We made a reservation the day before visiting, and went on a Monday night. Jose Maria's is a beautiful and good sized venue. Great atmosphere. The waiter's detected my struggles with speaking Spanish and gave us English menus and conversed with us without issue. Staff were very friendly. We ordered a soup dish (1 portion) and said we would share it. They kindly split it into two bowls. The main dish was the suckling pig. The waiter brought it out and theatrically carved it jnto six portions using a dinner plate to carve it. The dish tasted amazing. Suckling pig is a specialty in this region of Spain, and Jose Maria's serve and amazing dish. I'd go back and highly recommend it to other visitors.

Phoned to reserve on the day, as online only for future reservations...very pleasant on phone and very welcoming on arrival. Really tasty, moist pork (suckling pig) for main course. Sommelier gave me good advice, and I opted for a local 2022 white which was superb. No real criticism, but I feel waiters (in most restaurants) feel awkward with a single diner, and as they weren't very attentive, I poured my own wine. Lovely authentic decor and good quality food. Would definitely recommend ..very handy to the plaza mayor and cathedral. Price reflective of the chosen wine, not the food which was reasonable .

Absolutely the best meal we had in Spain! The suckling pig was incredibly tender, juicy, and perfectly cooked—truly a standout dish. The ham was delicious, and the croquetas de jamón were creamy and full of flavor. The judiones caldo was rich and comforting—an amazing traditional dish. The sweet ponche de Segovia was delicious and refreshing, Service was warm and attentive, and the atmosphere beautifully combined tradition with comfort. A must-visit in Segovia—worth the trip on its own! Many don't know but Segovia is a beautiful small town.

Wonderful restaurant in Segovia. I have been here twice, once with my friends and then with my partner at the second time. The main cuisine is the pork, cut by traditional dish. Then traditionally they would smash the dish into the floor. Quite interesting culture. The taste was great and great source!!

Set in beautiful Segovia. Food does not disappoint. Their suckling pig is a must have dish. A bit heavy even for a 1/4 size dish, but delicious. the black pudding was really very savory and the white bean stew with sausages extremely smooth and fine.

Chose this place to have dinner with friends as I heard they have a good cocchinillo. So why not give this place a try. Reservation: very recommended to do in advance as they tend to be all booked up quick. But the only part that they are “strict” on is the timing you arrive for your reservation. You cannot arrive too early or even early like 5mins you need to be there on the dot. Like 7:30pm reservation, be there at 7:30pm not 7:25pm not 7:29pm but 7:30pm… well we arrived 5mins before and were told to walk around and comeback at 7:30pm. Ok lets move on to the food. Food ordered: Croqueta Iberico Seasonal summer salad - it was fresh and crispy, they will let you dress it on your own with balsamic or olive oil or both to your preference Gambas aljillo - this is one of my favourite tapas. It was cooked and seasoned perfectly. It was served sizzling hot. If you like prawns/shrimp, this is a dish to go. Seabass - beware of small bones. Tasted quite bland and cost 22 Euros for that portion. Nothing much to say about the dish. And of course the main event, the cocchinillo. - cost 32 Euros PER PERSON. we only ordered for 2 since we got other dishes we ordered. They will bring the whole cocchinillo to you to show it and you may take pictures of it but when you thought it was yours, youre mistaken, its actually gonna be divided with other tables as one whole cocchinillo is said to be for 6 persons.. well if you are very hungry or a big eater then yeah but for us, a taste of it to try is enough. After dividing it, they lay it on your table and puts a ladle of broth which was quite salty but tasty, goes well with the salad we got.

Visiting Segovia without having the Roasted Suckling Pig would not be a complete experience, and Jose Maria’s Restaurant would be the place to have it. You’d have to do some research on their menu offerings and same Spanish knowledge would be advantageous. Must order would be the Cochinillo Asado or roast suckling pig. Crispy skin, moist and succulent flesh and an unctuous gravy (ask for more gravy to mop up with bread). Highly Recommended. The house special blood sausage (Morcilla) is Highly recommended as well. Without any mineral taste and fried until crispy, the sausages contain rice as well, making them light and tasty. Even if you’re stuffed after a heavy meal, don’t leave without trying the Ponche Segovia with ice cream. A light and sweet cake served in a toffee sauce with ice cream - heavenly. Highly Recommended.

