Pilot Project Brewing - Milwaukee

Stopped for a drink before a game and was pleasantly surprised at the beautiful inside. It was a 10-minute walk to Baird Center and the center of downtown. But parking is paid parking on the street, with spots hard to find. Once the parking situation is resolved, things are great. The vibes inside was awesome - very open, with lots of seating. There seems to be tons of seating options, and outdoor seating as well for when the days are warmer. And for a brewery, the most important thing? The beer, of course! And it was good. We’ve had their beer before and have always like them. It was great getting some more on draft. Agro pop IPA Yummy!! Panther pale ale OK, but not my fave. I wouldn’t get it again. Cheese curds $14 These were delicious, but it did get salty after munching through the plate. We were limiting ourselves to just one drink, and needed more drinks or another food item to mediate our tastebuds. I’d order again with a proper meal or with more booze. Service was super nice, though not quite polished, which I don’t mind at all. Points for a nice smile!

What an awesome find in downtown Milwaukee!! Went with a group and took the tour - such a fun experience!! Our tour guide, Bob was friendly, knowledgeable & just exuded a great energy. We were able to try several different kinds of beverages - all of them super unique. The brewery itself was really interesting, but it's also a bar/restaurant with an additional rooftop bar which really rounded out the experience. The views from up there were incredible! Paired with some great food & drink and nearing sunset - was just a really great vibe!! Will definitely be back!

Huge beautiful space and great staff. Willow and Jacob were very sweet, not to mention hilarious. Tons of brew choices, excellent food and the best hospitality.

We hosted a welcome party here for out of town guests before my son's wedding. From start to finish working with Kristi was fanstastic. She is easy to talk with, had great ideas, and did a good job of helping me plan without upselling. Our friends and family thoroughly enjoyed themselves. I highly recommend this venue.

Historical curb appeal meets modern tap room. The vibe is modern and relaxed, with historic views in the front and modern city digs in the back. We didn’t get a chance to experience the roof top patio, but will definitely be back to experience it. Huge plus as always: it’s dog friendly! The patio and front area inside are perfect for bringing the gang. The drink selection is always changing in the best way — fun, creative brews that are actually good. The Strawberry White Pepper Margarita by Devious was the perfect summer cocktail. It’s just one of those places where you show up for a drink and end up staying way longer than you meant to (in the best way).

Good food and service. Manager Allen came to our table to see how things were. Waitress was very sweet. Smash burgers very good. Upstairs patio very large. Bartender up on patio only had one guest and didn't greet us however or let us know how or where to order. So maybe lil improving needed there but overall will definitely come back. Hostess was polite also. Good beer selections as well.

Blimey! 😊 I popped into Pilot Project Brewing in Milwaukee for a spot of grub and a pint, and it was a cracking good time 👍. The Italian street food was spot on 🍝👌, and the craft beers were bloody lovely 🍺👍. The rooftop bar had some fantastic views of the city 🌆, and it was a top spot to chill with mates 👫. The atmosphere was quite relaxed and welcoming, innit? 😎 The staff were friendly and attentive, and I felt right at home 🏠. The only reason I'm not giving it a full 5 stars is that the food could do with a bit more authenticity 🤔, but all in all, it's a top spot to visit 👍. If you're in Milwaukee and looking for a place to grab a bite and a pint, Pilot Project Brewing is a cracking good choice 👌. Give it a go, mate! 🤜🤛 Cheers!

Had a great time with some friends. We took a tour and tried too many brewers. After it we had dinner in the restaurant. The food was great, and drinks were better. We hang out in the rooftop for a while expending all day long there. I really enjoy this place and planning on coming back soon with some other friends that I am pretty sure will love it. I expend a little bit finding a parking spot, but after all I parked a block from the place. But besides this everything was great.

