I have travelled the world extensively over 40 years. I ate at all restaurants ranging from pop & mom’s to Michelin three stars. This is my honest review of the restaurant Nigrum in Baden-Baden, Germany.
A very successful Michelin-listed restaurant offering a refined fusion of Asian, German, and French influences.
Every dish we had was beautifully executed and genuinely delicious. The starter combining salmon with a beef jus stood out for its depth and originality, especially the interplay of flavors with wasabi. The sea bass paired with a kimchi mousse was also particularly interesting and well balanced.
We then enjoyed sweetbreads cooked to perfection, served with a sauce that had a well-judged acidity, followed by beef cooked at low temperature with flawless precision and excellent accompaniments. The dessert, combining several flavors and textures, was equally enjoyable and well thought out.
The atmosphere is quite dark and distinctive, somewhere between gothic and religious-inspired design, with a beautifully curated interior and a semi-open kitchen at the back of the dining room. Service was very fast, friendly, and efficient throughout the meal.
A highly recommendable restaurant for those looking for creative, well-executed cuisine in a unique setting.
