"Channel Salt Lake’s locomotive past at Rouser, a dimly-lit spot housed in the revived Union Pacific Depot, now home to the Asher Adams hotel. Sure, there’s a bit of a train theme going on, but it’s not cheesy—for example, the charcoal-fired menu is a nod to the coal-fueled engines that once rumbled through this space. Whether you’re here with a corporate card or just looking to impress a date, Rouser’s weeknight Josper Counter Experience is the move. Everything’s cooked on the Spanish-designed charcoal oven, grill, and rotisserie, and it’s only available Tuesday through Friday evenings for just six guests. (The ramen course is so good, you’ll swear you’re dining in San Francisco, not Salt Lake City.) My partner and I dined at Rouser back in March for my birthday, and it was a terrible experience at the time. We decided to give it another try today, and the difference was incredible. The new team and updated menu have completely turned things around. Every dish was flavorful and well balanced. The appetizers, especially the pork ribs and beef tartare, were rich, unique, and perfectly seasoned. The short rib and crispy fried duck were tender, beautifully plated, and full of depth. Service was attentive, and the manager even stopped by to check on us. Valet parking was smooth and convenient, and the atmosphere was much improved. Still moody but comfortably lit. Rouser has really stepped up its game. Excited to come back for the next menu change on December 3. If you haven’t been in a while, it’s definitely worth another visit

I think it’s hard to receive or give a high rating on food that is $50 or more per plate. Not only was the food quality impeccable, and incredibly tasty food with amazing service in an incredible environment. I got the New York steak and Fries and the banana churro dessert. Best steak I’ve had in awhile and the fries had a magical Parmesan drizzle amd seasoning. The remodel of that building is amazing. I’m looking forward to trying out the hotel rooms later this year.

This hotel’s breakfast restaurant exceeded expectations. The omelets were perfectly cooked, fluffy, and filled with fresh ingredients. The oatmeal was also a standout — creamy, flavorful, and served with great toppings. Everything tasted fresh and homemade. Service was fast and friendly, and the overall atmosphere was relaxed and welcoming. A fantastic way to start the day!

I had the pleasure of trying the Josper counter experience with some fellow foodie friends. We were seated omakase-style right in front of the Josper grill, and we had a really fun evening chatting with the chefs and trying the limited-time menu which incorporated the special coconut husk charcoal and Josper grill equipment. The chefs were super down to earth and their enthusiasm for their craft was infectious. And of course, the food was fantastic. Each carefully curated ingredient and its unique preparation gave us four really dynamic and special dishes. The dessert was so good that I forgot to take a picture haha. The cocktails were also top notch! Kudos to the bartenders. I can't wait to come back in a few months once the menu changes again :D

Believe I got food poisoning from this meal. The service was good and flavors were tasty. The osso buco was cold. Inside of a refrigerator and improperly re-heated cold. I will admit, I didn’t let anyone know as I didn’t want to complain or cause problem. All the flavors of everything was great, despite the cold meat.

I recently visited Rouser in Salt Lake City for a business dinner with a large group and found the experience to be impressive from start to finish. The setting strikes a balance between modern and comfortable, making it suitable for both business and casual gatherings. Rouser is located in the heart of Salt Lake City, just a short walk from Pioneer Park—a historic spot known for hosting one of the longest-running farmers markets in Utah. The wait staff was friendly, attentive, and managed our group’s needs smoothly throughout the evening. Several menu items were shared around the table, but I stuck with the Parker House Rolls, Field Greens Salad, Bone Marrow, and the NY Steak with Fries. Every dish was prepared thoughtfully, with the steak arriving at the right temperature and the fries well-seasoned, as shown in my attached photo. The main course was complemented by a glass of Cabernet Sauvignon from Brady, which paired nicely with the meal. For dessert, I had the chocolate cake with ice cream. The presentation was appealing, and the combination of flavors was just right—not overly sweet, but rich enough to satisfy. The dessert photo I’ve attached shows the generous portion and the attention to detail in plating. Overall, everyone in our group seemed pleased, both with their meals and the attentive service. There were no notable issues during our visit. I would recommend Rouser to anyone seeking a well-executed dining experience in Salt Lake City, and I would certainly return if I’m in the area again.

I've been here many times since it opened, and it just gets better and better! The wood-fired items are fantastic, and watching the chefs prepare food at the bar is my favorite place to sit. The manager, Bijan, personally came up and said hello, and the bar and restaurant staff stand out as some of the most professional I've experienced. I've eaten both dinner and breakfast, and the meals are delivered quickly; the portions are also appropriate for the price point. The rolls and ash butter are a standout, but the wine selection is fantastic. The bartenders are also professional and great company. I travel globally for my job and stay at many Marriott properties, and this restaurant is one of my very favorites!

From a hospitality background for over 20 years, I tend to dine out with a critical eye. That being said, Rouser and their team exceeded expectations on all fronts. My fiancé and I were staying in the hotel for a much needed “staycation” and we were both very impressed. The food was creative, flavorful and beautifully presented. Our server Patricia was fantastic; warm, knowledgeable with a perfect cadence throughout our meal. Don’t hesitate to book a reservation for a memorable experience.
