Eau De Vie presents a dazzling masterclass in immersive 1920s theming. The intentionally obscure entry down an alleyway and descending a flight of dimly lit stairs perfectly establishes its speakeasy bona fides. While the bar’s placement in Sydney’s top tier is certainly debatable, the technical skill behind the glass is undeniable. The Honey Butter Old Fashioned, in particular, is a stunning, luxurious evolution of the classic, achieving a near-perfect equilibrium of rich flavor and spirituous structure. However, the experience faltered at the bar itself. Seated front and center, hoping for an engaging glimpse into the mixological process, we encountered a notable absence of hospitality. The craft was flawless and the drinks unique, but the essential human element the convivial, informative exchange that completes the speakeasy illusion was missing. The product is superb, but the total atmosphere remains functionally cold.
