Eau De Vie presents a dazzling masterclass in immersive 1920s theming. The intentionally obscure entry down an alleyway and descending a flight of dimly lit stairs perfectly establishes its speakeasy bona fides. While the bar’s placement in Sydney’s top tier is certainly debatable, the technical skill behind the glass is undeniable. The Honey Butter Old Fashioned, in particular, is a stunning, luxurious evolution of the classic, achieving a near-perfect equilibrium of rich flavor and spirituous structure. However, the experience faltered at the bar itself. Seated front and center, hoping for an engaging glimpse into the mixological process, we encountered a notable absence of hospitality. The craft was flawless and the drinks unique, but the essential human element the convivial, informative exchange that completes the speakeasy illusion was missing. The product is superb, but the total atmosphere remains functionally cold.

What an incredible experience! The cocktails here were absolutely top-notch, beautifully balanced, creative, and with presentation that truly wowed us. Each drink felt like a work of art, both visually and in taste. The bartender’s knowledge was just as impressive as the drinks themselves. The atmosphere was warm and inviting, and the food was a perfect compliment to the drinks. We left so impressed and already planning our next visit. Highly recommended if you’re looking for a place where quality, craft, and hospitality shine.

I’ve visited twice to experience both their whisky and cheese tastings, and each was excellent. The $2 oysters during happy hour are a treat, and the martinis hit the spot. One suggestion: consider varying the cheese pairings to better reflect the distinct character of each whisky tasting. Their cocktails are also a standout—creative and well-crafted.

It was a bit hard to find the entrance, but the bar was really nice and fantastic. The bartenders were friendly and gave good explanations, which made the atmosphere even better.

Great atmosphere. Our server was a little abrupt, but efficient. Cocktail selection was great. I enjoyed my Hearts on Fire especially since it came with a show. Lady White Snake was also good, but way too much ice. My sister's Serpent Song was good, but pretty sweet. Enjoyed the olives and oysters as well.

Wow this was a highlight of my evening. Maybe a little difficult to find - we had to ask the doorman of the hotel? directly opposite but I got the sense that he probably gets asked quite a lot and he very happily pointed the door out to us. The only negative I have of the whole experience was the dimly lit staircase (def do recommend you use the lift) as I could not see the steps so you could very easily break an ankle. However once at the basement bar we received exemplary and professional service, were offered an option of where to sit and had made it in time for the weekday happy hour that provided a mini martini and 6 oysters (with a very original and delicious accompaniment) for only $24 ! The space is beautiful, the staff are very helpful and smartly dressed. I will def be returning. If you love gin or whisky this is def for you - there was an enormous choice.
