"Ruby’s Bagels serves hand-rolled, boiled bagels with a crisp golden brown crust. The food truck offers options like a rosemary-sea salt bagel with strawberry cream cheese, sesame, poppy seed, plain, and cinnamon-cranberry bagels. Bagel sandwiches include a bacon, egg, and cheese option, and a vegetarian option. The truck also offers coffee drinks and is located in the Zócalo food truck park."

The Very Best Bagels in the US (Yes, Outside New York) | Bon Appétit

"There’s nothing like the rosemary-sea salt bagel from Ruby’s Bagels, a food truck that’s been serving standout ones since 2019. Owner Daniela Ruby Varela’s hand-rolled bagels are buoyant with a crisp golden brown crust composed of tiny microbubbles, a telltale sign they were boiled before baking." - ByThe Bon Appétit Staff & Contributors

The cold brew 8.0/10 The full lox on rosemary sea salt bagel. 5.0/10 This bagel truck amongst the Zocalo food truck park is a staple, a cornerstone of this gathering of cuisines. They make great bagels of sufficient size and quality ingredients. The reason I rated the full lox rosemary sea salt bagel a 5.0/10 is because there was enough cream cheese on it to spackle a dam. Each bite was overpowered with the rich creamy cold goodness of whole fat cream cheese. Perhaps I'm the rookie who should have asked them to go light on the dairy. I didn't know they would put the whole 8 oz package on the one bagel. I deconstructed the bagel about a quarter of the way through, scraping the goopy white goodness into a napkin while saving the capers, onions, and dill. It took 7 napkins. The bagel being served cold also did no favors to the texture profile. Instead of having a crispy, light crunch on the exterior complimented by the salted, squishy salmon on the interior, I had to fight the cold elastic texture of the bagel on each bite. But overall, it was very good with the reduced amount of cream cheese. I'll come back and ask for the light cream cheese version with the lox craving grips me once again.

Service stinks. Bought two bagels with cream cheese. The smear is $2.50. They did not toast the first two or ask. Bought two more so I could actually try these. I had to stop them after they barely heated them and there was no actual sign of toasting at all. Spent $22 just to get two toasted bagels with cream cheese. It took them six bagels to do it. The bagels were nothing special, and I don't think they asked if I wanted them toasted or not, because they don't want to do the "work" to put them in the toaster. *Edit I was completely calm and polite during the entire exchange, but I knew they would somehow blame my behavior. If they had wanted to give me a "refund" they could have simply replaced the bagel when I brought it back instead of making me repurchase them. And while they did show me after the fact that the bagels were toasted on request, they also saw that was covered up by condensation due to the rain. Imagine waiting for a review and for a customer to leave, unsatisfied, to then offer a refund.

Google
Ruby’s Bagels are hands down the BEST bagels in the city! I absolutely love that they are made fresh daily so there is no need to toast them, as toasting takes away from the fresh, chewy goodness ☺️ Not only are the bagels, bagel sandwiches and coffee top notch but the staff is always friendly! Ruby’s is a must if you’re a bagel connoisseur!

Nicholas Zander

Google
This place is a must if you’re in the area! The bagels are made daily and you can tell! Any of their bagels are divine but their breakfast sandwich bagels are incredible. Oh and don’t forget the jalapeno cream cheese! Wow! I anxiously await their new storefront location in Wauwatosa to open since it will be much closer for me!

Google
My love for Ruby’s bagels goes beyond all reason. Hands down the best bagel you can get outside of New York. While the guava cheese bagel is what I dream about, everything I’ve tried is amazingly delicious.

Google
Immensely delicious bagels - their Rosemary Sea Salt bagels are what I look forward to at the end of the week. I used to think I couldn’t find a consumable bagel in Milwaukee and claimed them to be a “vacation food”, but Ruby’s has gone above and beyond and is absolutely worth the stop. Get a Rosemary Sea Salt with Jalapeño spread, you’ll thank me later

Google
We arrived for lunch,so bagel options were limited to poppyseed. But it worked for the Naked Lox (smoked salmon and cream cheese) and the Bacon, Egg, and Cheese sandwiches. Bagels were great. They also serve Colectivo coffee pour overs. Next time, we'll arrive earlier to have more bagel flavors to choose from.

