Delicious! Wonderful presentation, exciting flavors. A surprisingly fresh take on old favorites and introduction to some new. Went on a Wednesday night at 6:30 and the restaurant was doing a very brisk business, so there was a 20-minute wait. It was worth every minute.

I can’t believe it has taken me so long to eat here! All the wonderful things I’ve heard about how delicious the food at Rosa Cantina is true and more. My meal was fresh, complex but not overwhelmingly so, vibrant and sooo good. I also had a virgin Paloma. Excellent. Everyone in my party loved their food. The service was friendly and accommodating, and the space is beautiful and fun. I will be back as soon as possible.

Loved my experience here! The waiter was nice and so understanding with my food allergies and the (gluten free) enchiladas were delicious. Enjoyed a virgin pina colada too, and everything hit the spot!

Wow! I absolutely loved this restaurant! My husband and I talked about it the whole way home. It was recommended on Reddit and I’m so glad we stopped. It was so good my 4 year old mentioned it was better than our Mexican restaurant back home (don’t tell them!). Margaritas? Delicious. Food? Amazing. Service? Top tier. Our waitress was so quick, efficient, and kind. She was super understanding about our 1 year old literally losing his shit. Overall highly recommend and would be eating here all the time if we lived near.

This is a tough review to write as I really had high hopes when I walked through the door; unfortunately the restaurant fell short today. Great atmosphere; however, you may want to bring a light sweater or jacket as it was a bit cold inside. As it was busy, it did take a minute for our server to take our order. I had three different tacos: Tijuana style, barbacoa, and the chicharrón. The chicharrón taco was very salty. So much so that I couldn’t eat it. The Tijuana style taco had tender meat, but no salt. I would’ve added salt; however, there was no salt available on the table. And finally the barbacoa was okay as the meat was overcooked. My mother had the steak fajitas with rice, beans, and a mix of corn and flour tortillas . The steak was cooked nicely and tasted very good. The beans were undercooked, the rice was dry and a bit spicy, and the flour tortillas were not cooked properly. We also ordered the plantains. These were sweet and tasty; probably the best part of today’s meal. Our server Luna was very nice; however, when we told her about our food experience she simply said “sorry”. Nobody from the restaurant came to try and make it right. Two stars for the food is a gift. I would not return to this restaurant based upon today’s performance.

Quite busy, but the service was quick and friendly. I sat at the bar so I wouldn’t keep others waiting. I ordered the Molcajete de Mariscos and had a Michelada de Pacifico—everything was cooked and seasoned to perfection. It’s a small place, but the outdoor seating helps make up for it. Dining outside was really nice. Definitely recommend coming here. I’ll definitely be back!

My husband and I visited for the first time last week and it was amazing! The food, the drinks, the service were all outstanding and we've already started telling family and friends to go! Too loud inside for us old (60) folk. Server was slow. We had our food but no silverware. The Tijuana burrito was good, chipotle enchilada was a little bland. See the note on the photo. $45 for two people with no alcohol is a little high.

Maybe the best Mexican restaurant I've been to outside of Tucson, AZ. Everything was incredible and we'd go back and get the exact same things - the chips and salsas, side of queso, classic margarita, enchiladas, and chicken. It's pretty small so could have a wait

Sat 12:20pm Carolina our server was attentive, gracious and kind. Why started off with a traditional margaritas. A1 for that. The 2 appetizers taquitos de papa, guacamole we really should not have ordered entrees after that, but what the heck that is what leftovers are for. Caroline my sister ordered a chile relleno. Not your home cooked Mexican food for sure. Home cooked Mexican is great, this is jazzed up in a fantastic way. I had the carnitas ohh so good, even had some pork belly. Roll up your sleeves and dig in. Service is so spot on. The entire staff appreciates being able to serve you with a smile.

My partner and I were strongly encouraged to check this place out. It. Was. AMAZING! Everything we tried was incredibly flavorful. I had the Chicken Mole Verde. Not only was it delicious, but since it was a lovely tender grilled chicken with lots of veggies, I'd say it was fairly healthy too; not smothered in cheese like a lot of restaurants do. Also, their salsas are SOOOO YUMMY!! The verde salsa has a great tang and the red salsa has this awesome smoky flavor to it. They were so good I even asked if they sold salsas separately...they DO! Given how extremely busy this place is...the wait was 45 mins...once we were seated, the wait staff did an excellent job; pretty efficient. In terms of ambiance, it was quite loud in there. Again, given how busy they are and how delicious their food is, they could probably do for an upgrade in location.

