New Downtown Montreal Restaurant From Toqué and Au Pied de Cochon Alum Jean-Sébastien Giguère | Eater Montreal

"I’m looking forward to a new restaurant specializing in local cuisine that will open this spring in the newly minted Humaniti condo on Bleury Street; called h3, it’s led by chef Jean‑Sébastien Giguère (an alum of Toqué!, Au Pied de Cochon and former head of bistro Coureur des Bois and La Cabane du Coureur) and sommelier Hugo Duchesne (winner of the 2020 “Meilleur Sommelier du Québec”). The venture leans heavily on a “homegrown” ethos — talent, furnishings and ingredients sourced from Quebec — and Giguère says he’s focusing on things like “the hen house, our 4,000‑tap maple grove, or our Beloeil greenhouse” to develop self‑sufficiency. Early photos show dishes with a slight Japanese edge, including a vegetable and salmon roll flavored with koji, teriyaki ribs dusted with sesame, and Kamouraska lamb encrusted with nori and topped with garlic scapes." - Valerie Silva

My husband and I went for our 25th wedding anniversary and we couldn’t have been happier with our choice of restaurant. Service was amazing, the food made our mouths tingle with the flavors and textures in each of our dishes. Definitely will be going back!

It’s a very nice setting for a restaurant though the menu is very confusing. Tasters, starters, entrees, small dishes, sides, they’re all the same thing in my opinion. Note you have to build your dish, it’s comes in parts based on how “hungry” you are. The service is very professional though there’s a story told for every dish, highly unnecessary when you want to proceed to eating. Overall all you’re better off with the tasting menu, for the price of “building” your dish which basically comes with nothing unless you add it all. I had the tuna tartar as the entree, which was delicious, the salmon as a main course and the fried mushrooms as a “side”, the salmon was very good, be warned it’s nearly raw and the mushrooms were much too breaded and fried to actually enjoy the mushrooms.

Had a wonderfuull experience dining here for a dinner course. We were touring and had snacked before, so got the 5 course dinner instead of 7. I added the lobster tail and it was absolutely worth it. Every plate of the course was unique and tasted great. The wine pairing was a great experience as well. All the wines had very clean finish, which we did like. The place has great atmosphere overall and the course menu food came out in a timely manner. We had plans afterwards and were able to finish the whole course in an hour and a half. The course menu pricing was fair, and with 4 wine glasses total, the wine pairing classique price was fair as well.

Too bad I can't go higher than 5 stars for the service! Everythinf at h3 was incredible. Warm welcome, seated at the window for a lovely view of the Palais des Congrès. Delicious 5 course tasting menu and we opted in for the 6th course, being lobster (can't say no to that) and we also added in the wagyu sando (it's a must!). We wanted a "clean" evening so opted in for the mocktail pairing, 4 in total. Each were unique in flavour, really blended and complimented the meal. Lastly. The secret surprise for my girlfriend's birthday. Wonderful. Thank you!

Went there for brunch. What a great experience. The bagel was actually toasted crispy. You could taste the crunchiness every bite. The smoked salmon and the cream cheese collaborate well together! It’s very fresh and not fishy at all. The sauce on the salad is well dressed. The duck poutine is so amazing, the meat melted with the cheese in your mouth along with the fries. Will definitely come back again!

Beautiful ambiance and excellent service. My waiter was absolutely lovely. However, my dining experience left much to be desired. I was very excited for one particular appetizer listed on the website under the Tables Gourmandes tasting menu, only to be told that the menu had rotated and the option was no longer available. I would advise to keep the menus updated on the website to avoid this type of disappointment from customers. In lieu of my desired appetizer I ordered a duck confit fried spring roll. This was served on a hard, non-porous rock-like platter. As a result, there was a huge pool of oil accumulating under the food (see the attached photo). I'm normally not difficult and very understanding with kitchens, but this is the first time I had to offer a kind suggestion to the chef at a restaurant because the amount of oil my food was swimming in was simply not acceptable. The waiter was very gracious in receiving my feedback. My main, the chicken ballotine, was good - nice flavour, pretty presentation - but the dish itself fell flat and felt uninspired. It wasn't bad, just not exciting or creative, which is what I was brought to expect based on the restaurant's website. The tiramisu was perhaps my biggest disappointment. I am accustomed to a tiramisu that is light and airy, ladyfingers packed with coffee flavor. I was disappointed to find that this rendition of "tiramisu" was topped with a cream that was thick, dense and pasty - it had clearly been pre-refrigerated. At $7 for a small portion, I expected more. As a Montreal local, I've stayed at this hotel before and I've had breakfast at the restaurant. It was good (not outstanding, but good). With such excellent reviews, I wanted to give the lunch offering a go, especially with the limited edition menu (which ended up being pretty much the same as their regular one...). I was left feeling that the overall experience was quite mediocre and the service and atmosphere were the only redeeming qualities.