Pilot Project Brewing was recently playing host to a holiday market so we decided to stop by, grab a beer and a bite and then wander the market. First of all, I love that they host events like this. So many holiday markets/Christkindl markets are outdoors so it was nice to leisurely wander while sipping a beer and being toasty warm. Their beers are excellent. We got two of their barrel aged stouts and couldn't decide which was better as they were both stellar. For our starter, we got their pretzel which was perfect--warm, pillowy, the right amount of salt, and served with three dip choices (all good--we couldn't pick our fave!). For my main, I got their caesar salad with avocado added. They were generous with the avocado (half an avocado sliced on top) and everything was crisp and fresh. Our server was friendly and attentive and the prices were reasonable. No notes! Get to it!

Solid food, great vibes. If you are ever in the area looking for some bar food and cool atmosphere, check out Pilot Project! My chicken pesto melt was super flavorful and felt light since the chicken was grilled and the focaccia bun was nice and soft. Fries were average bar fries. David's chicken sandwich was huge! He didn't like the pickles that were on it, or the garlic aioli but chicken and bun were good. I wasn't a fan of my sour (Punch Kissed Parasol) but David enjoyed his beer (Falk Bock). Service was great!

I was back at Pilot Project for Milwaukee Krampusnacht again this year. Once again the event was great. The food at Pilot Project is top notch. When I arrived a friend had ordered the eggs benedict for brunch and it looked amazing. They said it was delicious! Later in the day after the event started, several of us ordered food. I was told the wings were very good. They have huge hot pretzels that come in a pizza box. Comments from other friends said their burger was great and cheese curds were fantastic. I ordered the Italian beef sandwich with fries and loved it! Unfortunately I had some issues with the staff again. The bartender at the first bar was pretty good and I knew what to ask for ahead of time so no issues there. When I returned for food I was told to "order at the other bar". When I went there, I was to I had to "order food at the opposite end of the bar". Ok, at the other end of the bar there were several people around and it was unclear who or where to order food with. My friend ordered and then the person taking his order just walked away to talk to other employees after his order. When she turned around I waved and she returned and took my order. it was kind of the same thing. She tapped my card and handed it back as she turned to walk away (i had 2 other friends waiting with me). It was just a strange interaction no "thanks for your order" just odd. I was handed a buzzer and when I returned to the bar to pickup my food things were a little chaotic. I was unceremoniously handed a box with my buzzer's number on it. I looked for napkins or silverware but turns out you have to ask for them. Fortunately the food is really good and the event was great. We have a family wedding coming up and the couple is looking at Pilot Project for the venue. The food is solid, tasty, and fast. But I have some concerns about the personnel.

This was such a cool place! Lots of small batch and experimental beers I wouldn't have found anywhere else! Loved getting to try all they had to offer!

an early Saturday afternoon and there was plenty of seating and we're sat right away. It has a huge inside and you can reservation the space for different events. It also has a lot of greenery I can only imagine all long it takes them to water everything. My friends got a flight of beer and I got a hard kombucha. The one I wanted they were out of but I tried the blackberry lime and it wasn't bad but didn't really have the typical kombucha taste. We decided to get food. I had the side Napa salad and a side of waffle fries and it was the perfect amount. The salad was really good I would go back just for the salad. My friend had the wings and gave it like a 6/7 out of 10 and my other friend got the ABLT and it was supposed to be on focaccia but it definitely wasn't focaccia but overall enjoyed the sandwich. Overall I enjoyed my food. I would be more inclined to come back for the food versus the beer and if I had a big group of people because they have the space to accommodate.

The Halloween Bash was fun! Live music , AXE THROWING! Pop up shop tacos, tiny beer glasses and a Swag bag!

Honestly the inside wasn't that impressive. I thought the plants would look more real and fill the place out some more. Food was pretty alright. Furniture was super try-hard.

Enjoyed our afternoon/evening here for a surprise 40th birthday party! The staff was welcoming and took great care of our group. I tried the NA beer and the shandy. Both were good. We were able to try a variety of foods purchased by the host and everything was delicious. I loved all the greenery used to brighten up the space. We were downstairs, which has a great open concept, TVs, and a large bar. We also ventured upstairs - a very cool area with a nice view. Parking can be hard to find. I'll definitely return during less busy times.

