"This small, centrally located restaurant, that likes to view itself as a passageway (Tsuro in Japanese) between Jerez and Japan, is dominated by a bar at which the chef (the only employee) can be seen hard at work. This intense culinary experience reveals many of the secrets of Japanese cuisine, from the rice ceremony and its preparation to the importance of knife sharpening. An amazing evening with the best sushi ever. Intensely personal and warm welcome and conversation. Great opportunity to learn about the fresh produce, the mariage of sushi and sherry and the technique used to make the best sushi. It’s a must. Reserve early!

The best Japanese experience in Cadiz. It should be a must in your visit even there is not a typical Spanish cuisine. Victor, the chef, creates a real Andalusian environment with all the dinner guest that you are going to share your experience at the same time, you are going to learn to much regarding fish cutting, Japanese tradition,…,etc. Don’t wait for it!

I do not recommend this place. We arrived starving to the restaurant about 37 minutes before it closed 5pm. There was plenty of free spaces at the bar. The man in charge said he wouldn’t serve us because we had no reservation. I said even a simple meal of anything he had on hand would be fine! He wouldn’t budge. He was unfriendly. And arrogant.

Viktor explains perfectly, and is also a master in facilitating the dialogue without speaking himself too much. Unfortunately he has spoiled our sushi expectations. Nothing we try elsewhere comes close.

L'esperienza che si vive al ristorante Tsuro, dello chef Víctor Jaén Mateos, è davvero illuminante, come un faro che si accende nella notte tenebrosa dei risto-jap "all you can eat". Sono dovuto andare in Spagna (per il Giappone ci attrezzeremo in futuro!) per avvertire i miei primi, reali brividi con la cucina giapponese. Un menù tutto a discrezione dello chef, otto soli posti a sedere di fronte al suo bancone, un'atmosfera che più confidenziale e colloquiale non si potrebbe... In tutto questo, lo chef che lavora, spiega, grattugia, plasma, mette sul fuoco, fiammeggia e, soprattutto, chiarisce, momento dopo momento, la filosofia del sushi nigiri, quella pallottolina di riso bollito con sopra una fettina di pesce crudo che, comprato in un supermercato, ti pare di plastica e ti chiedi... "ma che avrà mai di così eccezionale?". Ecco, al ristorante Tsuro comprendi che cosa ha di così eccezionale! Perché i nigiri creati dalle mani di Victor ti tatuavano nell'anima gli ideogrammi della felicità, della gioia, della goduria. A ogni (ahimè minuscola) portata, avrei voluto gettarmi ai suoi piedi e implorarlo di darmene ancora, a qualsiasi prezzo. A proposito di prezzo: costa 80 euro a testa, bevande escluse, che puoi prendere liberamente dai vari frigoriferi nel locale. Non ti aspettare un'abbuffata: non sei lì per quello. Sei lì per godere di qualcosa che il tuo palato non ha ancora provato, a meno che tu non sia andato direttamente in Giappone o in un altro grande ristorante di sushi. Esperienza lunga (la serata è durata 4 ore, dalle 20 alle 24), cosa da tenere in conto se si è stanchi. Ma per altri nigiri ci sarei stato anche altre quattro ore!
