Where to Stay and What to See in Umbria, Central Italy’s Best Year-Round Escape | Vogue

"Situated in a 16th-century former inn in Norcia and run by the Bianconi family, whose hospitality roots here date to the mid-19th century, this dining room offers tasting menus by chef Fabio Cappiello that read like a tour of the region; in autumn, that might mean glazed sweetbreads with Jerusalem artichokes, venison carpaccio from the nearby Sibillini Mountains, and trout from the Nera River with beetroot and smoked butter." - Laura May Todd

"Situated in the historic centre of Noto which is slowly returning to life after the earthquake, this restaurant is part of the smart Palazzo Seneca hotel. You pass through a succession of small rooms to get to the elegant Sala del Vespasia, where a female Japanese chef now showcases the best of Umbrian gastronomic delights after many years working in Campania and renowned restaurants elsewhere in Italy. Olive oil, cured hams, lentils, Cannara onions, crayfish and river fish, lamb from the Sibillini mountains and, of course, the excellent local black truffle are used in her creative and occasional complex dishes. Our description would not be complete without mentioning the excellent service and warm, friendly welcome offered by the Bianconi, a long-established family in Norcia’s hotel and restaurant sector." - Michelin Inspector

Where to Eat, Stay, and Play in Umbria—The 'Green Heart of Italy'

"And last but not least, Vespasia, a Michelin-starred pearl hidden inside Palazzo Seneca, a noble residence of the 16th century in Norcia, that serves some truly excellent creative plates."

Overall a good experience though I must say the food quality and flavour is not on par with other 1 Michelin star in Europe. The starters and main courses are decent, but I find the concepts can be less complicated/modern to allow the seasonal produce to shine more. Best dish for me was the lamb 3 ways: executed perfectly with great flavour. Desserts were unfortunately very bland and one dimensional. Service was great and attentive without being intrusive.

A wonderful experience for our 20th wedding anniversary. Laura and the team truly took care of us. The young man serving us made a delicious recommendation of a local sparking wine, so so delicious. We had the Terra menu, where truly tasty food came in abundance. My favourite course was the lamb which had delightful Asian notes. A beautiful restaurant, with beautiful staff and beautiful food, you must dine here.

Masterful modern take on the ingredients most typical for the local cuisine. We had the Land tasting menu and it lived to every expectation and then some. Highly recommended.

We booked this restaurant a week ahead for party of four. City of Norcia has been badly affected by 2016 earthquake, but still remains beautiful and worth seeing and surrounding mountains worth hiking. Hotel and restaurant is located in a heart of Norcia, it's elegant, but still nice and cozy with charming small back garden with a lookout on surrounding fields and hills. Service was very hospitable and friendly. Food was perfectly balanced, made from local, fresh products with Japanese touch of Chef Fumiko Sakai. Very long list of vines, but you can put your self in the hands of Laura - sommelier and she will navigate you safely and find a way to make all party satisfied. As for Michelin star restaurant it has suprisingly homely feeling.

We had the opportunity to dine here upon our arrival in Norcia. This was everything you would expect from a Michelin star restaurant. Excellent food, expertly presented and prepared. Every course a new culinary experience. Highly recommend

My husband and I had dinner twice here in June 2016, before the series of earthquakes in the second semester of 2016 had shaken central Italy specially Umbria. At the time of our visit the Vespasia had 1 star from the Michelin guide. Simply outstanding service and food and wine. In my opinion they seriously deserve a second star by the Michelin guide.

Yelp
Upscale Umbrian Cuisine Located in the Palazzo Seneca Hotel, Ristorante Vespasia is a beautiful and elegant, yet comfortable restaurant in the beautiful village of Norcia. Without question, this is the finest dining in the area. Famous for their local pork recipes, Norcia is something of a culinary epicenter in Italy. Chef Emanuele takes his classical training to this amazing area, creating fantastic upscale dishes without losing the heart of the area's famed country style cuisine. The staff here are fantastic, offering and excellent dining experience every time. Each time I have been here I have tried something different, and have never been disappointed.

Yelp
A true gem in Norcia. Vespasia, in the Palazzo Seneca hotel in Norcia is rustic yet modern. Chef Emanuele has a vision and the skill to perfect it. He takes classic Campania regional recipes and transforms them into pieces of art with local and organic ingredients. We were impressed with every dish we tried for dinner and lunch for the simple and clean, but sophisticated flavors. A fine dining experience you will not forget.