Wow! What an excellent restaurant! We LOVED their food. I have to say, the best chips and salsas that we've tried in a while! I really enjoyed their grilled romaine salad with chicken(Did you hear me, Grilled ROMAINE LETTUCE!!) My hubby enjoyed 3 tacos; Shrimp, Steak, & Fish! He said they had great flavor! Our waiter Edgar was on top of everything we needed. Love the ambience in this restaurant! Beautiful colors and finishes are well thought out. This restaurant is a must try if you ever find yourself on the north end of Main street in Longmont. Thanks, Rosas!

Possibly the best of best Mexican food in Longmont , exceptional service and food has your tastebuds tingling for more. Friday night was buzzing , they don't take reservations, but we only waited 15 mins for a table and definitely worth the wait. Our server Miguel was very polite and delivered amazing and genuine service. Will definitely be back !!!

Food: Excellent. I had the chips and salsa/guac. The green salsa was delicious. It had a slight tang to it, and tasted fresh. The red salsa was very, very yummy. It was smoky, and not spicy (which is a good thing for babies like me). I love foods with smoky flavors, and this was no exception. It was also nice because the smokiness wasn't overpowering. The guacamole was also good, nothing too special about it, but still executed well. For my entree I had the Barbacoa Enchiladas. First off, the presentation was exquisite. It looked as if every vegetable had been placed by a tweezer. The Spanish rice and beans were delicious. The rice was the perfect texture for me. The barbacoa meat was done very well, and it was not dry. The most amazing thing on this plate, however, was the mole verde. That was so fresh tasting and really elevated the whole dish. Service: I've been here quite a few times now, and I've had a different waiter every time. Each one has been kind and talkative. The food comes out quickly for how busy it is. Ambience: Great. They have a wall on the side of the restaurant with a mural on it and it looks cool. It is usually very busy, so try to sit at a booth to be able to hear one another. Overall: One of the best Mexican restaurants I've been to, with a gourmet take on everything.

The food was amazing, huge variety of really interesting dishes, amazing selection of tequilas and margarita drinks. everything we had was delicious, including what seemed to be house made chips and unusual delicious dips! and the place was really decorated cute!! My first experience at this restaurant was absolutely infuriating. After waiting 15 minutes for an outdoor table, we were finally brought to one, only to find it was shoved awkwardly next to the door, where we'd be bumped by servers all night, and right next to the loud interior we were trying to avoid in the first place. I pointed out a much better table just a few feet away they was quiet, pleasant, and clearly unoccupied. Instead of seating us there, the hostess told us she had to ask the people behind us if they wanted it... because they had a dog. Are you serious? We waited longer. We were next. But instead of being seated like customers who matter, we were made to stand there while she literally asked the guests behind us if they preferred the nicer table--and of course, they took it. She came back and told us, flat-out, that the other party was getting the better table and we weren't. No apology. No explanation. Just "too bad." Why were we treated as second-class customers? Why was a dog given more consideration than two paying humans? And I have to ask: was it because the other party was a pair of white women and I'm Latina? Because that's sure as hell how it felt. The message was loud and clear: some people get priority, and it's not you. This place clearly doesn't respect its customers or believe in basic fairness. I won't be coming back, and I'll be telling everyone I know to avoid this place too. This restaurant is for the dogs!

Rosa Cantina was such a fun find for a late night dinner with friends. My SO and I were visiting friends in Longmont to take a class north of town. We got done around 8PM and needed to find a place to eat that offered dinner past 9PM. Our friends suggested that they take us to Rosa Cantina. I am so glad they did! We were able to be seated right away, which was great. I love that they offer a lot of refrescos options like Horchata and Jamaica. I ordered a Jamaica instead of an alcoholic beverage since I was driving back to North Denver after dinner. My friend ordered an alcoholic beverage that included a paleta. That was probably one of the coolest things I've ever seen! I love seeing creative cocktails. It's absolutely a conversation starter. Now, as far as the menu, there were so many options. I ordered the Pork Belly plate since it sounded the most interesting. I was so curious about the corn tamal that came on the side. I was pleased when my plate came out loaded up with crispy pork belly and a corn tamal, which resembled something like corn bread. The plate had plenty of sauce for the meat and tamal, which was so appreciated. Overall, I would go back to check this place out. We did have a slight issue with our order since part of our order didn't make it to the kitchen, so I'd like to come back and try things like the guac before my meal too!

