Rosa is surprisingly fancy for a strip mall cantina on the far north end of Longmont's Main Street (route 287). What looks like it might be an average-sized ordinary local-yokel Mexican joint, the kind you pop in for a quick & cheap tasty meal, is so much more!
The incredibly spacious interior is wonderful, designed with fun swathes of color & decoration like the large bright hot pink wall we were seated next to. The northern bar area is also well done, and even though we were at a table, seeing it made me want to go up there to enjoy another Jalapeño Cucumber Margarita which BTW, had a nice balance of sweet, tart, spice & tequila vegetal notes-- what a killer surprise, as I've had way too many overly cloy or acidic margaritas than I care to count in my days.
We ordered the freshly made guacamole as an appetizer and with a bar set pretty high with my own homemade recipe perfected over literally decades of practice, it unfortunately just barely missed the mark. I know I'm nit-picking here, but it's one of those dishes with a couple of minors tweaks could have been fantastic. Firstly, the presentation was very nice as it was served on a black volcanic rock-looking style dish-- lovely! The avocados were mashed lightly with some chunks left in the mix-- also great! My nits are truly minor, but important. The flavor overall was nice, but pretty darn bland. Another quarter squeeze of fresh lime juice, another pinch or two of salt, and just a bit more finely chopped jalapeños (personally I prefer the Serrano) would have elevated this nice base guac into something special.
My two slightly small-ish barbacoa enchiladas with cheese, refried beans, Spanish rice, mole verde, lettuce, pico de gallo, crema & pickled onions was perfect! I ate every bite, and can't wait to go back. Yes, it's a little pricey here, but I know costs have increased immensely since COVID, and I don't mind paying a little extra for great quality food & drink.
