What a culinary experience!! Starting with our head server, Darko and his amazing assistant Domogoi (please excuse the spelling of the names). We were warmly greeted at the door and were so relieved at Domogoi's excellent English because our Croatian is not good at all.
We were first served an amazing couvert to tease our taste buds while we previewed the menu. The couvert consisted of a homemade sourdough bread that complemented the olive oil, which was so good I wanted to drink it alone. But wait! As if that was not enough, it also included a seared tuna bite with two tiny dollops of a pureed citrus fruit topping just to compliment the flavor of the tuna.
Darko made some wonderful wine suggestions to pair with our couvert and appetizers. I had a 2023 Sauvignon Blanc, and my wife had a Rose. For the appetizers, I had an Almond-Smoked Duck Breast. The smoky flavor was a game-changer! My wife had the Ceviche with Seabass. Robert, the owner and head chef, utilizes the method of Ikejima, which dispatches the fish while maintaining the quality of the meat. Robert's attention to every detail is evident in every bite.
We were not quite ready for our entrée so we ordered a course of the Lamb Ragu to share. I'm not eloquent enough to describe how delicious this was with the quality of the lamb paired with the flavors of the sun-dried figs, white wine reduction, parmesan crumbles, and paccherini pasta was next level for sure.
Next, Darko suggested a nice glass of Bontera. A very dry robust red wine made from a blend of Cabernet Sauvignon, Merlot, and Syrah. This went well with my Black Slovenia Pork. The pork is hand sourced from one farmer, which again attests to the quality of food that Robert demands. My wife had the Beef Cheeks a very hearty comfort food.
From start to finish, we had a remarkable experience at Restaurant Mare Trogir. The passion that Robert and his team have for providing nothing less than the absolute best in food and service was our experience, and we are looking forward to our next meal.