Great location, good food, good beer. You get a lot of food for what you pay and it's all pretty tasty. The wings were good, ranch dipping sauce was spot on. I tried the candied bacon rub and I thought it would be on the sweeter side but it was actually kind of spicy. Main complaint was that I didn't get a lot of bacon flavor from it. The other half was bbq, can't go wrong there. I did a flight of beer to go with my wings and the sour was my favorite. I felt like the options were a bit sparse, especially with how big Pilot is in the Milwaukee area. Overall good spot with gorgeous greenery inside. Service was good. She was quick to get our drink orders and then come back for food orders.

We wanted to try something new and stumbled across this place It's BEAUTIFUL inside. The various plants around the restaurant & spacious dining area. Very inviting. The service was amazing across the board. Food came out pretty fast, and tasted great. Pricing was reasonable!

Pilot Project was so much more than we expected. The interior is contemporary and spacious, and the plants were gorgeous, a different atmosphere than most breweries, and has a modern, airy feeling. The interior feels as if you are outside. We sat at the bar and service was friendly, and very nice. We ordered the cheese curds to accompany the beers. We were not expecting the portion to be so large. The sauce was ok, but we would have preferred ranch. The Standard Goods Lager was the favorite, and we bought some to take home. Overall, a good place when in the area. I would like to return for the beer tour.

I was really impressed by the thoughtfulness and attention to detail they put into this place when building it out. The Chicago location is lovely, but this one is INCREDIBLE. It's HUGE, it's spacious, it's airy, it's light. We were fortunate to come at a weird time on a gorgeous autumn day and had no problem setting up a spot on the rooftop with our group of 15! Everyone got drinks they wanted, we took some photos with the skyline, and soaked up some sunshine. Downstairs, we later had some of our group enjoying bags and other yard games INSIDE because there was space for that. If I lived here, I'd definitely be eyeing that private room for events. I was DD that day and appreciated that they had some Liquid Death options for me to choose from. Love all the plants, love the swag, love what you're doing. Hope to visit again in the future.

Great beers. The space is interesting -- very beer gardeny. The food was solid. We had poke nachos that were better than we had any right to expect in Milwaukee and Mac and cheese that was just the right mix of cheesy, creamy, and salty. I went to this venue the night before for a private event, and wasn't sure what to expect for a meal on my own, but it was quite nice...and the beer options were great!

Brandon rocks! He was very fun and personable at the Yelp Beerhunt at the Brewhouse Inn and Pub.He made his stop super fun and entertaining.

We tried Pilot Project a little while back before a game. Great building and ambiance inside. Lots of space with bar seating, tables and corn hole. We ordered the fried pickles to start and I loved that they came in strips. I got a brisket sandwich which was just okay but the sweet potato fries were good. So many things to explore on the menu and the service was fast. Great menu with lots of beers and cocktails. They also have brewery tours we're excited to go back for!

Okay so I will start off by saying we aren't drinkers, and we just went for food because it was close to our hotel. But we had a really great experience here, and would visit again. The live plant wall? So cool. If you're a plant lover, you'll enjoy this place definitely. Our server was super kind, and never left us needing anything. The portion sizes were huge, and everything was super tasty. My husband did try an NA IPA that they had and said it was tasty. The only thing I would have done differently is asked for extra dressing on the salad! Honestly, no complaints about our visit. Definitely would be a fun hangout for a group.

Great location in the brewery district. Open and spacious place with a great atmosphere. I loved the bar and the hanging plant wall. They had plenty of TV's around so you could watch a game, they had a room for bags, and glass so you could see into the brewing area. Really cool spot! The staff were very friendly and attentive. They had my favorite kind of beer glasses. A great beer list with many choices. I went with an NA and really liked it. We also had lunch here. We had a big pretzel and the BLT&A. I wasn't super impressed with the food. The BLT has super thick fatty bacon. The rest of it was good though. The pretzel was average for the Milwaukee area. Definitely a fun spot to come with friends or family. I would go back but not likely for a meal, just for drinks and maybe a few apps.

It's a great place to relax on a weekday and play board games and enjoy the wall full of plants that add to the great decor of the place. For appetizers make sure to get the giant pretzel. Probably one of my favorites in the city. Overall great service and great to hang out!