A much needed lunch stop after driving back to Boulder from Fort Collins. Parking was kinda crazy, but we were able to get a space eventually. Decided to sit outside and had the nicest hostess and waitress. Next time I'd try sitting inside since we encountered a wasp during our visit, but other than that, the outdoor seating area was really nice and peaceful. Ended up ordering the guacamole appetizer that's served with chicharrones--absolute game changer--and the relleno dish. Everything was so delicious! I'm so glad we split an entree, because I was quite full after the appetizer haha. Highly recommend! I'll definitely be returning in the near future.

So many dishes to choose from! I ordered chips and Queso and it was enough for the whole table! I also ordered a divorcinado taco and would suggest ordering 2 of the los tacos . I wish I would have tried another flavor and had 2. I also ordered refried beans on the side and a cola. There was plenty of chips and Queso left over and it was just a bit over $20.00. This place was very busy at lunch time. I noticed they are open till 10P. Parking is a bit limited. The atmosphere was Latino. There is a big bowl of candy to grab one as you leave . I will go back and try a Pork Belly something because it got great reviews. All their dishes are large portions other than the Los Tacos which I suggest ordering a few as there are numerous choices of these . Yummy!!!

As a Californian, I'm always expecting to be underwhelmed when I go to a Mexican place in Colorado that is getting great reviews. But Rosa is the real deal. This was my first trip so I didn't sample much of the menu but I was very happy with the al pastor tacos, which is a pretty big deal. The ceviche trio was one of the best ceviches I've ever had in the states - the right balance of acidity and heat, it reminded me of some of the best I've had in Mexico and Ecuador. The service was prompt and friendly and happily took care of one small mistake. The ambiance and decor was nice - slightly upscale but authentic, a little bit of reggaeton, a mural with Vicente Fernandez and Frida Kahlo, Mexican league soccer on TV, and an impressive tequila selection.

I really like this place, too bad I live in Denver so it's kinda far but I'll definitely come back if I'm in the area. The decor reminds me of classic Spain decor. Our waiter was very friendly and super attentive. I was able to make reservations over the phone for dinner and our table was ready right when we got there. We ordered the ahi tuna tacos for appetizers and they were so delicious. The tuna with the taco and dressing mix was soooo good. We ordered the mango Rita cocktail and that was very well crafted and also delicious. Our main dishes were also very tasty. We got the mole Esperanza and molcajete. Very well plated and delicious. Such a good meal!

Drinks are so tasty and unique!! Their old fashioned is great but the Paloma is a "chef's kiss" The food is good and have a good take on the fidelos, reminds you of childhood! The patio can get pretty loud (people/ music is louder than needs to be) and overstimulating which can be a lot if that bothers a person.

With tons of Mexican options in Longmont, this place stands out as one of the best, if not the best! Great happy hour deals and super friendly staff. From the tacos, ceviches, to the multiple mocahetas everything is spot on and full of amazing flavors! Can't wait to go back again

I wish there was a Rose Cantina near me! From the lady who greeted and seated us to the very end of our visit, everyone and everything was fantastic. My hubby said his camarone BTO was great. Molcajete for one! You get a price break and even more food if ordering it for two. Be careful people! It looks and IS delicious but it is boiling hot so patience is a virtue We also ordered their chips and salsa which was amazing. Their house made chips are crisp and light. Tomatillo and red salsa- perfection. We also ordered one of their special guacamoles that came with chicharrones. Yum! The only thing I would change is to have Pepsi. They offer Coke products. They also have a full bar and drink menu.

I love this place, the food is amazing and the hibiscus margaritas are to die for. The Barbacoa tacos are the bomb! The service is pretty good, sometimes a little scattered, having multiple wait staff come and ask for orders not knowing someone was just there. All in all though, fantastic food and ambiance. And again those hibiscus margaritas are sensational libations.

The service was top notch, seated promptly with a smile, we ordered and received our drinks right away and tacos came our right away hot and delicious! ! You know you're in a good place when the house marg is made with lime juice (the way they should be :-) I had tacos, the skirt steak, pulpo and nopales. They were all AMAZING, some of the best food I have ever had! I was sooooo Satisfied and all for $13... I will make this my go to Mexican food place, the flavors in each of my taco had amazing depth! I am looking forward to going back and trying their chile rellenos. I'll be back...!