This was my first time trying this sensational dish Suckling pig or "Lechon". It was phenomenal. The meat was super soft as you can see in the video, but the skin was very crisp. This was a fine dining experience and they have lots of wine options as well. I enjoyed it very much.

Visiting from Florida and Wales. This was truly refreshing culinary experience with very professional friendly service by L. Raul. We shared the Ensalada Siglo 21 amongst 4 adults. Was an experience of a salad! Also shared three portions of Cochinillo Asado and had a wonderful late lunch washed down with 3 bottles of wine, and finalized with two delicious desserts. Their menu is very extensive. The dining room is very classy inside. Truly a high-end experience at a reasonable price. Thanks Raul & the Jose Maria team.

Made a reservation ahead of time, and there were no issues with getting seated. They give you a complimentary dish of mini toast with bread/jam to get started. I got the cochinillo (roast suckling pig), and my boyfriend got the pulpo. The cochinillo was incredible!! So tender and juicy! The meat was sitting in delicious juice, so every bite was heaven. The pulpo was disappointing though. It was the driest pulpo I've ever had. We got the ponche de Segovia for dessert, which was solid.

The roasted suckling pig didn't disappoint. The skin was crispy and meat was tender and moist. At €30, you get a healthy portion. Even though it's delicious, It's a lot of pork to consume for one. I would get more variety for the table to try different items. Interior is very upscale and modern. Service was very good. I would suggest making reservations. I emailed restaurant the morning of and they responded within 5 minutes and was able to fit us in. We all agree the pork lived up to its billing. It's definitely a must try.

The restaurant had a nice ambience. The waiter accommodated us by ordering a whole suckling pig (6-person portion) to share among 8 girls. The skin is very crispy, and the meat is tender and moist. We especially enjoy the "show" when the chef come to our table and chop the pig into equal size portions using ceramic white plates. A great experience while in Segovia.

Best conchillo in la plaza mayor! Or say people say... honestly, pork is pork and it's all good to me, but we had to try this place out since it came highly recommended and had a gang of people waiting outside! Sunday in Segovia is kind of bustling. Apparently a few years ago it was dead, but now it's a weekend spot for people escaping Madrid and/or tourists visiting the Roman Aqueducts and the Alcázar! Quite a feee gars and everyone sells conchillo and poncho segoviano. I really like this sport :/m-) and I think the family that established this was extremely well respected in this community. We know Spain (especially Madrid) loves pork! And conchillo is a speciality. It's basically a young suckling/ pig (less than 15 days old) and roasted to crispy perfection! It's served with bread and some au jus. It's basically carnitas. At this spot you can dine in OR like us.. order at the front bar with the other zillion patrons, and try to find some book, cranny, ledge to lost up with your food. Yes - you may have to stand while you drink sangria and eat tapas ! I'd also like to recommend the paella for the sheer fact it was SOLD OUT by the time we got there. Other eats include : calamari (side is some mayo stuff ... ugh, what's with this love of mayo in Europe??)

Appetizers we had the liver and bread that's on the house which was really good! We also had the cured salmon on bread which was amazing! Dessert was the cheesecake which was tasty, pretty, and overall just delicious. Ok, I will be the first to tell you that the cochinillo is good. It is a tender, fully roasted pig, which is very tasty. However, I don't believe it lives up to the hypee. Come here to experience this experience - it also isn't that expensive so why not! But it won't be the best thing you've eaten in Spain.

Located in the heart of Segovias really bustling downtown area, its known for its suckling pig. Suckling pig is a big deal in this part of the country and if you come here you have to try it- nope you gotta put politics and food thoughts all away! I tried it - it's amazingly delish - but for my meal, I went for the pork medallions instead. Mostly because They weren't looking back at me while eating! We were a group of nearly 50 and we took over a large dining room. Service was outstanding anyway but truly noteworthy with ALL of us! Food was nicely prepared and presented. The medallions were superbly prepared and seasoned and the veggies were crazy fresh. Perfect portions too. The house red wine was bottomless and a nice accompaniment to my meal. I don't think anyone left hungry or disappointed.

