Skina

"Real gems are often hidden in unusual and rather obscure places, but rarely in such a tiny venue as this! Tucked away in one the narrow streets of Marbella's old town, this restaurant has only four tables. Marcos Granda, its famous owner and sommelier, justifies the small size of the place perfectly, saying, "What Skina has to offer is huge."The young chef from Toledo, Mario Cachinero, proposes creative and sincere cuisine that strives to put a new spin on traditional Andalusian recipes and that he describes as being "all about harmonies and contrasts". However, to achieve this, the raw ingredients (wild Galician fish caught by traditional methods, premium oils from Jaén produced in mountain olive groves, select cuts of meat etc) are meticulously and skilfully put to work in order to bring out even more of their flavour." - Michelin Inspector

*Intimate Fine Dining at Its Best* Our experience at this 2 Michelin star seafood restaurant was truly unforgettable. From the moment we walked in, we felt incredibly welcome and valued. What made our evening truly special was having the entire restaurant to ourselves, creating an intimate and exclusive atmosphere that allowed us to fully immerse ourselves in the culinary journey. The highlight of the evening was witnessing the chefs at work, watching them skillfully prepare each dish with precision and care. This behind-the-scenes look added an extra layer of appreciation for the artistry and craftsmanship that went into every bite. The seafood was exquisite, with each dish showcasing the chef's creativity and expertise. Every bite was a masterclass in flavors, textures, and presentation. The service was impeccable, with our every need attended to with warmth and professionalism. This dining experience was more than just a meal; it was a celebration of fine cuisine, impeccable service, and personalized attention. If you're looking for a special night out that feels like a private affair, look no further. We left feeling sated, impressed, and already planning our next visit.

We chose the chef’s tasting menu with the wine pairing. The opening non-alcoholic aperitif and snack in the separate wine room was a nice touch. Then we moved into the chef’s kitchen where you stand at an island and are presented with another set of appetizers. They were mushroom themed with plenty of shaved truffle varieties. Also a unique part of the experience as this happens before you are seated at your actual table. The courses and pairings are served at well timed intervals. Positives: filling meal, amuse bouche was 5 or 6 bites, dishes really intimated art and were delicious, wine pairing had a wide range of Spanish varietals. Cons: Upon being seated we told the server of a shrimp allergy and he repeated each 3 subsequent visits to the table that this should’ve been communicated prior; we understood this and said we could’ve gone the a la carte route if modifications could not be made. Instead the chefs were able to accommodate, but the server kept reiterating how we should’ve let them know - reinforcing a feeling of guilt. After the bread course and crumbs were quite literally all over the table, the restaurant did not remove these (despite having asked) until before the dessert course. Attentiveness seemed to taper off toward the end of the meal as the staff could be seen chatting amongst themselves. Overall the food was incredible, presentation was stunning, and it’s worth a visit.

We arrived at 8:15pm for our 8:30pm booking and was told a big group of 11 guests was still having their amuse bouche at the kitchen so we had to wait our turn. While waiting two separate staffs apologised for the wait and asked if we wanted aperitif so we agreed to two glasses of champagne (which they billed us for later). Finally at 8:30pm they told us they're ready and brought us in to the kitchen, only that the chef was totally not ready and still busy putting our amuse bouche together. After standing there for 15 minutes the food was finally ready but then the chef introduced one course to contain mushroom. We're surprised since we made it clear one of us does not eat mushrooms, squid, and octopus when making the reservation, and no one checked with us for food allergies before we were served food - a very standard procedure especially for michelin-starred restaurants. When I asked the chef he seemed clueless and had to go ask other chefs, then he just served me the rest of the amuse bouche without that course. I asked someone who I believe is the manager and he got very defensive saying they are aware of our food allergies and that "the whole team had been briefed before dinner service". Odd how he chose to raise his voice at me as if it was my fault?! He didn't have an answer as to why that chef obviously didn't know and just stormed off to yell to him. You would think as a manager at a Michelin-starred restaurant reining in one's temper is a minimum requirement. When we sat down, another round of amuse bouche came and this time one of them contained squid... We were just flabbergasted. Asking them again the server argued this was "ink squid" and that it was not squid. We just got tired of arguing and I gave my dish to my husband. The rest of the food was ok but not amazing especially considering it's supposed to be a two star establishment - nothing really shined through. Maybe we were prejudiced by the unhappy start to the meal who knows. I've never had to argue with staff at a michelin starred restaurant before. Overall, lousy experience with average food priced above-average paired with abysmal service. Worst Michelin restaurant I've been to among the over 300 stars I've had.

A fantastic end-to-end culinary experience. Very intimate ambiance, personalized and very attentive service. Intense flavours. Great gastronomical interpretation of Andalucian produce with genuinely creative touches. In my opinion it is at a 3 stars level.

Perfect entrance and great hospitality, the journey of this meal was absolutely stunning … really embracing the southerner Spanish cousins at its finest. Food delicious and elegant wine pairings. Definitely deserves a third star!!

The tiniest restaurant ant I have ever been to but the most exclusive cuisine. We went for the seasonal menu which was a six course menu compromising of dishes made from carefully picked seasonal ingredients combined harmoniously to create a beautiful delicious art which is appealing to the eye as well. Very attentive and professional personnel. For a special occasion not a bad choice.

A truly lovely meal and experience. Skina is a tiny restaurant just off a small alleyway lined with pretty flowers. Atmosphere in the restaurant was a little subdued, perhaps needs the background music lifting up just a little, as with only 3 tables of 2 people there, we found ourselves talking very quietly. Crockery and glassware were just beautiful. Service was immaculate. The food and wine choices were outstanding. We had the 3 course meal paired with wines, but this had all kinds of little extras which were a delight: amuse-bouche, appetisers, bread with 4 types of butter and olive oil, extra little one bite morsels to accompany the courses and a fabulous little box of petit-fours at the end. There is no doubt that Skina is very expensive but we thoroughly enjoyed our evening and would highly recommend.
