"Ruby is the sort of place you can take anyone and everyone. This is a tiny Italian spot with a big following, which means that you need to be a bit savvy about when to go. We find anytime after 1:30pm is best - but before 3:00pm, as they’re only open for lunch. Fresh soup is made daily alongside ciabatta sandwiches, salads and changing pastas: the crab and leek is a favourite of ours. Aside from the homely food, the owner and cooks are as friendly as they come and there’s more than a chance of a bit backslapping and questionable wisecracks. The prices are honest whilst the portions are hefty but remember to bear in mind this place is a daytime and weekday only thing, so don’t turn up on a Friday night." - Jake Missing

This was our first visit and we had a great experience. The charcuterie board was outstanding, and a great value. The bathroom was super cool too! LOL. The service was excellent. I will definitely return.

We went to listen to a friend, Christian Jaquez, performing live entertainment and was so happy to find a new favorite spot!!! The atmosphere was amazing, the service was friendly and happy to serve with smiles!!!! We seriously can't wait to share our summer evenings on the patio there with friends and family!

Alex was awesome! Lived here our whole life’s and never tried this place until today and it was so amazing we had the Pueblo flat bread and was cooked to Perfection! Highly recommended and we will definitely be back!

Stopped in for some small plates and beverages with some friends. The setting and ambiance was 5/5 — great place to hang! Listed per google as a wine bar, we were a bit disappointed in the wine/beer offerings. It is seemed a short list, and they were out of one of the draft beers. I’d rate the wine/beer selection 4/5. The staff was very friendly and helpful in terms of hosting us. However our server was not knowledgeable about the wines or beers. We felt a bit like we could have used more help especially selecting a beer congruent with the flavor/style we were searching for. 4/5 on this. We got to snack trays. They were good! Not high brow charcuterie boards, but plentiful and fun. 4.5/5 on this. Overall a good place to hang and relax, would have liked more selection on the wines/beers, but enjoyed our stop.

All I have to say is come here, you will not regret it! Everything is great from the atmosphere to the decor, patio area, different seating options, delicious fresh foods, tasty drinks, & super fun snack boards! Highly recommend!

We'd heard good things about this place and have wanted to come here for a while. We finally made it. A big advantage is their parking lot as Broadway can be hard to get parking on. The outdoor seating is super chic and welcoming. There are picnic benches, tables, a nice little patio seating area with a single-seater swing and a fireplace. When you enter, you're met with color, decor and flowers (albeit artificial) which scream women-run and cozy. We sat inside because of the possibility of rain. The tables are fairly close to each other so once other parties were seated, it was definitely tight and of course, you could hear all conversations around you. We got the Butter Beer, the Broadway Board and the Bruschetta (all 5). We were extremely disappointed to know that they did not diet soda. For someone with a medical condition that cannot have regular soda, to be told that there is NO option for diet is deeply disappointing. Any way, the butter beer was not good. I've had Butter Beer at the Universal Harry Potter restaurants and it's butter-scotchy, smooth and very refreshing. This was just jarring. Lots of carbonation that just hits you straight. The alcohol was also really sharp and the butter scotch just didn't sit right. I had cried when I had the Universal Butter Beer because that is exactly what I thought it would. This one was nowhere close. I would stay away. The food was a whole other story. Everything on that table was freaking delicious. The bruschetta was AMAZING. In order of most to least favorite - salami and pesto, hummus and cucumber, regular bruschetta, chili and cream cheese and then the bell peppers. That plate is pretty filling by itself. The balsamic they use is perfect. Definitely get all 5 but if not 5, get the 4 without the bell peppers. The board was HUGE. It says that it is for 2-3 people. It's more like 4-5. Lots of cheese and meat options, olives, crackers, tex mex and grapes. Amongst the cheese, there was one which was really spicy. That was our favorite. Amongst the meats, we loved the one with peppers. The combo of the dip and jam was delicious too. It was too much to finish, obviously. We took things home. For a wine bar, they have a decent choice of wines but nothing spectacular. All in all, this is a chic restaurant that you would come to, to destress among cute things. We shall be back to try the flat breads.