While the place is packed in a bit touristy, their famous suckling pig is definitely a reason to come and visit. Highly recommend making a reservation in advance through texting them on WhatsApp, which makes things a lot easier. We ordered the suckling pig for one instead of the entire tasting menu, knowing that we're probably not going to be able to finish it, and I have to say the dish for one is really fit for two so I'm glad we made that decision. Also got a regional dish, made of tripe, snout, and shank. Definitely an interesting dish, but I would not recommend this for the faint of heart. Much appreciate how their menu was marked clearly for allergens, and was able to accommodate for a gluten-free meal, including gluten-free baguette's. At the end, I was even able to get a very tasty gluten-free cake which they called the tart, and it was quite good. Look forward to coming back with more friends next time, preferably six of us, so we can get an entire pig to ourselves.

This place is a beautiful representation of the food and culture of Segovia. If you ever happen to be in the region, stop in to get some vino (wine) and calamares (fried squid). But this restaurant like many others in the region, is known for its Conchillo! Which is roasted suckling pig. It's so juicy with crispy skin it literally falls off the bone. To make things better they serve it in the juices leftover from the roast. All you need with this dish is the side of pan (bread) that it comes with. Remember to not eat too much and this is Tapas. You still have a lot of walking to do in the beautiful City of Segovia to see the Alcázar Castle, Roman Aqueduct, gothic churches, cobblestone streets/alleys etc.

This place came highly recommended to us. People told us that the day trip to Segovia would not be complete if we did not stop for lunch at Meson De Jose Maria. Our friends were so adamant that they even called ahead and made reservations and it did not disappoint. Starting from the fact that this is a restaurant nestled just off the plaza mayor of Segovia and the walk to it was so romantic. When you arrive it looks like one of those old institution restaurants / bars. There were more people standing around the bar than sitting in our seating area. Thats because the wine is the not so secret highlight of this restaurant. Their house wine, Autor, made at their own winery is delicious, but do yourself a favor and upgrade to Pago De Carraovejas. This wine is so good that it became our official wine for the rest of the trip In Spain. We brought back home 3 bottles of Autor and 2 bottles Carraovejas. In case you are wondering both are red blends. Ok now on to the main highlight of the meal the "cochinillo" or suckling pig. The meat is so soft and tender that they can cut the pig into pieces with a plate. They just push the plate right through the meat. Crispy skin and tender moist meat. It's making my mouth water just remembering it.

Very delicious! If you plan to dine here, I would make a reservation because it tends to get quite busy. Segovia is famous for its roasted suckling pig, and the portions here are very large, juicy, and tasty. I would recommend taking a look at their "creative new dishes" section of the menu. If you plan to split the bill, let the waiters know ahead of time -- we did not and he had quite an attitude about it. Additionally, the waiters can be forgetful and the food takes a while to come out. However, it was a nice dining experience overall. I would definitely recommend dining here if you are in the area. For reference: a single person's portion is €27.00 and if you get an appetizer or a salad, the single portion is good enough to feed two.

I was super stoked to try José María's suckling pig. Maybe it was my excitement, but I left kinda disappointed. The pig is super tender on the inside. It practically melts in your mouth. The skin is perfectly crisp. Although it wasn't bad, its not my cup of tea. It has an overwhelming fatty taste that turns my stomach. We accompanied our meal with patatas a lo pobre, (potatoes thinly cut and served with onions and peppers) and salad, both of which were just okay. We also ordered sopa catalana (garlic based broth with egg, ham,and rustic bread) which I had a lot of expectations for and was very underwhelmed. My husband who in no manner is trained in the art of cooking made one ten time better. By and large, we paid 73 Euro per Couple for a meal that by no means was even memorable. (Pig portion is €25)

I've read the reviews and I just finished a mid-day meal here and I have to say that anyone who gives this restaurant less than 5 stars should have their brain examined. This is the best meal that I have had in a long while in any country. Absolutely spectacular! I had the baked suckling pig. Wow! That's all I can say. If you come to Segovia and you don't eat here, thump yourself on the head.

