I have travelled the world extensively over 40 years. I ate at all restaurants ranging from pop & mom’s to Michelin three stars. This is my honest review of the restaurant Nigrum in Baden-Baden, Germany. A very successful Michelin-listed restaurant offering a refined fusion of Asian, German, and French influences. Every dish we had was beautifully executed and genuinely delicious. The starter combining salmon with a beef jus stood out for its depth and originality, especially the interplay of flavors with wasabi. The sea bass paired with a kimchi mousse was also particularly interesting and well balanced. We then enjoyed sweetbreads cooked to perfection, served with a sauce that had a well-judged acidity, followed by beef cooked at low temperature with flawless precision and excellent accompaniments. The dessert, combining several flavors and textures, was equally enjoyable and well thought out. The atmosphere is quite dark and distinctive, somewhere between gothic and religious-inspired design, with a beautifully curated interior and a semi-open kitchen at the back of the dining room. Service was very fast, friendly, and efficient throughout the meal. A highly recommendable restaurant for those looking for creative, well-executed cuisine in a unique setting.

We had Nigrum for our new year's eve dinner. The food is amazing and quite innovative. Wine selection is good with helpful staff advising us on the wine pairing. However, the pacing of the meal could be improved. The first few dishes came very fast while the main dish and the dessert was a bit slow. Location is iconic but not so easy to find if you're walking around Baden-Baden.

A wonderful fine dining experience! A special celebration for my daughter, Kate’s Birthday during our stay in Baden-Baden in July 2023. We definitely recommend the restaurant. The service was excellent and waiters very attentive and helpful! We chose the 3 course option at €99 each and had some lovely German red wine to accompany the meal. Some beautiful little extra platters served free too. Overall a memorable night.

The restaurant staff are really helpful and friendly. They suggested local white wine, which has a great smell and texture that we asked if we could buy a drink a whole bottle to take home, and they sold us a new bottle. The dishes have a balanced taste and interesting additions to the main ingredients. The desserts are sprinkled over with Nougat, making it extra crispy and delicate. Plus, they allow you to select the number of dishes in this meal. Overall, I highly recommend this restaurant.

The food is good although some of the dishes need more seasoning and can be a little flat in flavor. The tartar was supposed to be done table side, but wasn't. The service is great and very friendly. The decor seems a little too messy. To get to the restaurant you need to walk up a steep hill, so bring comfortable shoes if you are walking
