"A Mediterranean-inspired, globally focused seafood restaurant founded by Costas Spiliadis in 1997 that launched its Las Vegas outpost on December 15, 2010. Known for an airy, light-toned dining room celebrating globally sourced seafood, the concept historically features a main dining space, private wine and luxury rooms, and a 75-seat Garden Terrace that overlooks the Strip at its original location (the planned Venetian site will not offer outdoor views). Work on the Venetian move has proceeded under the cover name Project Blue, with construction ongoing since August and an estimated $10 million allocated for renovations. The new build will occupy a 13,624-square-foot footprint with a maximum occupancy of 434, Team Construction is attached to the project, and the space is expected to neighbor a future restaurant from John Kunkel’s 50 Eggs; no official opening date has been announced.
