"This welcoming restaurant with a contemporary feel and occupying what was once a shop stands out for its decidedly informal ambience, along with an open kitchen surrounded by a dining counter. The menu, with its heavy focus on sharing, features fusion dishes such as charcoal-grilled chicken with Chinese cabbage and a “Genoveva” dressing; millet and bull’s beef “tosta”; and mackerel with grapes and “gazpachuelo”), all of which offer a combination of Peruvian and Asian flavours, but always centred around seasonal Galician ingredients. Most Memorable Meal of the Year This restaurant truly went above and beyond. Despite needing to leave quickly, the staff and chef ensured we received all our dishes promptly without sacrificing quality. The sommelier was exceptional, and every dish was a masterpiece with perfectly balanced portions. The aubergine dish, in particular, was unforgettable—I’ll be dreaming about it for a long time! If you’re visiting this region, this spot is an absolute must.

Unfortunately, we only took a few pictures. Each dish was better than the previous one. The food was fun and tasty. All the dishes had some fun Asian/Peruvian twist to them. Definitely worth a try if you're a bit tired of the traditional Galician dishes. Price wise was pretty standard for a chef's choice menu, though some may say it's a big high for Galician standard. I personally think it's worth every penny considering the quality/creativity of the food.

An excellent food expericence. Siting at the bar watching the chefs prepare mouth watering meals is a joy in itself. Their attention to detail is superb. We had the Chefs Selection This changes with the availability of quality produce. This is the best meal we ever had. A must in Santiago

Blown away. Every dish was better than the other. Sit at the bar for the best views! Dined alone & was able to try alot of dishes ordered as 1/2 portions. Top 3: Xuret (OMG) Tosta de millo y Toro Taleguila de rape (dumplings) Not to be missed when in Santiago

After several years in Santiago, this is the best dinner we have had in the city! Also a rare gem in terms of striking a good balance between vegetables and fresher elements, and animal foods - most places here really lack the former! The service was great. Well worth the prices! The only thing we were missing a bit was some more info about the products and where they come from.

This was the best restaurant I have been to whilst in Portugal and Spain. The passion of the Maître d and the skill of the chefs, provided a great experience. We left the selection of dishes in their hands and were rewarded with a range of combinations, with unique flavours. I highly recommend Gaio for anyone who is looking for a meal that challenges, but satisfies the senses.