Worth the hype. The cochinillo which is their highlight dish was amazing. Warning: you will feel twinges of guilt as you relish the melting pork knowing that you are enjoying a baby suckling pig more than you should be. Crochettes were amazing (and stuffed with beets!) and one order of the pig was more than enough for two people! Quick tip: if you are short on time in Segovia (we had a 4 pm bus and we only had an hour to dine) you can order the full menu at the bar and just stand and eat. When we arrived, there was a 30 minute wait to be seated so we opted to eat at the bar to save time. Still a wonderful experience!

After checking out the 5800 5 stars review from Tripadvisor, we decided to come by to try first hand what's the deal. It was located right near the famous Cathedral, lines were very long just to get in even on a Thursday night at 6, standing right at the bar, we ordered Vermouth to open our appetite and there were lots of tapas to choose from. We ordered the fried pork Empanada's of tuna and wings, we further asked for a bottle of red wine, it was finger licking!!!

Pompous waitstaff...towards us and other foreigners in the restaurant. Really took away from the experience...had to ask for everything and even after food was delivered, by the back staff, our origins waiter never returned. Never to refill our waters or wine... 2 stars because the food was really tasty and of course the signature pork dish was very well cooked and taste, texture and presentation were awesome.

This is a well deserved for star restaurant in the gorgeous city of Segovia. The service is impeccable and the food is fantastic. They are known for roasted baby pigs raised just for the restaurant as a farm to table location. Succulent and so moist. There baby lamb chops are great and made just right. Home made wine, Autor is rich and full bodied. Make reservations, they are always full.

The Cochinillo asado de Segovia is super delicious. The meat is very tender and the skin is super crispy! I felt like I died and gone to heaven with this dish!!! We are at the restaurant side and ordered the cochinillo, some tapas and wine which were all superb! A must place to eat in Segovia, Spain!

We tried here because of good reviews on TripAdvisor and they are one of the certified conichillo asado dish restaurants. Micheal and I ordered some tapas and one conichillo. The dried lamb salad wowed us. It was very good. The meat was so tender and the vinegrett dressing was perfect and refreshing. We were not impressed by the conichillo though. It was just not our taste. They brought us with incorrect check with almost 100 euro more but when I pointed it they corrected it immediately and apologized. It must be a mistake, so not a bug deal. Segovia was a beautiful town.

I am judicious with five star ratings. This is a really nicely operated establishment. If you're not into eating fetal pig, don't worry. There, are many other excellent options on the menu. The "rustic" soup is a phenomenal "appetizer" and it comes out, as warned, very hot. This is more appropriately shared between two people because the serving size is massive. We had excellent seafood: salmon and octopus for the main course. I would be tempted to give a fifth star if I were to return and be similarly well fed and treated.

Americans beware! Don't be fooled by the term "suckling pig". We Americans automatically think pig roast meaning lots of pork meat. Do not order this disgusting dish at this restaurant! As it turns out, Spain's version of "suckling pig" is the skin of the pig attached to about a 1/2" layer of disgusting fat. That's it! No meat included in this dish at all? Basically they eat what we cut off and throw away. It's a nice restaurant but don't order pig in Spain. Order a steak or burger or tapas. Love the town and the Roman aquaduct.

This place is arguably the best restaurant in Segovia. Lots of tourists, but also locals come to this place to try the staple - cochonillo asado - roasted suckling pig. If you (like me) are into some tender roasted pork, come to this place. This is a white table cloth experience, with traditional Spanish waiters and traditional Spanish dishes. There are also some twists in some of the dishes. We had a group of seven and were expecting to wait a long time for seating at lunch with no reservations. Luckily we were seated with no wait, as they have a sister restaurant in the back that accommodates for when the main dining room is full (which I presume is always). We ordered the pig as the main dish, and some other meats, such as cod (was Easter, so fish is always a good pick), and shrimp. Some salads and potato dishes were also ordered family style to the table. Everything we ordered was excellent, preparation and presentation were spot on. Service was impeccable and at the end of the meal, the chef (Jose Maria) went to the tables to greet everyone. Overall, a great experience. If you want to top a day trip to the aqueducts and old ruins in Segovia with great food, come to Jose Maria.