Service was great and the atmosphere is awesome in there! It almost feels like you're in a green house. The smell as you walk in is a little off putting (maybe from the hops?) but more so than most breweries. Also, the beer was only slightly cooler than room temp, which took away from the taste of the beer. I do love how the company was created to let smaller brewers test their beers without the start up costs of a brewery. Seems like a sweet spot to watch any game and there are deals every day with brunch on the weekends!

This was my second time visiting Pilot project brewing and I had a great time. This place is beautiful, especially on a sunny day with the glass roof. I got one of the hazy ipas and my bf got the panther pale ale. Both were great! We didn't eat a full meal but we shared the cheese curds and they were delicious and for $9 you get so many! The dip was especially yummy. Definitely recommend! They had a lot of events and specials listed for the upcoming weeks and I think it'd be super fun to attend. The bartenders were knowledgeable, kind, and fun to talk to, which was the cherry on top. I will be back! Can't wait to check out the rooftop one day.

My wife and I were in the area and decided to stop in for lunch and a beer. I had a Supernaturalist hazy pale ale and a sample of Six Strings and a Beat. Both were so good that I got a 4 pack of each to take home. I ordered a brisket sandwich which had the twist of having a thin layer of mashed potatoes with cheddar, and it was excellent. My sweet potato fries were crisp and tasty. My wife had the FALAFEL PITA which had a delicious crispy flaky wrap and spiced filling, along with an Asian salad. We were both very pleased with our drinks and meals and definitely recommend it. The server was very pleasant and attentive and the venue is very modern open and clean.

One of the best-looking spaces in Milwaukee! I went for breakfast on Sunday and, to my surprise, found the restaurant almost empty. We ordered the Eggs Benedict, but it didn't match the description--there was hardly any hollandaise sauce, the potatoes were cold, and the overall dish felt poorly executed. Service was just okay. As an entrepreneur, it was disappointing to see how the lack of food quality clearly impacts the success of the business. Just last week, I had breakfast at Uncle Wolfie's around the corner--fantastic staff, amazing food, and a line out the door. There's no reason this spot shouldn't be just as busy, but unfortunately, the food doesn't live up to the beautiful space.

Atmosphere is incredible, modern sleek interior with corn hole available to play, multiple bars to grab a beverage and lots of waiting space! We just came for a quick appetizer and had a tough time deciding what to get with so many yummy options. We got the Jumbo Pretzel with beer cheese, beer mustard, and wasabi honey mustard which were all incredible. The wasabi honey mustard is sweet with the hint of wasabi flavor with out the powerful spice, delicious. The beer cheese was some of the best, thick and decadent. Needless to say there were no crumbs left behind.

We were staying near Pilot Project and decided to give it a try. We had cheese curd apps, smash burger and a fish fry. The cheese curd app was a good serving size. You got plenty. The fish fry was ok. In Wisconsin, you need to know how to do deep fried cod. The cod was overcooked. The breading was super crispy and crunchy. The waffle fries were meh. The smash burger was good. Very juicy and tasty. Well seasoned and all extras tasted great on the burger. The beer was very good too. Great selection. Not too expensive for beer as well. Our server was attentive and helpful. Food came out quick. The real gem here is the room. The space Is really cool. We were here before a brewer game. There were televisions on the wall. They have a massive space for groups. They have a cool view of fiserv forum. All in all, four out of five.

Cool spot to get a delicious beer, hang out with friends, and enjoy some delicious food. Pilot Project Brewing definitely has a much more modern vibe than what I've seen at other breweries, which allows for hanging out in a spot that feels like a bright open patio, while being protected from the elements. The furniture also helps to give the spot a coffeehouse feel and the noise level is controlled pretty well so that you can hear others and have a lively discussion. The beer tour here was also quite fun, with plenty of history of the company and of Milwaukee sprinkled into it -- so that I had a better understanding of the beverages I was tasting as well. The setup is pretty spacious so that you're not feeling crowded at all, even with a good size group and getting a wide variety of beers (IPA, Stout, Kombucha, etc.) helped me to try different flavors and appreciate distinctly different aromas from each beverage. It was also great that they were able to accommodate our same-day 4 pm tour booking as many other brewery tours we had considered had already sold out. Overall, worth a visit whether it's for a drink, quite bite, casual hangout, or brewery tour. The decor, service, setup, parking, and other characteristics of the business make it an enjoyable experience overall.