Such a fun place! The service was excellent. The food was fantastic! Nice menu! Fun atmosphere! We had the Broadway, a meat and cheese charcuterie board, which was so yummy and so fun to snack on. I highly recommend this cute little place!

Atmosphere: 5/5 Really “instagram-worthy” place. The decor and aesthetic was such a vibe and was excited to see a place like this in Pueblo. Staff: 4/5 Staff was super kind and friendly but lacked wine/beer knowledge. Our waitress couldn’t pronounce the word “Bordeaux” and when the IPA on draft my husband ordered was out of stock, she offered him a sample of a different draft beer that was no where an IPA profile. Drinks: 1/5 We saw reviews about people mentioning some wine and beer menu items being out of stock and boy were they right. Almost half of their selection was out of stock which was odd considering this is a wine bar. When I did finally find a wine that was in stock, it was $9.5 for a 5oz pour from a $12 twist cap bottle. A bit disappointing. Food: 2/5 We ordered the pepperoni flatbread which was just okay. However the traditional bruschetta was delicious and the best part of our meal.

This is a fun "new" place. Love the outdoor patio. The flat breads are excellent! Because I like dining "Al Fresco", I've been here several times. The service is great. The last time I was there, my server put up the umbrella for me! Prosecco is my new favorite drink - and they have several varieties! Parking behind makes it convenient! Try it - you will like it!

This was my first time trying Ruby's after my mom suggested we give it a try for Mother's Day. The ambience and decor is super cute and girly! We sat outside and enjoyed the different seating options they had, plus the view was nice too. We only had cocktails, but the food menu looked like the perfect spot for healthy, small bites especially for a lady's night happy hour. My mom tried the turkey sandwich in the past and said portions were large and the sandwich was really good and fresh! We tried the Watermelon mules, which were so good! Loved the ginger beer they used, it was tangy and had just the right amount of ginger. My husband had the Whiskey Lemonade which was nice and strong, only downfall was it had too many fruit bits at the bottom that would get stuck in the straw. Overall this is a great spot, I love seeing this chic vibe come to Pueblo - great job Heather and Ruby's!

I eat at Ruby's every once in a while, more now that I live across the street from their location. I am never disappointed with their food or their service - whether eating indoors or on their patio. I took a friend there for lunch and was once again impressed. My sandwich was a perfect size and delicious, and my friend ordered a salad which was huge! I never hesitate to suggest Ruby's when I'm taking someone to lunch. I keep going back because i always have a great experience.

The flatbreads are delicious. I had The Veg (minus mushrooms, add pepperoni) with pesto sauce and my other family members had The Pueblo, which they loved. Mine was so good, it was very difficult to stop eating and not over stuff myself. It was super windy, so we took it home, but we hope to sit outside next time. Highly recommend.

We enjoyed a very pleasant meal, the Classic flatbread. The basil was fresh, the mozzarella was creamy and the marinara was tangy and rich. We enjoyed the friendly indoor atmosphere, the helpful staff, and the crafted alcoholic drinks. Needless to say, we will be returning frequently!

We waited a half hour for a meat and cheese board. Finally we left. Just seemed to not care. No "it will be right out" or any updates. Also, why can't the menus not have dried food on them? And the drink lists? Wouldn't it be easier to update them in a computer rather than cross things out with sharpies and rewrite them them in ink? Loud music, dirty windows, sticky table. We won't be back.

This place is for you and your girlfriend to hang out and have a good time. Seriously, this is the place to catch up on life and enjoy brunch item foods. Disclaimer: don't take husbands or boyfriends. Or anyone who doesn't enjoy brunch item foods. They won't be too thrilled. But nonetheless it's my favorite place in Pueblo!!