Google
10/10! When I ordered, I couldn’t stop with just 1. Ordered 3 in total, The LOX, Veggie Sammie, and the Guilty Guava. All of them were delicious. Definitely a must try!

Yelp
Delicious! I got the veg on a rosemary salt bagel, the cold brew with some almond milk, and half a dozen bagels to go (poppy seed, everything, and rosemary salt). Cute shop just down from a new bookstore and billed as some of the best bagels outside NY. Now I have never been to NY but these are tasty bagels--chewy and soft. The service was fast and I thought they did really well for how busy it was Saturday mid-day. I would go back if I was in the area.

Yelp
We pre-ordered a half-dozen bagels (rosemary, sesame and cinnamon cranberry) and some jalapeño cream cheese (the best!) and then decided to grab a hot sandwich once we got there. We went with a classic bacon, egg & cheese and added a slice of tomato. Our bagels were ready, and our sandwich came out hot and melty as soon as they made more bacon (they let us know it would be a few extra minutes - and bacon is worth the wait!). We took our food to go since it was chilly, but there are tables if you want to hang out. Everyone is super friendly, they're working hard and getting food out quickly, and the bagels and breakfast sandwiches are fantastic. Totally worth a little drive from the 'burbs.

Yelp
I know I have reviewed Ruby's before and now that I've been enjoying their bagels for 4.5+ years I can confirm and re-confirm that these bagels are awesome, perfect, and very yummy! And yes, you can pre-order for pick-up. You can choose a dozen bagels, half a dozen, or a 4-pack. Don't wait if you haven't tried Ruby's bagels before!

Yelp
Ruby's is highly recommended in the press, so it was our first stop after landing in Milwaukee on a Friday morning. We expected one of the best bagels in the country, as they have been listed in a reputable food magazine as such -- that expectation may have been our undoing. Ruby's might offer the best bagel in Milwaukee but it is not one of the best in the USA. The bagels are flavorful; That really cannot be credibly denied. I very much enjoyed my Rosemary Salt bagel with cream cheese. The rosemary on my bagel was largely on the surface of the bagel and I do think that is a mistake. The rosemary is sharp and at times piercing. Smaller pieces of rosemary infused in the bagel would be a better approach. The texture of the bagels is a bit doughy. I don't think Ruby's uses an egg wash and that might help to crisp up the bagels a bit. Coffee was excellent.

Yelp
I'm truly shocked I haven't reviewed Ruby's Bagels based on the amount I have gone...eek! As many people did, I discovered Ruby's after it was noted in Bon Appetit. And it didn't disappoint! The bagels are fresh, chewy, and delicious! My personal favorites are Rosemary Sea Salt and Sesame! The jalapeño and strawberry cream cheeses are delicious too! For a sandwich option, I love the Veggie Sandwich and Bacon Egg Cheese. Haven't gotten a single bad thing here and the service is quick considering the lines too!

Yelp
Best bagels in milwaukee! Stopped by zocolo park to finally try ruby's bagels. I ordered the rosemary sea salt bagel with the green onion and jalapeño cream cheese. My bf ordered the sesame bagel with strawberry cream cheese. These bagels are absolutely delicious!! We were blown away. The cream cheeses were so fresh and the bagels are a true new york style bagel. We also ordered their drip coffee with lavender and pistachio syrups and it was so good. Service was quick. We will be coming back for sure. Highly recommend.

Yelp
This place is a little gem. I hope they get their own storefront someday! The people that work here are lovely and make it easy/quick to order. Zocalo is such a fun location with lots of seating options. My fav combination here is a sesame bagel with strawberry cream cheese. Their strawberry cc is perfect - great color, strong strawberry flavor. I know other friends are big fans of their BEC and special coffees (I don't drink caffeine).

Yelp
Really grateful to find a vegan breakfast option! Great food and cold brew - what a gem to find!