This is our go to spot in Milwaukee. They have a wide variety of food, their fries are always bomb and they have great beers. It is very lively and busy but spacious.

We were staying downtown and had eye-spied this place a couple months earlier and wanted to give it a try. We loved the vibe. Lots of Bucks' fans enjoying a drink before the game. The young man that helped us was very knowledgeable and helped us pick out drinks and food. We were shocked by the size of the cheese curd order. We took leftovers home. We did not care for the sauce that came with them but loved them dipped in the ranch sauce that came with the wings. The wings were delicious and meaty. We would definitely come here again.

Quite a large establishment! A friend recommended it to me and I was amazed by its sheer size. It is a fantastic place to go with friends, enjoy some great brews, share some great food, and watch the game along the way. There aren't any limits with Pilot Brewing. It's able to cater to any group of friends or family! We share a lot of the appetizers and the one that stuck out for me was probably the Poke Nachos with ahi tuna. It had the perfect amount of savory and spice!

So spacious and bright! I am mildly Jealous of the (living and thriving) plants all around. I had a very friendly bartender who offers a number of suggestions for me. Since I stopped by early afternoon to do some work, it was relatively quiet. But around 5pm a bump in patrons. Lots of business professionals (guessing) getting off work and some tourists. If you are able to work remotely, this is a good place to do so. I wasn't hungry but I skimmed the menu. Lots of opinions. Several tasty sounding ones for vegetarians like me.

The space is beautiful. The food is very good. The service was excellent. The only thing that could be better is the noise level. It's a very wide open space that echoes, but it is still worth the visit. The beer was good too.

This place might have the best charcuterie board I've ever had. The board was plentiful and enough to feed our group of 4 while we sipped on our flights and beers. Our server was helpful with guidance on the beer flight, noting that some of the beers on their menu are only available in cans and they are not an option for the beer flights. The space is quite large with a side bar that could be used for private events.

Great atmosphere, especially during the Brewers game--fun energy without being too loud. We got a great beer deal: 5 beers for $25, which was perfect for our group. The food was amazing and super shareable; the giant pretzel, cheese curds, and fried pickles fed four girls easily. The service was friendly and quick, making the whole experience even better--definitely a go-to spot for good vibes, good drinks, and solid food!

Location: West Town between Fi-Sirv and old Pabst building. Ambience: modern, spacious, and loud due to the warehouse interior and high ceilings Food: We had the big pretzel which was ample and fresh with a honey mustard dip. The cheese curds which were just okay. This was a disappointment because recommendations from YouTube gave them top ratings for Milwaukee. They didn't come out hot and didn't have any stretch; but they did come with three sauces: whole grain mustard, tasty dilled yogurt, and an okay cheese sauce. For brunch we had the avocado toast which was just fine and an ample portion. Two of us ordered the Caesar salad, one with ahi tuna and the other with salmon. Both were ample portions, but one was sent back due to getting the protein wrong. It was replaced quickly. The salmon was a little overcooked. I had the vegan mushroom root vegetable hash subbed with real scrambled eggs. That was just okay as well. I was expecting more variety of vegetables, but they were mainly just sweet potatoes and regular potatoes. Feedback overall on the food was it looked good but was unremarkably seasoned. Drinks: Bloody Mary bar was pretty good. You can choose your alcohol base and they had a house and Zing Zang mix option with different salt rims, plenty of pickled veggies and hot sauces. A couple of us ordered the different beers and enjoyed them. Coffee was hot and strong. Service: friendly but understaffed both at the bar this Sunday and for table service. Our food came out before the drinks came to the table. We had to wait to get attention. I don't fault our server, she just had too many tables. Value: prices reasonably Overall, this place could be a standout, but needed some attention this visit.

