"Saporium is the new fine-dining restaurant at the superb Relais Borgo Santo Pietro, an old property where the internal decor demonstrates a rare elegance, especially in the evening when hundreds of candles provide soft lighting and a romantic ambience in the dining room. In fine weather, meals are served under an elegant 13C portico overlooking the garden, with the property’s 100ha grounds and the Valle Serena as a backdrop. Much of the produce used in the cuisine designed by executive chef Hagen and transformed by resident chef Luca Ottogalli into modern, delicate dishes comes from the hotel’s own olive groves, vineyards, orchards and vegetable gardens. The focus here is on seasonal ingredients from this extraordinary region, such as the Borgo’s walnuts which are used in some of the delicious desserts. One of the most beautiful places you can possibly spend your time. Genuinely breathtaking in its beauty. Not only that, but the staff are incredible, the food is excellent - Michelin star level, and the ambiance is second to none. A once in a lifetime location.

Amazing food, presentation, concept - top notch. All was local produce. The place is incredibly beautiful, even though we couldn’t see much of it because we arrived after the sunset. I expected a bit more from wine pairing. The wines were delicious, presented well but somehow they weren’t linked with the food we were served. At least, not in an explanation given by a sommelier. Would be great to hear more about why we are served exactly this wine for this meal. Especially considering the fact the all the dishes were local but all my wines were French. I dare to say we come to Tuscany to try best Italian wines. Especially in a restaurant proudly presenting local food from local sources. For the French wines we can go to France. At some point I asked for local samples and the sommelier kindly brought local wine but again, without an explanation of a specific pairing. Overall, a very good experience.

Wow. What an incredible experience. First, the staff came and greeted us at the gate and gave us a brief tour. Each person who came to out table was professional and welcoming. The grounds and ambiance were exquisite. We chose "The Journey" as our tasting course, and what an interesting and unique journey it was! I highly recommend the 10 wine tasting course to pair as the sommelier has chosen only the best wines from the region which pair perfectly with the courses served. My only regret is not staying at the lovely hotel as we were already booked in Siena - so next time!

I'm very happy that there was the (pre ordered) option for a ( 6 course) vegan menu. The food tastes good (so the regular menu- my partner had- do) and is a cool mix from consistences and side dishes ( for example selfmade kombucha). The vegan risotto was absolutley great. The dishes had a beautiful presentation and the wine pairing were good too. The best of all is the location and the ambience.

Scandalous! We travelled 40 minutes to get there and they didn’t let us in, even though we had a reservation! Worst experience in Tucany!
