"Savour Japanese cuisine in this exclusive restaurant bearing the hallmark of famous sommelier Marcos Granda, where the full focus is on enjoying the experience without worrying about the time (“toki” in Japanese). In this intimate and exclusive setting centred around a single sushi bar that is designed to personalise the guest experience to the full (Toki only has six seats!), chef Tadayoshi Teddy Motoa guides us on a magnificent journey through the history and evolution of Japanese cooking. His tasting menu shows us how the preparation of nigiri has changed over time (especially in the preparation of rice). In so doing, he enters into a dialogue with guests through three recipes (one contemporary, one from the 18C, and the third from the 16C) that are the height of delicacy, as well as premium ingredients that will delight the tastebuds. The extensive sake list is an added bonus." - Michelin Inspector

As a one-star Michelin restaurant, it truly lived up to its reputation. The chef brought charm and creativity to each dish, with food that was not only beautifully presented but also bursting with flavor. The service was attentive and knowledgeable, adding to the warm and inviting atmosphere.

An excellent surprise. The meal began with a series of small moments (such as tofu, squid, or octopus) served accompanied by other ingredients that only added to the experience, almost all dishes well-balanced, with some of them lingering in memory. The second part of the meal consisted of nigiris, where I highlight the fact that three types of seasonings were used in the rice, which paired very well with the different types of fish, and the quality of the fish itself. Good desserts. Exclusive ambiance (the place only has 6 seats) yet relaxed enough to focus on what matters: the food.

Timeless Culinary Elegance: A Michelin-Worthy Experience at Toki, Madrid Toki, meaning "time" in Japanese, offers an exclusive culinary experience in the heart of Madrid, adjacent to Alonso Martinez tube station. The restaurant's location on an elegant street, coupled with its NY speakeasy ambiance, sets the stage for a unique dining venture. With only six spots at the counter, the intimate setting ensures a personalized and magical experience. Upon arrival, the warm welcome sets the tone for the evening as guests are guided to their tables. The set menu, meticulously prepared in front of diners, showcases a variety of dishes using high-quality ingredients with thoughtful pairings. Each plate comes with an incredible level of detail and an introduction, contributing to the overall immersive experience. The dessert is a standout, adding a delightful conclusion to the culinary journey. The service at Toki is exemplary, reaching top-notch standards that warrant, at the very least, a Michelin star. While the price may be on the higher side compared to other options in Madrid, the experience is deemed entirely worthwhile. The authenticity of the Japanese cuisine creates a sensation akin to being in Tokyo. For those seeking an authentic Japanese culinary adventure in a small, exclusive setting, Toki comes highly recommended. Advance booking is strongly advised to secure a spot at this remarkable establishment.

Sushi is sushi, you might think, until you experience Chef Tadayoshi Motoa’s creation. The tuna is a meaty umami bomb, unlike any other I’ve tasted. The squid and shrimp catch you off guard with their sweetness and unexpectedly tender texture. Each ingredient is meticulously prepared, with concealed cuts, aging processes, and traditional marination techniques, carefully tailored to bring out the best flavors unique to each variety. I felt a profound sense of respect and awe for the chef and their craftsmanship. I think I just went to Japan and back 😃. They don’t exaggerate when they say they take you on a culinary time travel of sushi. The chef skillfully presents a series of thoughtfully prepared bites, one after another, ensuring a delightful and authentic dining experience. It’s absolutely worth your time, your pennies and your taste buds. With their menu changing every season, make sure to go savor their seasonal delicacies now!

Atmosphere: 6 seats behind a sushi bar, one serving a night. Do not be late, everyone starts dinner at the same time. A very relaxing space and the service is super-kind. Food: The 20+ plates long experience goes from tasty warm and cold starters to a long line of nigiris boasting 3 different types of sushi rice, carefully selected wide range of protein and some masterful knife work from the chef. Miso soup was full-on with flavour, deep, sweet-savory, and a bit funky, YUM. Finished with a matcha dessert. Drinks: Accompanying the incredible food you have a whole wine bible - we went for Ossian Capitel in the end which was just perfect. Followed that with some delicious sake. Overall: Highly recommended. Thank you chef Tadayoshi and the whole team for a fantastic culinary journey in your omakase! We'll be back, hopefully soon :)

Incredible omakase experience in Madrid. A sushi bar with only 6 seats, it's a delightful experience. Unlike other sushi places in Madrid, it's quite pure and focuses on impeccable execution. The nigiris are the absolute star of the show. All of them were excellent. Even one like squid, which I normally don't enjoy as much, was tender and tasty. The attention to the temperature and type of rice was very unique compared to even other high-end sushi places. The chef communicates mostly in English, but is nice and eager to explain things in detail. All in all, a can't miss experience.

Chef Teddy is one of the kindest and most talented chefs I’ve met. My experience here was outstanding, and I’m so glad I chose to visit while in Madrid. I’ve tried many omakase places, but this one truly stands out for its price, quality, exceptional service, creative flavor combinations, and beautiful atmosphere. The yuzu sake pairing was also excellent, adding a refreshing touch to each course. A memorable dining experience from start to finish!
