"A restaurant with a refined decor in which you can enjoy a Japanese dining experience to the full thanks to chef Daniel Lomana’s frequent visits to Japan to train and to develop his technique further, skills that can you enjoy at close quarters by taking a seat at the bar or at one of its adjoining tables. His focus is on Japanese fusion cuisine that includes interesting à la carte dishes (hamachi sashimi, amberjack with KUMA ceviche, sea bass nigiri, fried aubergines with a white sesame vinaigrette etc), plus a recommended tasting menu. Don’t leave without trying one of KUMA’s mochi rice cakes!" - Michelin Inspector

The tasting menu is a true delight: top-quality produce, carefully curated flavors, and impeccable presentation. The atmosphere is good, and the service is fine. They also have a good selection of sparkling wines.

Had lunch at this Michelin recommended Japanese restaurant in Bilbao. Incredible! The sushi is extremely fresh and those ingredients really shine here! The menu is relatively simple (no maki rolls here), but the nigiri, tartare, tempura is so delicious! We had the tasting menu and each plate was better than the next. The tuna tartare was seriously one of the best I've had and surprisingly the tempura fried eggplant was spectacular! On top of that, the service was perfection (very attentive) and the owners were lovely. Definitely would recommend this restaurant 100%!

Some of the best Japanese food I’ve ever had the pleasure of eating. Prepared to perfection. Service is very attentive and competent, good pace and suggestions for wine pairings were exquisite. I would highly recommend this restaurant. Price point is very reasonable (particularly also on wines). Will definitely go back.

Tuna was of good quality, especially the tartar. Everything else was not particularly memorable. The wakami salad they serve was not good nor correctly done. We also ordered multiple items and they didn’t have enough fish so we had to cancel half our order. I also agree with the comments about the service as it was all over the place

The best place in town, very high quality food. Nicely decorated plates, good location and atmosphere. To see chef cooking in front of you- is another touch of excellence. Sashimi pieces- just wow, sushi rolls- super rich and wasabi made by chef is heaven! Excellent service and attention. To be booked very much in advance! Can’t wait to come back!!

I'd say we enjoy going out to eat and discover good places. And we've both traveled enough to distinguish the good from the not so good places. The experience we had at Kuma was, however, hands-down phenomenal. The place has a soothing and quiet interior. Service was very attentive, knowledgeable and kind, never obtrusive or negligent. We felt really welcome from the first minute. And the food: Awesome little bites - we opted for the tasting menu that was carefully selected by our host. Many tastebud explosions, fresh and local ingredients and creations and in the end a very satisfying quantity-quality experience were exceptional. We are extremely grateful that we found this gem. If you can: go there. If we come back to Bilbao, we will certainly not miss the opportunity to return.

Amazing Japanese fusion cuisine. We sat at the bar because we could see the chefs preparing everything. The service was amazing and they had staff speaking English to explain the menu , because with the QR you only get a Spanish version and the printed one is pre covid. Highly recommend to book in advance Our favorites were the tuna tartar with the truffle and egg and the lobster nigiri

For me this should be more than 1 Sole or most truly deserve a star, if not a biband. A truly amazing meal. The true fusion of cuisines, rather than a more timid approach of just alternating basque Vs Japanese dishes, was really impressive. Every dish is genuinely inventive in it's construction and everything comes together; the concept, quality of ingredients, service, interior and pacing. Particular highlights: sea bass sashimi in bilbaina sauce, squid, tuna tartar and the mochi cheesecake. My only possible question could be on the rice which, whilst not to our own personal preference, may well have been intentional given all elements of the meal felt intentional. I really could not give this anything less than 10/10. Exceptional.
