80% of it grown right on-site. It made for such a unique and memorable experience. I’d highly recommend it to anyone looking for fresh, delicious, and locally sourced cuisine!

GuatzEssen, Jesus where do I beginn. Such a lovely and small little Team. It's a very cozy atomsphere. In the small town of Stumm somewhere in the countryside. Who would've thought a Restaurant this unique and Special would be located right Here. The food is beyond Just good. You can See how the Chef Puts in so much thought into every dish. They don't only Look amazing, they taste beyond amazing too. The speed at which the different courses come is really nice and it doesn't feel rushed or Takes too long. We Had such a pleasant experience Here and we will surely come Back. I Had fine dining before but never Like this. Very unique and they definitely deserve the praise they get. Thanks GuatzEssen

Vegan food worth a Michelin star! All extraordinarily tasty, great combinations, and the fact that nearly all of it comes from the restaurant’s own garden makes it even more impressive. The best veggie food we have had in a while and in a very cozy atmosphere. We will be back for sure. Thank you!

Easily one of the most memorable culinary experiences you can have in Tyrol, probably even Austria. The dishes are well balanced, beautiful presented and very delicious. All ingredients are high quality and organic - the vegetables are grown by the chef himself. The atmosphere is cozy, even though the dishes look fancy anyone will feel welcome and cozy in this restaurant. The open kitchen is very inviting and the chef himself will serve you the dishes right to the table. All in all a unforgettable dinner. I recommend you to book a table upfront!

Simply divine 💝. The head cook is completely in his element, and grows the food himself. He made the dishes vegan for us, too 💚. Inventiveness on par with Vanilla Black in London 😻. The decor and service are amazing, too.
