I just finished eating my mango avocado salad bowl and oh my!
That mango salsa is some of the best food I have eaten this week! It was so perfectly sweet and spicy and so fresh, I even saved some on the side to have at the end just so it would be the last taste in my mouth. I really wish it were all for it as a side option. I would have ordered extras!
As for the bowl itself, everything really went well together. The crispy tortilla chips, the grain, the veggies, the protein.
I picked the brown rice and quinoa option and added on grilled mahi mahi.
I also asked for black beans and cauliflower rice on the side and they were really well seasoned.
I was actually disappointed by the quantity of the cauliflower rice. I was expecting a decent solving size but it was about a ⅓ cup quantity filled into one of those side order containers. The same quantity as the black beans. This was definitely not what the price.
I would definitely order this bowl again - maybe not with the cauliflower rice next time though.
Still obsessed with that mango salsa!

This is the third time I'm eating at Rubio's in the last 2 months and I already want to come back next week!
Today I went for the Grilled Mahi-mahi Burrito with the side salad but made it a bit healthier with a few substitutions.
I asked for the Cauliflower Rice instead of the Mexican Rice and had the guac and chipotle sauce on the side because they were quite high in fat.
The burrito was really good! Fish was just perfectly cooked and there was quite an amount of cauliflower rice in there as well! I was very impressed. I ended up not even adding the chipotle sauce and the guac because the tasted amazing on its own. They were definitely not kidding about that "soft tortilla". The tortilla really was so soft, I don't have the words to describe it.
The side salad came with a really beautiful dressing. I ended up taking extra of that dressing home just to add to my own salads. Totally recommend.
And extremely quick service as well!
