"In Chapel Hill, Rocks + Acid cultivates an unpretentious atmosphere where wine snobs and poseurs are explicitly not welcome." - Erin Perkins

"A boutique wine shop whose proprietor leads the wine pairings for the Speakcheesy dinners, emphasizing regional matches and terroir. The shop's selections and pairing approach focus on complementing cheeses' flavor complexities, and the team contributes deep product knowledge and enthusiasm to the collaborative events." - Jenn Rice

"Wine lovers have been counting down to this Chapel Hill opening to soak up Paula de Pano’s expertise and sample a carefully curated selection of beautiful wines; the shop is framed as a must-visit for anyone eager to learn about and enjoy thoughtful bottles." - Erin Perkins

"Opened in Southern Village by sommelier Paula de Pano as the culmination of her wine career, this combined wine shop, bar, and classroom highlights terroir-driven, acidity-focused wines while prominently featuring bottles from women-owned wineries and female winemakers. The interior uses sleek blonde wood shelves and minimal decoration to keep attention on the bottles, which are intentionally not organized by region or grape to encourage conversation with de Pano and her staff. Beyond retail and wine-by-the-glass service, a large communal table will host private and public classes — including de Pano’s signature champagne-and-caviar pairing — emphasizing wine education and an inclusive ethos that aims to discourage “wine snobs and poseurs” and welcome everyone from the curious to the savvy. Ten percent of opening-day proceeds (and every first Wednesday of the month) will support Inclusive Therapists, a national BIPOC therapy fund, and the venue will be open Wednesdays through Sundays." - Matt Lardie

"Advanced sommelier Paula de Pano plans to open a shop and bar at 712 Market Street that pushes back against 'wine bro' gatekeeping by sourcing wines from producers committed to sustainability, integrity, and diversity; customers will be able to buy a bottle or a glass and enjoy charcuterie and cheeses." - Erin Perkins