We held our wedding's welcome drinks on the Rooftop and it was the perfect setting for about 150 people. We had plenty of space to mingle or be seated. Our out of town and local guests loved it and we'd highly recommend it! Thanks, Kristi and team!

Upon entering, you know this is a next level brewery...interior is modern, expansive, clean, and futuristic. Service was friendly all around, our waitress charming and full of personality. A Yoga class was taking place in another room, filled with 8s, 9s, and 10s practicing their namaste before a beer. Speaking of which, there seemed to be over 20 choices between cans, bottles, and on tap. The FOOOOOOD is brewery food elevated to the next level. Not your usual greasy burgers, fatty wings, and generic pizza. $9 Cheese Curds...flavorful polenta beer batter, chive garlic crema...an exciting modernized and inventive take on curds...best in Wisconsin? $16 Italian Beef Sandwich...Version 2.0?? Cleaner! Slices of tender juicy beef, pickled serrano horseradish aioli, giardiniera, and rather than being pre-drenched like in Chicago, a side of beef dipping au jus provided to control your juice to your liking...delicious! I opted for the side salad...it was big, fresh, tasty, and healthy. This is a great meal for only $15.

Great pregame atmosphere for MU! Awesome beer selection and great bourbon and cocktails. Shawna (sp) was an amazing bartender - great service and engaged with the bar. Will be back!

I had already been there when it was MKE Brewing, so I decided to check it out once Pilot took over. Nice little brewery, very open and bright. I love that they have the beer flights. The atmosphere is not pretentious at all and service was friendly. My favorite brewery in the Milwaukee area.

I had never made it to this building when it was Milwaukee Brewinf, but we've been here twice since it's been Pilot Project. And I absolutely love it. First off, the venue itself is beautiful -- it's big and open and super cool looking. The staff is really nice and helpful in taking through the different beers. Their beer is excellent. I most recently had the Basmati Rice Lager and it's seriously one of the best beers I've had in awhile. We've only gotten appetizers there and all the ones we've tried were excellent. So, great place to hang out, have some excellent food and really good beer. Huge fan.

I went here in the summer and it was quite dead. The atmosphere though is great! I loved the upper rooftop, and inside is not only massive but lots of fun nooks to pop a squat and drink some beer! The beer is also delicious - not super amazing but I enjoyed it enough to have a second beer.

So, didn't eat or drink here. Hit it on Krampusnacht to see the vendors. It looks like it did when it was whatever brewery it used to be. Wood tables, lots of metal and glass. Not the best for the crowds they had with all the booths but seems nice.

I went to Pilot Project Brewing Milwaukee while looking for a brewery to tour. The bar and restaurant area is open and inviting. The food was excellent. I tried the fried pickles and cheese curds. We went on the brewery tour next. This was full of fun information and the tour host was very entertaining. I enjoyed the beers that we sampled on the tour. I highly recommend the tour, food, and beer at Pilot Project Brewery Milwaukee!

FOOD: I ordered the wings and a side of fries. The wings were really good. For $18, you get 10 wings and they weren't baby wings. Eat wing had a decent portion of meat on it. The wings were cooked all the way through. I absolutely can't stand half cooked wings because that's how people get Salmonella. The spiciest wings are truly spicy. I ate 8 wings before I was ready to tap out. SERVICE: Our waiter was so nice. His name was Ben!! He was great!

Loved Pilot Project! Huge open space with plenty of room to spread out. Came by for a private event and got to try a sample of the food and drink offerings. Parking was easy - some free spots and metered spots available. The staff seemed very friendly and helpful. Super quick to grab anything we needed. The food overall was good. The rosemary fries were a little heavy on the salt but still good. Loved the garlic aioli with it. The curds were great too with the matching chive garlic crema. LOVED the meatballs - moist, not dried out, and the sauce was perfect with some chunks of tomato in it. Was not a fan of the chicken slider with the broccolini - seemed to overpower and the breading got soggy from it. The fondutta was a little too strong from a typical beer cheese standpoint but the pretzel bites were good. Will definitely go back to try more! Can't wait to sample more beers, too! Want to check out the rooftop space!

