I made the trip up to RLT Cuisine after following Chef Gilberto’s work for a while and wanting to experience the Food Lab.
Honestly, I loved the whole thing from start to finish. Josue and Gerald were running the show and they completely blew our socks off.
You can really feel how much these guys enjoy what they do, and that energy comes through in everything, not just the food but the whole experience. You can tell they’re genuinely proud to be part of the RLT team and what Chef Gilberto and the crew have created.
The daily menu rotates around whatever’s seasonal and freshest locally, with some produce coming in from their sister farm project too. It gives the chefs the space to really play and create, I thought that was epic.
The food was delicious, thoughtful, beautifully presented, and bursting with flavour. What stood out most was the way they made Guanacaste’s local produce feel exciting and elevated, without losing what it is.
They also did an amazing job curating the evening and making us feel genuinely welcome in such an intimate space. As someone in the same industry, I left feeling inspired and very grateful.
Overall, a super cool experience that I’d recommend to anyone in a heartbeat. Buena vibra chic@s. Keep up the good work and see you next time.
