Home flavors and distant horizons: Toni Boban’s K.užina, Split

"In the historic city center I found K.užina (Kitchen), the restaurant of young chef Toni Boban that opened just over a year ago and seats about sixty. Born in Malaysia to Croatian parents and returned to Croatia at seven, Boban blends the traditional flavors he remembers from his grandmother with Japanese and broader Eastern influences, always prioritizing fresh, local products. Because the restaurant sits roughly a hundred yards from Split’s fish market (Peškarija), much of the menu centers on seafood: everything from shrimp, cod, mussels and anchovies to seasonal catches such as John Dory, sea bream, scorpion fish, red snapper and red mullet. Signature and standout dishes include Amberjack with Tomato Jam; White Tomato Risotto made with tomato consommé and cooked in onion soup with basil and tomato jam; beef tartare with potatoes and anchovies; Risotto with Confit Lemon; and a Beetroot Dessert with chocolate, lime and raspberries. The house specialty that has won over patrons is Octopus and lemon: Boban sources octopus from Pjero Mladinić of Brač, then oven-cooks and grills it, glazing it with a yakitori-style sauce and confit lemon, serving it with purple carrot and seasoning of pepper, garlic and house-made vinegar, accompanied by potato croquettes the chef says “we always ate as children.” Boban works with a brigade of six in the kitchen (seventeen staff in total), aiming to keep dishes rooted in local culinary foundations while giving them a creative, modern twist." - Sarah Scaparone

Externally it may go unnoticed, but the interior features elegant details, and the courtyard has a large, tranquil outdoor patio. The restaurant offers a wide à la carte selection, capable of satisfying all tastes. The small, open kitchen is run by a talented chef whose offerings are fresh and thoughtful, with dishes that combine regional and modern influences. The presentation is pleasing, the portions are generous, and the value for money is attractive. Creative and delicious tasting menu! After a week of fairly repetitive traditional Croatian food (which is really good but can get a bit boring - first world complaint for sure!), this is just what we were hoping for. Every bite was delicious and surprising. The duck main course was heavenly - tender and flavorful. The plates and presentation were also notably beautiful. The music was - as others said - kind of odd and didn’t seem to fit the space. And service was a tad slow but we got there early so I don’t think all the staff was in yet. Overall I highly recommend.

What a disappointment. I was really looking forward to trying this restaurant whilst in Split, as it has a Michelin Bib Gourmand - but I think it might be time for the inspectors to visit again! The service was slow and the waiter seemed stressed. In took 35 minutes from ordering to our starters arriving (cold starters too). We then waited 45 minutes for our main course, and another 12 minutes after finishing for the waiter to notice we were done and clear our table. After waiting for almost 15 mins to see if we'd be offered a dessert menu, more drinks or perhaps coffee, we flagged down a waiter who was clearing and emptying tables (rather than paying attention to the customers still there) and asked for the bill. The food itself was good - although they could have been more imaginative when it came to dietary requirements. The substitutes were lacking. The vibe was interesting. They had a DJ which was good, if not a bit unexpected for a restaurant. But it meant that plenty of passers by were stopping and asking for drinks, and being turned away (or in a few cases completely ignored) by staff because it's a restaurant rather than a bar. Overall K.uzina has the potential to be great, but the service hugely let it down.

Outstanding!!! Each dish better than the last. Our server was knowledgeable, and really added to our experience with some great recommendations. Special shout out to the sea bass carpaccio and the tomato risotto. So happy we spent our night on their beautiful terrace- absolutely will be back.

Honestly don't think it deserves the Michilin bib, and by no means is a "good value". All of the food was good, but only 1 dish was truly amazing, others fell a little flat flavour. We did the 6 course tasting menu + bottle of wine + 2 more drinks. The whole thing took 4 hours, with VERY long waits between courses, sometimes 30 minutes sitting with empty plates and no interaction for the next one. I think the most disappointing dish was the duck.o love duck but It came out cold and was clearly sitting on a table for a very long time before being served to us. The server was very nice but overall for the price, I wouldn't recommend. Came to 220 EUR.

Overall - we enjoyed ourselves. Food was execllent. Would recommend the Burrata, the Octopus, the Rooster ragu pasta. Swordfish Ceviche was of a different style than we were used to but delicious. Atmosphere was pretty good - music was a bit strange (catering to Western tourists I guess? Hearing Barbie Girl at dinner in a nice restaurant is always a bit funny…) Did feel bad for our server who basically had the entire restaurant by himself - which led to slow service. He was super nice and did his best - but they likely need at least one or two more staff to have people avoid waiting to order more drinks/food etc. Still - would bring your patience and go - was a great spot!

Enjoyed this place a lot. Very informative and friendly staff. Four of us took all the courses to share and that was a great decision, as everything was very delicious and interesting to try. Would suggest to do that as well. For our company, sitting outside was more enjoyable, but inside also looks really nice.

We enjoyed a very good lunch here with a group of 5. We booked ahead because a Michelin bip gourmand is probably busy, and it was. We decided to leave the 6 course tasting for what it is (didn't feel like 2 desserts) and took 3 courses a la carte. Asides from the unlucky draw on the bad oysters, which we had to return in exchange for another dish, all was really on point. Lots of fish of course: sea bass and red peppers, swordfish ceviche, amber jack and a grilled whole sea bass for 2. (The latter came with enough to feed three!) The steak tartare and beef tartare with truffles were very good as well, love that they have a green egg in the kitchen. The Lemon shrimp risotto was also great in taste, although for a starter it's quite large. The waiter let us taste some local white wines before we honed in on the Stina Posip and ended up drinking several because it was so good! Kudos for the waiter who ran 24 couverts alone! Kudos to the kitchen crew for being so creative. Also loved the 90s eurodance music!

The duck, chocolate cherry dessert and ceviche were all great! Tartar / octopus were too tart for us, personally. Service was quite slow but overall would recommend.