We've been out of Texas for a week now and are craving some good Mexican food. Several offerings locally but this one has the highest Yelp reviews. Strip center location but right on the corner with plenty of parking. Five PM and it's already almost full. Beautifully decorated, not your standard Tex-Amex joint. In fact, there was nothing Tex-Mex on the menu. Quickly seated and drink order taken, over 15 types of margaritas and many other drinks and beers too. I had the skinny and the Wife had a three flight margaritas; hibiscus, wild berry and cucumber mint. I tasted all three and thought they were very good as was mine. A note to bartenders, making a drink strong often times ruins the flavor. Mine was this way tonight and I could tell if the pour would have been a little less, the flavor would have been perfect. The menu was amazing, many dishes with familiar ingredients but entirely different presentations. I had the Divorceiados, a chicken and pork enchilada with red and green sauce respectively. Outstanding flavor, duly stuffed with excellent meat and cheese. The red sauce was lighter than a Tex-mex red, better in my opinion. I also tried a single Tijuana Taco: skirt steak. Pickles onions. Cojita cheese, and lime wedge. Wonderful flavor. I was shocked when I realized they do not give chips and salsa when you sit down, you have to order and pay for it. Tried it and was amazed by the blue tortilla chips which I thought were a cheap marketing trick but found them to be rich in flavor, freshly made and fried when ordered and gone in just a few minutes. Served with a red and green sauce, both were excellent and far different from traditional Tex-mex sauces. One other note; the rice and beans I'm so used to and love, were nowhere to be found. Instead they served black beans and rice, cooked together and served together with cherry tomato halves, crispy blue tortilla strips and sour cream. It was superb. Price was about the same as back home so we hit the jackpot with this one.

A year later and can report after numerous trips back that it is still excellent! Hats off to the kitchen staff and management for keeping the food consistently excellent, and the floor staff for doing their best to keep up with a packed house every night!

Stopped by and grabbed a late lunch at this highly rated restaurant, according to Yelp. Opted for patio seating, on a lovely, but hot weekday a few weeks ago. The patio seating has the most uncomfortable chairs that I have ever experienced with the metal rim cutting into my thighs and the concave webbing inducing sciatica pain due to the angle of the seat where my hips were so low relative to my knees. Bad seating and/or wet seating from a wipe down from a cleaning rag without drying it are some pet peeves of mine with dining out. lol. Food was okay, but nothing that I would want to repeat again since it is a drive from Boulder and there are lots of tasty options closer to us than this place. The rellenos were not the kind that I am used to and I wouldn't get them again. Mexican food is like any other ethnic food where individual backgrounds and expectations determine the satisfaction with the cuisine. It is fortunate that everyone likes different regional flavors and presentations or there would unbearable waits to eat at every restaurant. Back in the day I enjoyed dining at La Cocina and Blue Parrot and to this day still crave those less expensive, perhaps less authentic renditions of ethnic foods that were delicious memories, whether or not they would pass muster on the authenticity scale of today.

Rosa is surprisingly fancy for a strip mall cantina on the far north end of Longmont's Main Street (route 287). What looks like it might be an average-sized ordinary local-yokel Mexican joint, the kind you pop in for a quick & cheap tasty meal, is so much more! The incredibly spacious interior is wonderful, designed with fun swathes of color & decoration like the large bright hot pink wall we were seated next to. The northern bar area is also well done, and even though we were at a table, seeing it made me want to go up there to enjoy another Jalapeño Cucumber Margarita which BTW, had a nice balance of sweet, tart, spice & tequila vegetal notes-- what a killer surprise, as I've had way too many overly cloy or acidic margaritas than I care to count in my days. We ordered the freshly made guacamole as an appetizer and with a bar set pretty high with my own homemade recipe perfected over literally decades of practice, it unfortunately just barely missed the mark. I know I'm nit-picking here, but it's one of those dishes with a couple of minors tweaks could have been fantastic. Firstly, the presentation was very nice as it was served on a black volcanic rock-looking style dish-- lovely! The avocados were mashed lightly with some chunks left in the mix-- also great! My nits are truly minor, but important. The flavor overall was nice, but pretty darn bland. Another quarter squeeze of fresh lime juice, another pinch or two of salt, and just a bit more finely chopped jalapeños (personally I prefer the Serrano) would have elevated this nice base guac into something special. My two slightly small-ish barbacoa enchiladas with cheese, refried beans, Spanish rice, mole verde, lettuce, pico de gallo, crema & pickled onions was perfect! I ate every bite, and can't wait to go back. Yes, it's a little pricey here, but I know costs have increased immensely since COVID, and I don't mind paying a little extra for great quality food & drink.

Great low key vibe. I had the spicy guava margarita and it was excellent. I started off with the Raja con questo and would totally recommend that. - enough for two but not many more. A great mix of savory and spicy. With the accompanying sauce it was even better than my expectations. I wasn't too hungry so "only" then had two tacos - the Tijuana style and the pork belly. The former was the better of the two but not by much and I'd recommend both or either. They didn't skimp out but the flavoring was still subtle enough I thought. Why would you go to the nearby Margaritas or Taco Bell when you could have a muuuuch better meal here?

