MICHELIN Green Star Community in Argentina: Inspiring Actions Across the Country

"In a region where meat usually rules, this bodega restaurant takes a different path: roughly 80% of the menu is vegetable-based. Chef Juan Ventureyra has spent a decade cultivating three gardens (at Riccitelli, and larger plots in Maipú and Pedriel) and amassing seeds from more than 380 species, yielding dozens of tomato varieties, over ten types of aubergine, multicolored chiles, pumpkins and squash, greens, herbs, string beans, watermelon, Jerusalem artichoke, salicornia, peaches, and more. Wild plants are equally important: after hiring two biologists to survey the estate for a year, he now cooks with 16 edible native species and chooses not just which ingredient, but which part—fruit, flower, leaf, stem, seed, or root—to best express it." - The MICHELIN Guide

"At the Riccitelli Bistró, they have gone one step further to bring together fine cuisine, an appreciation of wine, and sustainability. The Matias Riccitelli Wines bodega in Luján de Cuyo has created this restaurant, built out of remodelled containers and “planted” amid old vineyards, to enhance its wine experience. Chef Juan Ventureyra’s cuisine, which can be sampled in an informal dining room or on the lower terrace, explores Mendoza’s culinary roots on two menus (Mendoza and Argentina, both of which include a visit to the winery) with a strong focus on native, locally sourced produce and ingredients mainly from its own gardens. Vegetables play a starring role here, hence the vegetarian influence in its “farm to table” concept (in summer, it grows over 90 varieties of tomato from seed), enhanced by adding protein to its dishes. We particularly enjoyed the snacks here as well as the dish entitled “Espinal” (duck, cauliflower, apricot and mustard)." - Michelin Inspector

How Mendoza, Argentina Became a Rising Wellness Hotspot | Vogue

"A funky track by the Argentine rock band Spaghetti Western was playing as I swirled a glass of the crisp Kung Fu pét-nat—its strawberry and peach notes and citrusy kick setting the tone for an eight-course tasting masterminded by chef Juan Ventureyra at this winery and restaurant by winemaker Matías Riccitelli. Set on the outskirts of Mendoza in Luján de Cuyo, it’s gaining notoriety as the region’s leading natural winery, an otherworldly place where natural cultivation takes precedence in the wine and the food; I was surrounded by fields of organic tomatoes, artichokes, greens, and herbs that showed up beautifully in the dishes. By the sixth course—a skirt steak paired with a fruity malbec—my buzz was blissful and silvery shadows shifted over the towering snowcapped Andes; it was the freshest, most delicious tasting menu I had during my two-week galivant through Argentina." - Michaela Trimble

Mendoza, Argentina: a journey exploring its best cuisine and wines

"In the MICHELIN Green Star bistró’s garden, Juan Ventureyra sources the vegetables that animate his recipes, an ideal setting to savor a Viñas Extremas Sauvignon Blanc with mineral aromas from vines growing at 1,700 meters above sea level." - The MICHELIN Guide

Argentina: Chef Sebastián Weigandt’s Favourite Haunts in Mendoza

"What Juan Ventureyra is doing here is really amazing: a true trailblazer who put vegetables at the forefront seven years ago, he’s earned a MICHELIN Green Star for a cuisine served via two tasting menus (six or eight courses) with dishes like duck with peach and beetroot, and alubia beans with almonds, aubergines, corn, and peperonata; based on the ‘from the soil to the table’ concept and surrounded by its own vegetable garden against the Andes, it’s one of the few places I visit four or five times a year, and we’ve even exchanged ingredients thanks to our shared love of vegetables." - The MICHELIN Guide

The best food I have ever tasted! The staff was very sweet and helpful. Beautiful surroundings - you feel like you are sitting in the middle of the wine yard and look at the beautiful snow covered Andes Mountains.

Amazing experience from the very start! We got to know more about the wine production and what I liked the most about this part was that you can see a totally different way that they have of producing their wines. Moving on we went up for lunch with an astonishing mountain view and the exquisite dishes by Juan Ventureyra. Worth mentioning that the chef has been awarded with a Michelin star as well as a green star. I would recommend this place to everyone!!

Google
Great place for food and wines (don't believe they do glasses) but we did the 6 course food tasting menu and it was great! My favorite was the asada steak seared so well. It was pretty quiet on the early side during the weekday but got busier as the lunch service went on but should still reserve. Great setting and atmosphere as well and really enjoyed the wine!

The best meal we had in Argentina so far! Had a wonderful lunch surrounded by a beautiful vineyard and garden. We did 6 course lunch and every dish was so delicious and beautifully presented, made with fresh ingredients. Really enjoyed their wines as well. Service was friendly and excellent. Definitely deserve the Michelin Green Star and worth a visit if you are in Mendoza.

Google
Most impressive food and atmosphere we had in Mendoza. Definitely put Riccitelli on your agenda Fresh, local, good wines. And I hate to say this, like, maybe you don't go to a super fancy restaurant for this but... Best Bread Ever (maybe 2nd best but that's not the point). It's crazy good. I'd do lunch there and expect to hang out for awhile. If I had this restaurant locally, it would be on my regular list.

What a beautiful place! We had a wonderful lunch and wine testing in with a stunning view. Before lunch one of the guys explained and answer all our questions about the wine production from this family winery. Definitely one of the best places to visit due to the quality of the food, wine and outdoor experience.

Google
Absolutely, yes! We loved our long lunch, of 6 courses with wine pairing. A beautiful location, very tasty and original dishes, and the wine was on point. Some of the best braised beef I’ve ever had. Oh and the tomatoes!! Go!

We had lovely lunch at Riccitelli Bodega. We had the 6 course meal. The food was delicious and it was unique experience overall. The staff were very nice and all of them spoke English. The wine was delicious too. We enjoyed the KungFu sparkling wine and house merlot. And they have Michelin star which we didn’t even know. 😎
