"Occupying an old house in the town centre, this restaurant is strongly influenced by the character and ideas of owner-chef Riccardo Bosco, who offers an original mix of traditional Trento cuisine and influences from around the world, including Korean kimchi and Japanese cooking methods such as tataki. A prime example of the latter is one of the restaurant’s signature dishes, namely trout with celeriac purée. Daily specials based on what’s available at the market also feature, while regional wines are to the fore on the wine list." - Michelin Inspector

We had the Ristorante Boivin all to ourselves one night while in town on business. I cannot say enough good things about the place! The staff was friendly and accommodated our group and even showed us how they made their famous strudels. Highly recommended and I wish I could go back!

What a diamond in Levico Terme! Such a friendly, welcoming and competent team, what a humble, personal and heartfelt chef, amazing dishes and wine selection. Self-made, tasteful, local, down to earth, open-minded and lovely. They even made special and amazing vegan options for me. Thank you wholeheartedly to the whole Boivin-team and till soon! Highly recommended.

Loved this! A real gem of a discovery; friendly service and the food was so good. Great setting - looked like a converted wine or cheese cellar or something. Happy to have found it

Such a nice place to have a wonderful dinner! Perfect food, we had soup, entrecôte, papadelle with lamb ragu, three varieties of kid goat with polenta and mixed varieties of deserts. Beautiful place, rustic vault with many eye-catchers

Today was the day of the reopening after a break. A reservation helped to get a table. The decor of the premises is extraordinary, the cash register at the bar in the rearmost room. The menu is fun and the dishes are fine-sized. All in all, I have to subtract one star, because the ravioli weren't as special as advertised on the menu, the service wasn't as attentive as you would expect at this place, the music just didn't fit: Stones and Beatles. It was probably all on the first day after the break and everything has yet to settle in. But four stars are good :-)

Best restaurant in all northern Italy, maybe the entire country. Exceptional value and unbelievable staff. Local cuisine honoring the rich history of northern Italy, focusing on the slow food movement keeping local delicacies alive and well. A must try in the Levico Terme, Dolamite, Trentino area.

I couldn’t love this restaurant more, including the absolutely kind, talented, curious, generous chef, Riccardo. From the start, the setting, in an old lofty cellar, is transporting. Then, the décor! I especially loved the hand embroidered napkins that are placed over the lights as though lamp shades! We ordered the tasting menu because a friend had told me this place was the real deal. And she was right! It was a hit parade, from the fresh goat’s milk ricotta to the cured trout with celeriac salad to the pappardelle with ragu which had the best texture of any pasta I had during my entire trip to Italy. (As I like to say, the pasta talked back between my teeth.) It was a lot of food so come hungry, but having had a few other tasting menus before, it wasn’t as intense and uncomfortably filling as it could have been. The sommelier also knocked it out of the park with wine pairings and my favorite: the storytelling about the wine. This is a meal I won’t soon forget! Go!

The passion and care for what they do in the kitchen is evident in every dish, be it a perfectly cooked main of pork or rabbit, or a primo of pasta with artichoke, or a starter of artichoke salad. Not to mention the desserts: we tried four (two to take away) , with a "bunet" (a chocolate creme caramel Piedmont style) one of the best I've ever tried (and I've tried quite a few) and a mandarine crostata (tart) particularly intense yet light as air. We had a wonderful lunch at Boivin. In the (distant) past, the letdown had been the slow and distracted service, but on this occasion everything went smoothly. Prices are fair for the quality (not only the execution but also the ingredients were top notch). The room is atmospheric.