Service was good. Also, food was great. You go there to eat pork only. The salads are, well, just salads. Now, the other (and perhaps the main) reason you go there is to have the experience of a certified "asador" (José María) come with a sharp edge plate and slice a full roasted pig and serve it to you. It is definitely worth a visit. In addition, when I went we were a group of 17 people and they had a very comfortable space on the basement. Great!

THE worst food I had in Segovia and to emphasis how bad they were, all of Madrid. I ordered the beef steak with fries. Steak was over cooked, bland and chewy. My steak was disgusting. The fries were soggy. It's not fresh. All they did is take leftover fries and reheat in oven. It does not have that crisp the fresh fries would have. My friend ordered the pig with fries. Again, fries were soggy and probably leftover from prior days. The pig was decent but I would not recommend this place. Seems like all they do is reheat old food and serve. Food took forever to come out, and waiter wasn't helpful.

Admittedly, I was grouchy when I wrote my first review. All day long we'd been going places that were supposed to be open but were closed. Maybe it's a cultural thing. Or maybe it's a language thing. Anyway, food at this place was very good. I've been traveling for several weeks now. The food here did nothing to help me waistline. White monogrammed tablecloths and napkins. Beautiful handles on the knives. Well dressed waiters. So why only four stars? First waiter we had was grouchy. Spoke to us in rapid Spanish and said no one there spoke any English. Glared at us angrily when we couldn't decide what table we wanted to sit at. Maybe he'd been told about my one star review. We were on time for our reservation, first ones in the restaurant. So we didn't need a reservation, which is what I called to find out. Seems like in a service oriented business you'd want whoever answers the phone to speak a few words in several languages. They got my name wrong on the reservation. Normally, who cares. Not sure how Andrew Cohen turns into Henrick? In this case, Segovia has a history of anti-semitism. The entire Jewish population was evicted. And that after some had sacrificed their lives along with the rest of the townsfolk defending the area...or maybe it was helping to conquer other areas. So I'm left wondering, was my name changed on the reservation on purpose? Anyway, without a word, we got another waiter. Much friendlier. And at least tried to speak to us in English. We speak a little Spanish but not very quickly. Then, we got charged for a double portion of bread. Four pieces for four euros? I guess I should have complained.

The food was great, especially the suckling pig, which is the signature dish. The interior was also very nice. I hope the waiter could smile a little bit more...made us feel like we did something wrong the whole time...

When Husband was fourteen years old, he saw a video in Spanish class that showed this restaurant. He swore to himself, "Someday, I will eat that piglet!" This summer, more than twenty years later, he did...and he was not disappointed. The thing to realize about Jose Maria's is that it is mainly about the spectacle. If you don't allow yourself to be caught up in it, you may walk away unhappy. But if, like us, you came to see the show as well as eat the food, you will most likely be thrilled. We were a party of ten, so we had a huge round table on which to display all of our courses coming out, and two servers to spoil us. Add to that several bottles of wine, and by the time Jose Maria came down, donned his huge gold pig-chopping medallion, and set to work hacking our pig up with a dinner plate, we were all giddy. It was a fantastic experience, and the food was equally good. We all had the cochinillo asado (duh), with starters of salad, sweetbreads, and tempura vegetables. It was difficult not to fill up on the starters--the tuna in the salad was so gorgeous that I wouldn't allow a single chunk to be cleared from the table; the kidneys were rich and tender and plentiful, and many of us had second and third helpings; the veggies were fresh and firm. The main event though--the piglet--cannot be equaled. I have read several reviews from diners who did not like the richness of the meat and the sauce, it being so beautifully fatty, but I was ready to pour that fat sauce right down my gullet, it was so wonderful. It is difficult to stick with utensils at this point, as the meat is so tender that you just want to get in there with your fingers and pull out the choice bits. I have only one complaint about our experience. As the piglet is sliced into six pieces, there are many different cuts to go around. Husband was smart enough to ask the waiter for a face piece. Friend got stuck with the ribs, which, while still tasty, had a much chewier skin, so she wasn't sure why we were all blissed out over the crispy skin until I started sharing mine with her. I got ass...tail and all. I couldn't say which cut is the best one, but they are not all equal. So, was our meal worth the three-hour drive? Absolutely. Wish granted, Husband...where to next?

