"The restaurant of Hotel Castelbrac is named after the boat of Commander Charcot, a famous polar explorer. Born in Dinan, chef Julien Hennote has also explored other culinary universes, from the French Riviera to Polynesia. His cooking is testament to his fondness for produce of the local terroir and for sustainable coastal fishing (such as hand-dived scallops and abalone, lobster and seaweed) – demonstrating his respect for resources. His ambitious and elegant dishes abound with flavour; the desserts are wickedly decadent. Our meal started off well with some excellent cocktails but then was mixed. The bread and butter was not enjoyable as the butter was rock hard and the bread cold and flavourless. The amuse buche lacked the flavour impact you would normally expect from the first bites at a Michelin restaurant. The next few dishes were enjoyable but the finishing desert of rhubarb was disappointing. The Petit fours to finish was mixed which really summed up the whole meal. Overall, I think this could be a great restaurant with a few improvements but I can't say I would dine here again if it was the same menu.

Absolutely no reason not to! Located in a boutique 5 stars hotel in Dinard (Brittany near St Malo), you’ll enjoy a luxurious setting, service, view and of course more importantly, food. So what’s interesting here? First the the setting ( view and service). 5 stars (and especially palaces) are always a notch above in terms of service. The brigade de salle is very well managed and efficient. Big fan of the plates. Fits perfectly the theme. And then the food. There’s some competition around, but for the price point, it’s a steal. It’s quite “gourmand “ (flavorsome), still balanced with a little touch of fun. Of course I’m more a specialist of the Parisian scene where I did them all but judging by what I tried in Brittany ( a dozen) this one is a very solid one star. If you can get a table, go and enjoy a great lunch.

Called in by chance, the waiter was very attentive and fitted me in with no hassle, where two other restaurants I tried wouldn't accept walk-ins. Superb lobster linguine, good selection of cheeses. The local artisan beer was a better choice than wine. Highly recommended.

Seafood and creative dishes! Highly recommend! The cosy dining rooms leads onto a panoramic terrace overlooking the pirate town of St Malo. The sommeliers are willing to recommend some wine to company with the dishes. I felt warm and respect from the staff. It’s a terrific place to have a business lunch or family vacation.

Too full of themselves. Cancelled the booking and refused to host visitors, though we arrived on time. Service is very pretentious and simply arrogant, XVIII century mentality. Cannot recommend and will not come back.

Terrible. You do not know what food you are ordering ! “It’s a surprise”. Yes the sardines were a surprise…and awful ! No one at our table took more than 1 bite. Awful wine selection… this experience cause us to cancel reservations at Michelin starred restaurants for the next 2 nights. “It’s a surprise” is the same as “ leftovers in the fridge “. Arrogance beyond belief. Other diners in t shirts… we will never trust Michelin guide again.
