We decided to give Rose Bar in Boston a try during peak dinner hours at 7pm, only to find the place nearly empty, with just one other table preparing to leave. Initially, we were reluctant to have the entire place to ourselves, with the chic and tasteful interior, along with comfortable seating, made us hopeful for a pleasant evening.
The service was exceptional. The bartender/server was very attentive, friendly, and had a good sense of humor, which added a pleasant touch to our experience. The drinks were commendable, and I would definitely return just for their dirty martini. However, the food left much to be desired.
We started with the salmon ceviche, which was a letdown. I haven't tried salmon ceviche before and was quite excited to experience a non-traditional ceviche made with something other than white fish or shrimp. Unfortunately, it was completely under-seasoned and lacked the necessary citrus elements to balance the fattiness of the salmon. It seemed like the only citrus was the lime wedge placed on top, which was insufficient. The pico de gallo and guacamole were quite basic and lacked any distinctive flavor, though I hesitate to call them store-bought. On a positive note, the tortilla chips were fresh and enjoyable.
Next, we had the bone marrow, which was a decent attempt but ultimately fell short. The bone marrow itself was dense and not spreadable, giving the impression that it was slightly undercooked. The bone remained very white in color, suggesting it wasn't broiled or cooked enough.
Overall, this dinner was not one I would look forward to repeating. Despite the pleasant atmosphere, excellent service, and friendly staff, the food quality needs significant improvement before I'd consider returning for a full meal.
