We had the sourdough with dips alongside some vermouth cocktails while waiting for a table at Bæst downstairs. There was an artichoke dip and a black olive dip accompanied by sourdough bread from Mirabelle. The dips were extraordinary in flavour and the bread was incredible. I had never had vermouth before but the cocktails were delicious. I had a Bad Romance which was sweet, light and citrusy. The experience was so good that we returned after our meal in the restaurant.

Up the staircase to the side of Baest’s main entrance. Intimate and lovely experience tasting vermouth from all over the world. Recommend letting your bartender take the reins and take you on a crafted journey. Great date spot. Tasty snacks too if you get hungry (burrata anyone?).

Rudo is the vermouth bar from the folks at bæst, and it's definitely worth checking out if you find yourself in the Nørrebro neighborhood of Copenhagen. Lots of great drinks, including a riff on their insanely good spritz cocktail served downstairs at the pizza restaurant. It's recently re-launched for the fall, and like almost every restaurant in this city, it's run by a gaggle of ex-Noma vets. You're in good hands.

When our 4 hour layover in Copenhagen yesterday turned into a 9 hour layover, we decided to make the most of it, and headed into the city center on what must be one of the world's most efficient metro systems. We were starving and after walking around for a bit, we stumbled across Rudo. The restaurant has a hip and modern Scandinavian vibe with a friendly staff. The menu is an interesting mix of Italian and Danish food, and everything that we ate was incredible. The kale & egg salad had a wonderful tangy dressing, and the beef tartare with mushrooms was unique and mind-numbingly delicious. The vermouth mussels were pretty good, not amazing, although the sourdough bread for dipping was heaven. We weren't huge fans of the affogato, which was a bit measly, but the two local beers we had made up for it. The bill was high for lunch ($80), but this was such a lucky find, and the food/ambience so impressive, that we didn't mind. We can't believe that the TripAdvisor rating is 2.5 (maybe because the place is new?), so we're happy to help Rudo out with its first 5-star Yelp review. Skål!