Make sure you make the reservation !! The Brazuelo de Cordero, baby lamb, is so good!! Try the starter "croquetas caseras con patatas paja" fired cheese ball!

We came here based on Rick Steve's recommendation. I was surprised we were not asked where we wanted to sit, and felt like we were placed in the very back building of the restaurant where it was more modern but sterile. I wouldn't have known that I was in Segovia, let alone Spain. There were five of us and we ordered two suckling pig servings along with three salads. Each pig was a portion of a hind quarter with the tail and front quarter with the ear at around 25 euro each. I hate to say that the food was underwhelming and the service was just okay. The meat was tender and the skin thin and crunchy, but maybe it is just my taste buds not appreciating - it's my first time trying Spain's suckling pig, so I can't tell if it's the way it's supposed to taste. It's a little on the gamy side. The salads were pretty, and the taste was okay. Just didn't feel the food and service warranted it to be around 120 euro.

I can't comment that this is the "best" in Segovia but the suckling pig was pretty darn good. Crispy skin and soft meat. Only issue I had was hard to tell what a serving was (27 EU each). 2 servings seems to have gotten us maybe 1/3 or 1/4 of a pig. Kinda pricey but very, very good.

Just okay, over priced. Lots of good restaurants in this area and the pig was good but really oily. Would not recommend, it attracts only tourists not locals.

Cochinillo Asada suckling pig was better than Botin(skin less red but thin and crispier) Lamb was not spectacular,just adequate. Service excellent with free lentil soup(small portions)

If you go to Spain you must go to José Maria. One of the best restaurants in all of Spain. El Cochinito was indeed my favorite. The ham croquetas are amazing as well.

Excellent lunch. Make reservations in advance. Super packed. Huge plates. Excellent amuse ouch's that had some kind in cream cheese. We normally do not like cream cheese. Delicious suckling pig - seemed to be their specialty. Vegetarian plates like salads. Artichoke flowers were huge as well. Cheese cake was alright.

One of the best restaurant I have eaten in Spain! Ordered the suckling pig, salmon, sirloin steak and octopus salad. Everything was really good apart from the food being a little too salty (guess flavor here tend to be stronger in salt so we are good with it). Best of all, even the house wine was good. If ever have the chance to visit Segovia, visit this. Definitely will not regret.

This place is famous for roasted suckling pig. It is highly recommended by reviewers and our hotel. My partner ordered the traditional roasted suckling pig and a salad. I was going to order a lamb which I had wanted to but had not have an opportunity after in Spain for more than a week. Oh well, after reading the description of one of the lamb dishes, I just could not order it. It was baby lamb removed before it was born, I believe. So I had wild partridge with mushroom sauce instead. While waiting for our order, we were treated a cold melon drink which was the best dish for the evening. The pig was ok, but the taste was not very impressive in my opinion. On the other hand my wild partridge was really tasty with mushroom sauce. The salad my partner ordered was so big, so he shared with me. We still could not finish it. In Spain everywhere we went they all had very fresh salad, they all had great tasting tomatoes. Love it! The service was great, until a 20+ party arrived. Then it slowed. It took forever for us to get our bill to pay. The overall rating should be 3.5.

I have planned food trips up and down the coasts of the US, so why not cross the Atlantic to try cochinillo, the roast suckling pig. THE area is the town of Segovia and then THE place is Jose Maria. When you review the price on the menu, it is for a single serving portion... the pig is so tender, the waiters will divide the oinker with a plate (if you happen to be the fortunate to get the presenation, if not, you will see it eventually around you). The pig is divided into 6 portions, in half and then hind leg, center, front leg. The house red is a good Ribero del Duero, everyone had it on their table. Remember folks eat very late in Spain, the bar up front was hopping w locals enjoying tapas and beer, while the dining room itself was only a third full at 10pm. BTW I am not dinging a star on this since my bf loved this place, but for 2 days afterwards I was just short of full on food poisoning (sans tossing my cookies)... it might be hard to pin down, but my stomach rolls everytime I think about this piglet.. I would not suggest downing the golden fat broth they spoon atop your portion if your body says "WTF, you can not drink pure liquid cholesterol!".