Yelp
Nothing makes a weekend better than a trip to Ruby's! I moved to Milwaukee a few years ago and was disappointed at the lack of a good local bagel shop - until I discovered Ruby's. This has been my favorite place to grab a bagel ever since. Ruby and her staff are all so incredibly kind and make each trip wonderful. They also frequently collaborate with local artists to release some really fun merch. Highly recommend to anyone in the area. Go to orders: Everything bagel with green onion and cheddar cream cheese, BEC on an everything, and the Guilty Guava (soooo good!)

Yelp
I had the pleasure of visiting Ruby's for the Latinx Heritage Month Yelp Elite week. I ordered a plain bagel with jalapeño cream cheese. I think the jalapeños were pickled which I absolutely LOVED. The staff was so kind and was sure to give me the full run down on coffee flavor options. My coffee had a dash of oat milk and hint of lavender syrup. I enjoyed my goodies at the food truck park that Ruby's is parked in. The setup was so cute with a variety of picnic tables. I went pretty early, and I'm so glad I did because it was so serene. What a great way to spend a Friday morning! Check out my Ruby's Bagels TikTok: https://www.tiktok.com/t/ZT8MdEY4M/

Yelp
Food: 10/10. Probably the best bagel sandwich I've ever had. The bagel was excellently done with a crisp outside and soft inside. The bacon was thicc and perfectly cooked. I would recommend getting the bacon, egg, and cheese and then the veggie as they pair nicely together. Service: 10/10. I believe Ruby herself served us, I felt like a celebrity. Ambiance: 9/10. The food truck park is cool with a building for a bar and a lot of seating. Overall: 10/10 perfect place for a Saturday or Sunday morning breakfast.

Yelp
The softest chewiest bagels. Generous cream cheese, fresh veggies. I always get the lox sandwich and I have never been disappointed. Service is great and friendly no matter how busy they are. I always order online because I'm impatient. I've never ordered the bacon and egg sandwich but from the smell I need to soon.

Yelp
I was excited to try these highly recommended bagels but was slightly underwhelmed. We ordered two bagels which came out warm within 5 minutes. I was surprised to see a poppy seed bagel when I asked for my sandwich on a plain bagel. I convinced myself to keep it and thought it was a possibly their standard bagel choice for the Bacon Egg and Cheese. When I arrived at home, my simple bagel was also on a poppy seed. I was upset but the bagel itself was good, the bacon was a tab but too thick and the bagel was the perfect amount of messy. Overall a decent breakfast stop.

Yelp
All I can say is W O W ! The bagel sandwiches are so fantastic my tastebuds are still salivating. I had the rosemary sea salt bagel naked lox sandwich with chive and cheese cream cheese. Yup, it tasted as good as it sounds and the portions were huge. I even got a sticker for my water bottle from Rubys!

Yelp
Some of the best bagels in Milwaukee. Located in the Zocalo Food Truck Park (just follow the signs), their bagels have the classic hard crust with a chewy toothsome interior that you look for in a great bagel. My faves are the everything followed by the rosemary and sea salt variety. I can't speak to any of the sandwiches as I alway come to buy the bagels in bulk but given the quality of the bagels, I'm sure you can't go wrong.

Yelp
Stopped by to see what all the hype was about. I preordered a bagel & cream cheese which was ready upon arrival and then placed an in person order. The preordered bagel was not toasted and overfilled with cream cheese, which my partner wasn't a fan of. If I recall correctly, there was no option when preordering to select if I wanted my bagel toasted...I just thought that was a given. Opps. I waited for about 10 minutes in line to order even though only 5 people were in front of me. Upon placing my order I was given a number to wait for my order to be called. Ten minutes or more passed and I had only ordered a bagel with jam, but I couldn't wait any longer as I needed to get to an event. So I asked for a refund which they promptly provided. They put out a 'sold out' bagel sign while I was there and it was about 11am and it was not very crowded. So order ahead if you'd like to try these out. The pre ordered bagel I tried was fresh and good, but the overfill of cream cheese took away from its glory. I wouldn't return on my own accord, but if I do I'd preorder a breakfast sandwich, since those looked filling and delicious. Pack your patience if you're headed here, it's definitely not a grab and go set-up.

Yelp
Came here on a weekend to pick up some bagels! I really enjoyed the rosemary bagel, the texture was great and it had great flavor. I tried it with the jalapeño cream cheese which I really enjoyed! We also ordered a cheese and egg breakfast sandwich which was really yummy. Overall great place to grab some breakfast!
google avatar

Jami R.

