Once in awhile you stumble into a perfect restaurant experience, this was more than I could have hoped for. We walked carefully into the restaurant, which is mainly bar seating, and felt like we were in a pop up restaurant in all the best ways. Chef was cooking and the two sous chefs were making pork dumplings - one rolling the dough, one crimping, masterfully, perfect looking dumplings. Since the restaurant wasn't crowded, they asked if I wanted to make a dumpling, and it is harder than it looks. I ate that dumpling in an order of Zhong Dumplings that were sitting a spicy, comforting sauce. You can not underestimate the importance and mouth feel of a hand made dumpling wrapper. You can buy their chilie crisp, amazing stuff. Then we had Chicken Congee with toppings that were savory, tangy and gone in about 2 minutes. We followed that up with the Hong Kong Clay Pot Rice with pork and egg (egg as recommended and was a great call). We poured the sauce that accompanied the Clay pot over the top and enjoyed the smokey sizzle. The crispy rice at the bottom was perfect. We floated out of there full, happy and honored to have had such an intimate and fun, hand made experience.
