"This restaurant occupies the third floor of a building designed by Jan Wils, who also designed the Olympic Stadium, across the street. No doubt the architect would have been proud of this American-style urban brasserie, which feels both grand and intimate. The cocktail bar is certainly on trend, and the cuisine never fails to impress – especially its use of fire. A charcoal grill, traditional ovens… Here, they cook with brute force. But rest assured: with chef Joris Bijdendijk and team, you are in safe hands. Think turbot seared on a Japanese konro grill, then brushed with fish butter before serving. This is accompanied by a creamy fish egg jus with delicate nuances of mango, codium salad, soy jelly and a passion fruit sauce. Bold flavours are given extra depth with a sure hand. The fabulous brown chicken stock enhanced with onion oil is another tempting option. The chefs also have plenty of vegetarian recipes up their sleeves and enjoy playing around with spices and contrasts. Guaranteed to whet the appetite!" - Michelin Inspector

My bf quite liked it. I absolutely did not. Such a posh disappointment. We booked during what appeared to be an influencer event which for a 1 star restaurant should happen outside traditional evenings because the attention of the managers was clearly more on the show delivered to influencers rather than on the real customers. Gault&Millau zegt “nog meer gastvrijheid… Chef Thomas Val regeert met rust en overzicht”. Rust zeker. Overzicht dat zou ik niet zeggen. The chef seems unfortunately to have become a chief marketing officer instead of a 1 star restaurant chef and barely did nothing in the kitchen during the whole evening (except scrolling on his mobile to like some Instagram posts and doing PR with the influencers and smiling to the sexy ones). Food was good, rather strong tastes, cookings on point, some interesting dishes, nothing phenomenal. Unfortunately influence marketing won’t save them for long. 16,5 euro for a watery Aperol Spritz :/ Please follow a cocktail masterclass… we had to ask for bread because they forgot it, cutlery was missing, dessert was frightening, portions were small, 35 minutes before the first dish… Such a disappointment. Staff is cool and brave and do what they can to compensate the jaded chef.

The first stop on my ‘Joris Bijdendijk Restaurant Tour’ in Amsterdam (sometimes business trips can be a real treat) was Restaurant Wils, and wow! What a sensational treat Joris, Tomas Val, Tanja Yabra (what am amazing dessert) and the amazing kitchen team conjured up. Fresh, creative flavour combinations, some of which I had never experienced before, simply world class, and I had the best view of this great team. Add to that a sensational non-alcoholic accompaniment and wonderful service, and I was even allowed to go straight into the kitchen to watch one of the courses being prepared 🥰 Many thanks to Joris, Thomas and the team for this extraordinary evening of indulgence.

Menu was a bit pricey for what was served on the chefs menu. Also no amuse for a 6 course menu? Food was a good standard but no special dishes. One dish (runner bean/almond) was too bland and one note. Service tried to upsell a cheese board but they had less cheeses since some were sold out. It felt a bit stingy. 6.5/10 overall. We had high expectations but left slightly disappointed. Not an experience worth repeating.

Beautiful food experience at Wils with exciting flavors and textures. Food is amazing, service is impeccable and the setting with the view on the kitchen, the Olympic stadium and their lovely rooftop garden is just lovely. Highly recommend taking a little tour of their garden to see and smell the flowers and herbs they incorporate into their dishes. All in all, a wonderful evening!

Heres a short and sweet review. Restaurant is LEGIT!! Was welcomed with a nice Kombucha and a stuffed artichoke. I arrived an hour early and was seated, lucky me. Food was amazing, staff was great and their open kitchen was well kept and very clean! I will be back there for sure!

We had our company Christmas dinner here and it was superb. I felt the food was slightly lacking in portion size, but the wine was the best part of the experience, absolutely spectacular wine pairings and knowledgeable servers as well.

Wils was fantastic! A great group of young international chefs putting on a masterful showing of culinary skill. Service was attentive and warm, food options were generous and the wine options were plentiful. Seating at the chefs table was entertaining and highly recommended! Watching them grill and prep all the dishes was a fun experience. We opted for a la carte as opposed to the tasting menu and it was great! We had a great Cab Sav, sweetbread dish, fantastic steak and really good pork dish with a chimichurri sauce! Overall, really good experience and highly recommended to anyone in Amsterdam.