Yelp
I'm Ashkenazi and from Chicago, so I'm really picky about my bagels. Ruby's bagels are definitely sufficient bagels, and I would get them again. But next time, I will ask for the cream cheese on the side, because they put too much on. I had to knock off a couple stars, because the knife was obviously not cleaned in between cutting red onions and cucumbers, and all I could taste was red onion, which I cannot stand the taste of. Parking is free in the lot, if you scan the QR code to register your car.

Gabriella M.

Yelp
Great quality. Love the flavor. Very delicious would recommend also the breakfast bagel. It was also fast.
google avatar

Samantha B.

Yelp
Love this spot! Bagels are always fresh and delicious. Most recently I ordered the bacon, egg, and cheese sandwich on an everything bagel and it was one of the best bagel sandwiches I've ever had. I always pre-order and then sit outside at Zocalo to enjoy.

Jeff S.

Yelp
Big disappointment!! Listed as one of the best bagels in Milwaukee. Sad Pickens !! They don't even have garlic bagels. What kind of bagel place doesn't have garlic bagels. Waited over 15min for a simple order. Out of orange juice on a sat morning. All and all One Star. If this that milwaukee has to offer things are pretty bleak. !!
google avatar

Yelp
As someone from NJ bagels are a huge part of my life and I was nervous to find somewhere in Milwaukee. However Ruby's is amazing and the sea salt bagel is amazing. They make a great bacon egg and cheese. Just be prepared to wait as it gets busy but you can enjoy a nice walk in walkers point while waiting or around zocalo park at least. I will say my only gripes are that they are not open everyday and that the pricing for a bacon egg and cheese is a little steep.

Michael C.

Yelp
Ruby's is the best bagel in milwaukee. I've tried all the other shops and no one comes close. Woman owned and operated and she's what makes this city an amazing place for food and small businesses. Rosemary sea salt bagel with green onion and cheddar and the Bacon egg and cheese sandwich are MUST tries. Really looking forward to her brick and mortar in tosa soon
google avatar

Apurba B.

Yelp
Bonkers for Bagels! I got to try Ruby's bagels tomorrow the first time today. She did a collab with Egg and Flour to raise money for Barby the Book Fairy and I picked the Rosemary Prime rib bagel sammie. This was the BEST bagel sammie I've had ever. Think of it as a gourmet bagel sandwich that has hand carved meat, shaved onion, Arugula, horseradish between two perfectly made rosemary bagel slices. 10/10 for this sandwich and for their ernest efforts to raise money for a good cause.
google avatar

Stephany S.

Yelp
Sesame bacon egg and cheese bagel with green onion and cheddar cream cheese. Ruby's bagels is my personal favorite bagels in the city. Located at Zocalo in walkers point I am able to get my bagel fix Friday-Sunday. If you are getting 1/2 dozen-dozen I recommend ordering ahead of time as she does sell out! Overall a great hand rolled and boiled bagel in the city.
google avatar

Maggie B.

Yelp
I tried Ruby's Bagels for the first time this weekend at their Bagels and Butts event with Radillustrates. What a great idea! Order a delicious bagel and coffee and get a booty portrait while you wait for it! I really hope they do this again, it was so much fun and I loved seeing all the good dogs there! We had the veggie sandwich on a rosemary bagel (pictured) and an avocado bagel with cold brew coffee. All was delicious! I'll definitely be back to support them again soon. I always have great experiences at Zócalo and all of the food trucks there.
google avatar

Sema T.

Yelp
Major drool. A friend introduced me to the food truck set up in the park near National. She advised getting there early, and I would wholly agree. We were there by 8am and were third in line, but as we waited the 15 minutes for our prepped bagels, 15 more people arrived. Everyone's so friendly, and the food is just delicious. They offer coffee (hot or cold brew), but the star is, of course, the bagels. I'd recommend the chive cream cheese, and almost any bagel (I left with a variety!)! I wasn't a fan of the rosemary bagel - great idea, very spikey - but even that made for a great sandwich. Can't wait to go back.
google avatar

Katie R.