I am so glad we came here. We arrived here on a Saturday about 3pm. They had a few tables, and we were seated quickly. Maybe 2 minutes upon sitting out, the waiter came out with water. I want to say that the glass cups were a huge plus( most mexican restaurants have old plastic cups). He gave us a few minutes to go over the drink selection we decided on the 6margarita flight and a victoria michelada. The michelada was flavorful. But the margaritas are amazing, refreshing, and sweet. Next, we wanted to try a few things we decided on the empanadas de camaron. I was a little surprised that they were made of purple masa,which didn't take away from the flavor the spicy mayo and the oil chili were the perfect addition. We also ordered a callo de acha tostada and a red agua Chile tostada. The red one was good, but the callo de hacha had an amazing flavorful spicy green sauce. The coctel de camaron is good. You get a lot of shrimp. We wanted to try the tacos. We had a tijuana one and a pork belly. The tijuana was my favorite. The meat was cooked perfectly. The addition of the queso fresco was the cherry on top. The pork belly was delicious. The pork was fatty, and the roasted corn was really good. Lastly, we could not leave without trying the desserts we had the flan really good portion creamy and not overly sweet. The tamal de elote was soft, moist, and perfectly flavored. Omg I almost forgot the staff was friendly attentive and helpful.

Fresh, authentic Mexican food. Many Mexican restaurants around just have the run of the mill smothered burritos or enchiladas or the other predictable entrees. This place has dishes like Mole and Posole. I had the Mole Esperanza and really enjoyed the red mole sauce and the fresh sides. Cocktails were very well made with a lot to choose from. One in our group did not like the smoky flavor of the Mule and they took care of it right away. Prompt friendly. It was totally packed on a Monday night. Can't wait to go back.

The Calabazita taco is amazing! It was so good, I ordered a second one after placing my initial order. Got nachos for my kiddo and she thought they were really yummie. Also got an order of churros too and they were delicious. The wife got a strong margarita and I got Insane Rush IPA. I've gone a few times for dinner and it's been busy every time. The staff is great, friendly and helpful. The atmosphere is fun with bright colors and some cool murals on the wall. We enjoy ourselves when we go.

The service here was great! We were served quickly and the staff checked on us frequently. Ambiance was okay but they did have live music which was a fun addition. We also sat inside and never saw outside which may have been better. Now for the food; I have never tasted tacos this good before. The grilled shrimp taco is hands down the best taco I've ever had and 3$ taco Tuesday is hard to beat. Only suggestion is to make chips and salsa free, although it was worth the money.

Came here on a Labor Day around 9pm for 3 and was pleased to know it was still open given the holiday. The place has a nice overall vibe to it. We were seated and attended to pretty quickly. For appetizer, we ordered the queso and chips - we realtl liked the presentation of the queso! I don't like queso, but was told it was good! The chips were great! We each ordered 3 tacos - they are all reasonably priced! I ordered the Chicken Tinga, A la Talla, and the Coliflor al Pastor. I never got to the Chicken Tinga, but the other two were great and I'd definitely recommend them! Great place if you're gluten free!

I forgot the exact name of the seafood dish I had, it had good amount of seafood (salmon/octopus/scallop/shrimp etc) and plenty of sides and tortillas to gulp down with. It was a tasty and fun experience.

Service is always prompt considering each meal is made order. The the food is absolutely impeccable. By far the best Mexican restaurant to ever enter Longmont Colorado when we found this place it was still very new and kind of a hole in the wall. But it has come a long way and it's generally always busy and they don't take reservations so be prepared to wait 20 minutes or so but I promise you it is worth it. I would wait an hour to eat there. What was your favorite dish there? We can't even pick which was our favorite dish because we've never been disappointed and we always leave our plate as clean as it was before they put food on it. Also there selection of vegan and vegetarian dishes is amazing for Longmont. My personal favorite is the fried cauliflower dish which comes with battered and fried spinach as well as rice and beans and some a few extras that they make in the house. We also never leave the restaurant without ordering chips and guacamole with pork belly or a sweet corn tamale made with real masa. I was hesitant to do a review, because it's blown up so fast but now that it has already blown up, I'm going to give a review. I recommend this restaurant to anyone and everyone who has a chance to go especially people from surrounding city when they want an amazing meal. They also make all of their drinks in House and have a huge variety of tequila and Mezcal.

Landed in Denver on our way to Loveland. Food was fantastic the pulpo octopus was delicious along with the empanadas and shrimp taco. So GOOD! Unlike any Mexican food at any restaurant I have ever been too. Wish you were in Las Vegas.
