My best meal in a week in Paris. Subtle, enticing flavors, often with a "theme" per course (one of them was even called "celery, celery, celery" :-).)  I don't eat seafood, so that meant I was limited to the 7-course menu - at the end of the meal, although I'd clearly had enough food, I was left hoping for one more delicious course.
The wine pairings are "interesting", with an emphasis on natural wines.  The staff was super helpful and friendly to this non French speaker. Unlimited still or sparkling water is included.
As a singleton, I sat at the bar.  The seats aren't the most comfortable, but it gave me a chance to interact with the wine guy, which was fun.
Highly recommended.  Book ahead - reservations strongly encouraged.