Yelp
Great flavorful and soft bagels. Very generous portion of cream cheese. The egg sandwich was good - wish the bacon was a little crispier. Good service. Food truck with some outdoor seating.
google avatar

Christina S.

Yelp
Delicious! I have been wanting to pick up some bagels and we saw they have pre orders in Oak Creek and ordered for Sunday. These are the freshest and fluffiest most delicious bagels ever. The everything bagel and cinnamon sugar were delicious as well. The cream cheese is made from scratch and enhances the bagel just that much. Cannot wait to add this to the Sunday rotation!
google avatar

Xiomary S.

Yelp
Some of the best bagels in the area. I recently ordered a dozen for a bachelorette party and they were GONE in seconds. The girls loved them. My favorite is the rosemary sea salt. I recently had their BEC bagel and it did not disappoint. You can't go wrong with a classic combo like that. The service is quick and the owner + staff are the sweetest.

Jillian T.

Yelp
This was our first time visiting and we loved it! Delicious and HUGE bagels and friendly staff.
google avatar

Yelp
Went to Ruby's for the first time this morning and was pleasantly surprised at how good my bagel was. I've always been disappointed with the bagel scene in Milwaukee, always too tough and a little dried out. The bagel from Ruby's was very fresh and had good texture. I ordered an everything bagel with the avocado spread. The bagel was seasoned just right, no one flavor dominating the others. The avocado spread was also very good with great flavor. My friends ordered the lox sandwich and also enjoyed them. They have an easy to use online ordering platform that made the whole ordering process very easy. Will definitely be returning.
google avatar

Yelp
Stopped here for the Yelp Elite event for a complimentary bagel and was very impressed. It's tucked in the back garage so it's not easy to find but the regulars I think are keeping this a secret. I showed up late not knowing they were closing down but they were so kind to give me a rosemary bagel with a smear. OMG.....I am so glad I don't eat many carbs all of the time because this made it almost like a spiritual experience. The bagel had incredible flavor and I wished I would have toasted it or had it warm....next time. Thank you so much Ruby's for letting me taste your amazing bagels! I will be back when I crave carbs which might be sooner than later!
google avatar

Warren D.

Yelp
I stopped here and got a half-dozen bagels for the office a few months ago and they were amazing! I am a bit picky about my bagels as well as my cream cheese. I find Bruegger's to be too sour, and Einstein to be too bland. Panera is my go to because they are conveniently located, but they got nothing on Ruby's! I had mine sliced, toasted, and she even generously smeared it with the best strawberry cream cheese I have ever had. The bagel, a cinnamon sugar tastebomb, was just as good as the cream cheese; hearty without being tough, a difficult tightrope to master, for sure. Everyone back at the office raved about them as well. While a bit out of the way for me, I definitely will stop here again in the future. I see they had coffee drinks as well, so I shall give those a go as well.

Andrea R.

Yelp
Y'ALL NEED TO COME EARLY! Bagels might be gone by 10:30am/11am! Check out our review here: https://youtu.be/livzU1mDScs?t=19 Love supporting local and Mother & Daughter owned shops! Breakfast sandwich was THICK and GOOD. A must stop!
google avatar

A R.

Yelp
Ordered online for pick up. System stated 25 minutes, it only took 7 minutes to be ready. Bagels were really good. Cream cheese was delicious. Bacon egg and cheese sandwich is worth coming back for. Will definitely add this into my breakfast rotation.
google avatar

Tony P.

Yelp
A tasty bagel, BUT every time I order bagels there, Ruby cuts them in half. Even when I order a half dozen to go, and even when I ask them not to cut them. I asked twice last week, but my bagels were all still cut in half. WTF? Also, Outpost is selling great bagels for $.99. And Outpost has pumpernickel, which Ruby is often out of.
google avatar

Rita M.

