Andalusia: Restaurants and Hotels with Arab Influences

"Tohqa is a restaurant in El Puerto de Santa María, Cádiz, housed in a former convent by the Guadalete River. Chef Eduardo Pérez, together with his brother Juan José, presents contemporary Andalusian cuisine that draws on the historical influences of Al-Andalus. The menu features the use of traditional ingredients and techniques, blending savory and sweet flavors." - The MICHELIN Guide

Tohqa

"A property with lots of history (it was formally a convent, then a bar) which is now popular as a restaurant (it occupies the premises of the erstwhile El Arriete). The space has a new look and its own personality, featuring a rustic-contemporary ambience, including a particularly pleasant internal patio. Eduardo and Juan José Pérez, the two brothers who run Tohqa (Eduardo is in charge of the kitchen, while Juan is the sommelier and runs the dining room) are passionate about Andalucía’s grilled dishes (Eduardo calls himself the “fire chef”), with a permanent focus on locally sourced ingredients (eel, tuna, prawns, cuttlefish etc) although some produce comes from the family farm run by his father in El Saucejo (in the province of Seville). On his menus (Anafe and Tohqa), Eduardo uses words such as seed, fire, salt and path to explain the restaurant’s true essence, what it wants to represent, its surroundings, and the people who have helped it reflect the true meaning of this region." - Michelin Inspector

We visited in October ‘22 and the garden was so beautiful! There were only a few tables being served when we went (lunch time) and we got lots of face time with the chef and his brother. They were both very gracious and wonderful. Food was excellent, the bread was glorious and the squid was oh so perfect! They also had a lot of delicious wine to pair with the dishes. Wow. Must visit and I highly recommend! I hope to visit again in the future.

Visited for dinner on Friday 2nd of February, and we were overwhelmed by the food and the service alike. One of the very few restaurants that succeed at serving top notch world class food, with impressive attentiveness to the origin and quality of the produce, and still feel like a family restaurant, that welcomes you warmly. We had the pleasure of experiencing the service of Juan and Fernando, which was extremely attentive, friendly and proud without being stuffy or formal at all. And we loved how well and enthusiastic they communicated the stories of each dish. The restaurant is beautifully decorated and cosy - we felt at home. The food is both creative and a showcase of simplicity. E.g. the huge white prawns brushed with Iberico fat and nothing else. Other highlights were the tuna heart, squid stew, the bread and Iberico foam with raw prawns, pistachio and tear drop peas. But every dish was extremely high quality, and the Michelin Star is very well deserved, both for the food and for the service that went above and beyond - Juan even made us a complete list of recommendations for the rest of our trip. Be sure not to miss Tohqa - it's worth a trip!

We loved it. Great food in a very laid back atmosphere. We have chosen the 9 course menu and it was great. Staff very friendly. We will definitely return. A must for foodie lovers wanting to experience something different

@Tohqa_ (pronounced Tosca) is an avant-garde restaurant with a menu that changes with the days and with the seasons depending on the availability of produce from their wonderful local suppliers, featured prominently in their social communications and supported by being published on the back of the menu each day. Their focus is totally on provenance of product and where protein is used, ensuring minimal waste. Things appear on their 14 step the menu at Tohqa that you rarely see elsewhere. Highlights included: - razor clams with an escabeche of sea flowers and an perfumed orange blossom gel that sung above it all 🍊 - gouper bone jelly reduction Fig leaf and fresh fire grilled beans - A pair of perfect white Huelva prawns poached in beef fat 💣 - goats milk ice cream with a hidden piece of goats cheese underneath. Freeze dried olives & a sherry reduction 🐐 We paired the meal with an awesome bottle of UBE by @bodegascota45 which transformed with every minute that passed I won't say that every dish wowed us at Tohqa but the ones that did (9/14) were really very impressive. It's a meal that makes you think about natural flavours, how many weird and wonderful textures can come from the land and sea and the mad minds that enable them. Service was excellent and attentive and at €80 for 14 courses, it felt like very good value.

Wow, incredible night out. We finally had a chance to try out Restaurante Toqha and it was amazing. We all went for the full tasting menu, which was 12 plates plus two desserts, along with a local, red vermouth to start and a bottle of Tintilla from Bodegas Luis Perez. It’s a committed night of dining out, but well worth it. Local and unique fish plates, as well as a lot of unique specialities from within Cadiz, Sevilla and Malaga. Some adventurous dishes coupled with lots of unique flavors. On top of that, we had really outstanding service in a gorgeous setting and finished the meal with a coffee from Factoria 77. Highly recommended.

Am amazing experience, innovative Cadiz gastronomy at it's very best. Fish served like you have never had fish served before, wonderful wine recommendations from Isabella, again the very best that Cadiz province has to offer. Fine dining with a modern twist, if you want to try something very innovative, then this is the place to try. Fabulous.

I had the set menu as a surprise from my husband. After 2 hours of constant "eating," I was still hungry. Still very hungry. I felt like every dish was a very small amount of food doused in broth. The one piece of bread was served like it was a holy grail, at about the 4th or 5th plate, and was devoured because I was absolutely starving. I started thinking things were going to pick up, and I was finally going to eat, but it was not to be. I admit the tiny bits of food I got were good tasting, but come on. I didn't eat. The onion for desert was disgusting.