This has quickly become my favorite spot in Pueblo. Between the amazing food, awesome atmosphere, dog friendly patio, and creative, seasonal drinks, my family is here quite often. But the best part is the service-Kim has become so much more than a bartender or manager. Her welcoming, sweet, hilarious attitude is really what keeps us coming back. When I come to Pueblo to visit I stop here. The staff is so friendly n courteous. It's the cutest atmosphere, although on this trip I couldn't stay because grandson was a bit fuzzy, I requested to take my food n the staff were so helpful. Until next trip.

First time going here and it was so cute! The outdoor seating was so unique and I loved the atmosphere, everyone there was so nice as soon as we walked in. The only thing I would say is that they should offer more vegan/diverse food options because I had a small selection of what I could get.

Friends and I were across the street at a coffee shop and one of them said, "Oh, that's where Ruby's is; they have Charcuterie boards." So two days later my husband and I headed there. What a great place! Staff was super friendly, efficient and the Charcuterie board was absolutely HUGE. Definitely is a keeper of a place to have different and fun food.

Stopped in on a Saturday night with my teenage daughter and we absolutely loved it! It was a very warm October day so we got to sit out on the patio and loved how eclectic and fun it is decorated and furnished. Food was excellent. We had the Nutella banana toast as a treat and the flatbread with basil and the most delicious house marinara sauce. Really fun and I felt like I was in Southern California. Lots of succulents and planners and overall a great vibe. Great drinks too.

Don't know if this place thinks this is NYC serving the smallest simplest pizza I've ever seen for $20.... but I KNOW I didn't pay to have the managers glare at me all night. Cheap overpriced food, hobby lobby interior, ONE good server. Why would I ever go back? Just another cash grab with no imagination.

The atmosphere is nice. The outdoor seating is the best with plenty of it. The menu has a nice selection however could use a little work with the preparation of the bruschetta . The consistency of the bread is always different. A Bruschetta is a warm perfectly crisp toasted bread. With one toaster and a toaster oven this is unfortunately one of the two reason for this rating. Lastly the service is the down fall of this business. I keep hoping thing will get better. As a local neighbor I so want to make this my favorite place. You have to find your server to order or reorder. The timing is just all off. The waitress are also making the drinks. You need a bartender. As I sit here writing this review 3 people have entered asking to order or for their bill. Just makes it difficult to keep retuning! Hope this helps you improve. Best of luck!

We were able to eat inside with social distancing! We missed eating here as it is one of our favorite in Pueblo. It is a restaurant where eating there is part of the great experience! Great charcuterie board, flatbread pizzas and bruschetta! Make sure to get the green chili and cream cheese bruschetta!

Love this place! Another great addition to the Pueblo local restaurant scene by Heather Graham! The flatbreads, charcuterie boards, desserts, salads, cocktails, wine and beer on tap... what's not to love?! Great fora date night, girls night out, private party - I've been there for all three! My favorites are the Pueblo flatbread and Broadway charcuterie board with either a glass of house Cabernet on tap or a mule.

Stopped in for a bite to eat because literally every other place in downtown Pueblo stops serving food early. We had been wanting To try it for a long time, so it was a great opportunity. We ordered a variety of bruschetta, and it was phenomenal. The cream cheese and roasted green Chile one was so addictive and I can't stop thinking about it! Sad to be leaving Pueblo now that I've just found this gem.

Ruby's is the most awesome newer restaurant in Pueblo...Their boards and 11 inch pizza offerings are over the top awesome. Being a non-meat eater, I get the veg 11 inch pizza (there are three sauce possibilities: pesto, marinara and alfredo). The original drinks are out of this world as well....wait staff is superb....make this a "go to eatery" and you will never go wrong..

My husband and I stumbled upon this gem driving by and I'm a customer for life now! Everything about this place was perfect. We felt like we were in Denver, not Pueblo. The bartender/waitress even made us delicious custom sangrias and she was super nice. Keep it up Ruby's!

This place was so hip, has a neat romantic, chill environment! The staff were great, the wine menu and small plates menus had great options! They have the best carrot cake ever in there this has been a great girls night gathering place for us, never been disappointed :) give it a try, you'll be happy you did!