My husband and I joined a few friends for trivia, which Pilot Project hosts on Thursdays at 7pm. We have bopped around to different trivia locations, but it was our first time at Pilot Project. Right off the bat, the main hall where the trivia was located was not the right spot to be hosting this event. The acoustics were terrible and we could barely hear the questions despite the host using a mic. He did come around to each table at the halfway mark and at the end to repeat questions if we needed, but overall the trivia experience itself was a little lacking for this reason. Onto the food and drinks, both were decent! My first time at Pilot Project was for the Pride party Yelp event and I already knew they had some tasty items on their menu. I got a draft margarita and my husband got a shandy - Brewer's Kitchen Mañandy. My margarita wasn't anything "special" but it tasted good and exactly what I wanted. My husband loved his shandy and even I liked it despite not usually being a beer-drinker. It was light, summery, and floral. We decided on some apps for dinner and got the cheese curds and fried cauliflower. The cheese curds had a polenta beer batter, which was very different from other fried curds we have had. It was VERY crispy and crunchy as a nice contrast to the smooth cheese inside. Most of the curds were big and stuffed with cheese, but the smaller ones were pretty empty. The chive garlic crema it came with was very garlicky (in a good way). It initially paired well with the curds, but then I wanted to try the curds with other dips, which worked out well because the cauliflower came with two dips! The first thing we noted about the cauliflower was that they looked very pale and they were not crispy at all, which could be on par for the tempura batter and we just didn't realize. The cauliflower itself was also pretty bland and definitely needed to be eaten with the dips. It came with a plum gastrique and a cherry pepper aioli. I personally thought the gastrique was too sweet alone, but with the aioli it was okay! Overall the dish was good, but I think we expected a more flavorful and crispy fried cauliflower that we've had elsewhere and this just didn't hit that spot.

Checked out the new pilot project for the first time in MKE this weekend and I was impressed! I had been to the space before as MKE brewery but not as the pilot project. I am not the biggest fan of the building as it is very big and warehouse feeling but it does have a lot of room and outside seating. The food was outstanding! Everyone was pleased with their meal and honestly it was one of the better meals I have had at a brewery. I definitely am going back for food. The service was okay as you don't have a waiter as you order everything via your phone. It's nice because things come out fast but it took awhile for them to clean our plates and you can't really ask questions about menu. Overall, if you're looking for a casual night out with good beer and good food. I'd recommend pilot project!

The food and beer saved this place from a harsher review. We were looking specially for a rooftop bar and looking at the website which stated our roof is open no reservation needed on a sunny day decided to go to Pilot Project. Unfortunately when we arrived we were informed that the roof was closed for the day. We ended up sitting out front at one of the picnic tables which doesn't have any wait service, you scan a QR code which gives you menu ordering and payment options. Kind of like ordering off door dash. It's not that bad of a system as you can keep your tab open, order drinks and then food and even more food before closing out. Started with one of their beers, the Two Falls Hazy India Pale Ale which I guess I expected on draft but came in a can. The vessel didn't matter as the beer was delicious. I'm not sure if it was brewed and caned on site but I do recommend it. Next up we ordered the pretzel bites as I thought the French onion dipping sauce sounded unique and worth a try. I thought the portion of pretzel bites was very generous and the dipping sauce was amazing, Again I recommend trying them. Next up was the Arrabbiata margarita flatbread which states in the menu that it is made with with a spicy chili sauce which was no joke very spicy as advertised. Food is brought by runners kind of no frills, had to ask for one of them to brink us napkins. I almost gave them 3 star for the whole experience but the food was great. Enjoy!

Really good food, beautiful open space, great beer. Big room for kids to run around with lawn games like bags. Great activity for winter!

Looking for a place with a little bit of everything I found Pilot Project Brewery. The ambiance is amazing and just what we were looking for, industrial modern brine the outside in. The pretzel was big and the beer cheese and honey mustard were so tasty. I got the fish sandwich with sweet potato fries and it was great! Would definitely go back!
