Completely echo the calls for Michelin.
My fiancee and I recently returned from a trip to France and England. Eating our way through some of the best restaurants in both countries (Two 3-star dinners in Paris, a 3-star dinner in London and two 1-star lunches mixed in along the way) and this restaurant is on par with most of those meals (in some cases exceeding them).
Tucked into a few small rooms on the first floor of the incredible Le Palais Gallien Hotel, our dining room had only two other tables. It was warm, inviting and frankly adorable.
The staff is fantastic, combining top level attentiveness, information and service with a healthy dose of fun (if you want it... we did).
But the food is the star.
We did the 6 courses (or "chapters" as they call them) meal with the cheese supplement.
Our meal was a couple of weeks ago (I try to wait to make sure I still feel the same) so I don't remember every detail.
The Soy cured egg with coconut, curry and brown mushroom was a flavor bomb to start. Combining sweet and salty and umami. This dish did not start timidly.
The "Cucumber" was the second course and was a standout. This is basically a salmon dish with fermented milk. The salmon appears to be a raw preparation, but in fact it's the most gently perfectly cooked piece of fish ever. The tang of the milk with the freshness of the cucumber all played perfectly together.
The John Dory was very good. Served with mushrooms, peas and a few mussels.
The Pigeon was another standout for me. It was various portions of the bird perfectly cooked, glistening with a rich sauce served with (I believe) a little foie gras pastry and a sweet corn puree.
"The Fennel" was a fun and refreshing palate cleanser.
The cheese course was fantastic. A nice addition if you can.
The Cherry was delightful. I believe is was burratta ice cream atop a cherry tartlet served with a non-alcoholic cocktail. (Also it was really nice to not have the strawberry and rhubarb dessert that apparently every restaurant was serving in June).
I'd say that was the perfect ending, but then came a little plate of little confections mixing chocolate and fruit flavors.
Overall, this is an incredible meal, in an incredible setting with a fantastic staff.