Yelp
Tucked into Zocalo food truck park is Ruby's Bagels, a small bagel shop. It's a little tricky to find off the street, but the woman working (I think she was the owner) saw me wandering and waved me in. I arrived pretty early in the morning and thankfully all bagels were available (looks like they run out of most flavors daily). I decided to try an Everything (my usual favorite) and the Rosemary Sea Salt. The bagels taste very fresh, super soft (but still have a bite) and were overall very tasty. Hands down the best bagel you'll find in the area by far. I think I preferred the popular Rosemary Sea Salt variety. My only critiques are that I found the plain cream cheese lacked a little salt/much flavor and the Everything bagel also lacked a bit of salt that I've come to expect in an Everything bagel. Perhaps the flavored cream cheeses are worth trying for added oomph and saltiness. Also this place is a bit pricy (NYC prices [think Russ & Daughters] for a flavored bagel with cream cheese - paid $10 for two) but again everything is homemade and fresh. Definitely stop by if you're in need of a bagel in the Walkers Point/Third Ward area! I don't think there's really any other local homemade bagel shops in the area competition wise other than larger chains.
google avatar

Michelle R.

Yelp
Easily the best bagels in Milwaukee! Always super fast, and friendly service. My fav bagel is hands down the rosemary & sea salt w/ jalapeño cream cheese. TO DIE FOR!
google avatar

Blake M.

Yelp
Two bagels for $20 so a little pricey, however the bacon, egg and cheese was incredible and the rosemary and sea salt was good however the top is fully covered so pretty heavy on the taste.

Eric S.

Yelp
By far the best bagels in Milwaukee and 10x as fast as the place that more people know about.
google avatar

Marisa S.

Yelp
This place was SO CUTE. It's in a small "food truck court", but has its own building. My bagel + cream cheese was $4 which was very reasonably priced for how delicious it was- although getting it toasted isn't an option! It clearly fresh baked and the cream cheese was thickly applied. I will definitely be coming back!
google avatar

Margaret L.

Yelp
Ever since the Yelp elite perk I've been hooked. I never knew about this spot for authentic tasty bagels but now I can't get enough! I love the interesting flavors (although the cinnamon sugar is more subdued than some other places) and the homemade cream cheese. I've gotten the naked lox sandwich a few times but my usual go to is half a dozen to go with cream cheese. You can order online the night before if you are buying in bulk to make sure they don't sell out. Otherwise come early because they do sell out! Since they are so fresh they do start to mold if left out for too long (but good luck keeping them uneaten long enough for that to happen).

Evan L.

Yelp
I'll admit that I am a bagel-snob, born and raised in Brooklyn, NY. I have searched for years for a decent bagel in the area. Everyone prior has been a round piece of bread with a hole in the middle. Not a bagel! Ruby's is the real deal, prepared exactly the way they should. They're consistent and delicious every time. The variations are wonderful, but sometimes just a "plain" does the trick. Thank you Ruby for restoring my faith in bagels outside of the NY area.

Pita J.

Yelp
All out of lox, no other protein available. Veggie bagel sandwiches were overloaded with cream cheese and minimal veggies. Would not go back.
google avatar

Alison P.

Yelp
Always amazing service and the bagels are !! The rosemary bagel is so delicious with the fresh rosemary on it... and I am obsessed with the green onion & cheddar cream cheese. Neither are flavors I have regularly (or really see anywhere else) and the combination is outstanding. Great location in Zocalo and wonderful Covid safety measures in place!
google avatar

Christine N.

Yelp
Pre-ordered these bagels Thursday to take them home Saturday and did not disappoint!!! They were amazing!! Only bad thing is not living in Milwaukee to be able to enjoy these babies more often!!! but we will be back Ruby!!!!
google avatar

Natalie M.

Yelp
Really great spot to get fresh, homemade bagels in MKE! They are super quick and have a small but tasty selection to choose from. I got the rosemary and sea salt bagel with cheddar and green onion cream cheese and it was incredible! I could've maybe used a little more cream cheese but the bagel itself was delicious. They also h w drip coffee they make with a chemex which is awesome. I will definitely be back here!!

Yelp
Started off the day with Ruby's Bagels and they were delicious!! Located in the back of the Zocalo Food Truck park, you'll find a variety of bagels and coffee to enjoy! I had the poppyseed veggie bagel sandwich and it was seriously so good! My friend enjoyed her rosemary veggie sandwich and loved it as well. When you turn the corner from Ruby's you'll find additional seating to sit and chat with friends. Would definitely recommend Ruby's!!
